How to make hummus the traditional way. No fuss. No extra flavors added. Just a plain, classic homemade hummus recipe. And a couple of tricks will ensure you achieve the best hummus ever--thick, smooth, rich, and ultra creamy. Be sure to see the video tutorial as well.

3 cups cooked chickpeas, peeled (from 1 to 1 1/4 cup dry chickpeas or from quality canned chickpeas. See recipe notes for more instructions on cooking and peeling chickpeas)
1 to 2 garlic cloves, minced
3 to 4 ice cubes
1/3 cup (79 grams) tahini paste
½ tsp kosher salt
Juice of 1 lemon
Hot water (if needed)
Early Harvest Greek extra virgin olive oil
Sumac

Steps:

  • Add chickpeas and minced garlic to the bowl of a food processor. Puree until a smooth, powder-like mixture forms.
  • While processor is running, add ice cubes, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency.
  • Spread in a serving bowl and add a generous drizzle of Early Harvest EVOO. Add a few chickpeas to the middle, if you like. Sprinkle sumac on top. Enjoy with warm pita wedges and your favorite veggies.

1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1/2 teaspoon baking soda
1/4 cup fresh lemon juice
1 tablespoon minced garlic
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 cup tahini
2 tablespoons extra virgin olive oil
1/4 cup cold water
Optional: Olive oil, roasted garbanzo beans, toasted sesame seeds, ground sumac

Steps:

  • Place garbanzo beans in a large saucepan; add water to cover by 1 in. Gently rub beans together to loosen outer skin. Pour off water and any skins that are floating. Repeat 2-3 times until no skins float to the surface; drain. Return to saucepan; add baking soda and enough water to cover by 1 in. Bring to a boil; reduce heat. Simmer, uncovered, until beans are very tender and just starting to fall apart, 20-25 minutes., Meanwhile, in a blender, process lemon juice, garlic and salt until almost a paste. Let stand 10 minutes; strain, discarding solids. Stir in cumin. In a small bowl, stir together tahini and olive oil. , Add beans to blender; add cold water. Loosely cover and process until completely smooth. Add lemon mixture and process. With blender running, slowly add tahini mixture, scraping sides as needed. Adjust seasoning with additional salt and cumin if desired., Transfer mixture to a serving bowl; cover and refrigerate at least 30 minutes. If desired, top with additional olive oil and assorted toppings.

I serve this at least once a week with a chicken or steak meal or just as a quick snack. Learned from my late grandfather who was of Lebanese descent. Serve with fresh Arabic bread.

2 tablespoons olive oil
1 tablespoon fresh lemon juice
¼ cup water
3 cloves garlic, crushed
½ teaspoon ground cumin
1 pinch paprika
1 sprig fresh parsley, chopped

Steps:

  • Place garbanzo beans, tahini, olive oil, lemon juice, water, garlic, and cumin into a food processor and process until smooth, about 1 minute. Transfer to a bowl and sprinkle top of hummus with paprika and fresh parsley.

1 pound dry chickpeas
1 tablespoon baking soda
1 whole head garlic, skin on
12 ounces unhulled sesame paste
4 ounces grape seed oil
2 ounces fresh-squeezed lemon juice
Kosher salt
Ground cumin
4 ounces unhulled sesame paste
1/2 cup warm water
2 ounces lemon juice
1 clove garlic, germ removed
4 ounces extra-virgin olive oil (preferably from Turkey or Israel)
2 ounces extra-virgin olive oil (preferably from Turkey or Israel)
1/4 cup fresh Italian parsley, chopped

Steps:

  • For the hummus: Combine the chickpeas and baking soda in a large bowl or pot and cover with at least double their volume of water. Transfer to the refrigerator and soak for 18 hours.
  • Drain the chickpeas and rinse thoroughly in cold water. Place the chickpeas in a large pot with the whole head of garlic and cover with water. Bring to a boil, and then reduce the heat to low. Simmer the chickpeas over low heat until very tender, about 3 hours. Drain, reserving 1 cup of the cooking liquid and 1 cup of whole chickpeas. Discard the garlic bulb.
  • Combine the remaining chickpeas, the sesame paste, grape seed oil and lemon juice in a food processor and puree to a smooth, creamy consistency, adding reserved cooking liquid as needed. Season with salt and cumin.
  • For the tehina: Combine the sesame paste, water, lemon juice and garlic in a blender and blend at high speed until smooth. Blend in the olive oil. If the puree is too tight, adjust the consistency with additional warm water. Season with salt and cumin.
  • For serving: Spoon the hummus into a large shallow bowl. Create a well in the center, using the back of a spoon, pushing the hummus to the edges of the bowl. Toss together the reserved whole chickpeas with the tehina in a mixing bowl and adjust the seasoning if necessary. Spoon the dressed chickpeas into the well in the center of the hummus. Garnish the hummus with the olive oil and chopped parsley. Serve immediately.

MA'S HUMMUS



Ma's Hummus image

This is similar to what you find on the streets of Israel. It is easy and quick to make. You can vary the ingredients to taste easily.

2 (15 ounce) cans chickpeas
1/3 cup tahini (100% sesame paste not canned tahini sauce)
2 tablespoons ground cumin
2 teaspoons kosher salt
1 teaspoon hot sauce (Tabasco)
3 -4 tablespoons olive oil
2 garlic cloves, minced
1/3 cup lemon juice
1/3 cup water
1/4 cup dried spinach (optional)
paprika (optional)

Steps:

  • Drain chickpeas.
  • Place chickpeas, tahini, cumin, salt, lemon juice, garlic, hot sauce, and olive oil into food processor.
  • Process, adding water and lemon juice as needed, the amount may vary. Keep them even in ratio. Personally I like the lemon flavor so do that stronger. The consistency should be a smooth dip or thin mash potatoes.
  • When throughly mixed and at desired consistency add spinach flakes and pulse till blended.
  • You can serve on a plate with a dip in the center and spiced olive oil poured over it or plain olive oil and sprinkled with paprika. Serve in a pita with olives, feta cheese, falafel, and cucumbers or just on crackers or Matzah.
