I saw this recipe on the food network. It was being used as a topping for banana bread. Only 4 ingredients and easy to make.

8 ounces cream cheese (room temp)
1/2 cup butter (room temp)
1/3 cup mascarpone cheese
3 tablespoons honey

Steps:

  • Place first 3 ingredients into a bowl and mix well with an electric mixer. Add honey. Mix well. You may also add chopped walnuts on top of frosting if desired.

2 cups flour
4 teaspoons baking powder
2 teaspoons salt
1 1/2 cups unsalted butter, softened
1 1/2 cups brown sugar
4 large eggs
2 tablespoons coffee extract
1 cup half-and-half
1/2 cup unsalted butter, softened
16 ounces mascarpone cheese, softened
2 teaspoons vanilla bean paste
2 lbs confectioners' sugar
cinnamon, for garnish

Steps:

  • Preheat oven to 350ºF.
  • Mix flour, powder, and salt together and set aside.
  • Cream butter and sugar till light and fluffy in mixer.
  • Add eggs, one at a time, mixing well after each addition. Add coffee extract.
  • Alternately add dry ingredients and half and half, beating till smooth.
  • Pour into prepared tins and bake 25 minutes or till tester comes out clean.
  • Cool completely. Frost with cream cheese-mascarpone frosting and dust with cinnamon.

  • With an electric mixer, beat the butter and mascarpone cheese together until fluffy.
  • Add the vanilla paste and the sugar incrementally, until fully incorporated.

I was looking for a way to update plain old cream cheese frosting. I thought, bet you can use mascarpone. After some searching, I found this recipe on Epicurious.com. It was meant for Red Velvet cupcakes - I'm not a fan of Red Velvet anything, but decided this would be the perfect update for my Grandma Beck's Carrot Cake.

1 cup(s) (8 oz.) unsalted butter at room temperature
1 cup(s) (8 oz.) cream cheese at room temperature
2 cup(s) powdered sugar
1 teaspoon(s) pure vanilla extract
1 pinch(es) kosher salt
1 cup(s) (8 oz.) mascarpone cheese

Steps:

  • In the large bowl of an electric mixer fitted with the paddle attachment, beat together the butter and cream cheese until well blended. Beat in the powdered sugar on medium-high speed until light and fluffy.
  • Beat in the mascarpone on very low speed until just combined. (Be careful; once you've added the mascarpone, excessive beating can make the frosting curdle.)
  • Stir in the vanilla or extract until well blended.
