TURKEY BURGERS



Turkey Burgers image

Turkey burgers are much leaner than hamburgers, but they can be dry and dull. Moisten them by adding ketchup and a bit of grated onion to the ground turkey - or mayonnaise and a bit of mustard. The idea is to emphasize condiments, and keep the turkey moist.

1/2 medium onion
1 pound lean ground turkey
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
3/4 teaspoon salt
Freshly ground pepper to taste
4 hamburger buns, preferably whole wheat
1 tablespoon canola oil, or use pan spray
Sliced tomato
Sliced onion
Iceberg lettuce
Pickles
Sliced red pepper
Ketchup and mustard

Steps:

  • Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.
  • Heat the canola oil in a nonstick griddle or large nonstick frying pan over medium-high heat. (Alternately, spray the griddle or pan with pan spray.) When you can feel the heat while holding your hand just above griddle or pan, cook the patties for five minutes on each side. Serve on buns, with the condiments of your choice.

HAWAIIAN TURKEY BURGERS

Amp up the flavor of mild turkey patties with ginger, garlic, soy sauce, and sesame oil, and top them with buttery Havarti cheese and slivers of tangy pineapple hot off the grates. Sandwich the stack in a plush Hawaiian bun with lettuce, red onion, and a smear of kicky jalapeño mayo, and take a vacation without leaving your lanai.

1 small red onion, thinly sliced
1 pound ground turkey (preferably dark meat)
4 teaspoons minced fresh ginger (from a 1-inch piece)
2 teaspoons minced garlic (from 1 to 2 cloves)
2 teaspoons reduced-sodium soy sauce
2 teaspoons toasted sesame oil
Kosher salt
Vegetable oil, for grill
8 thin slices pineapple (from 1/2 cored pineapple)
4 King's Hawaiian Sweet hamburger buns or brioche buns
2 ounces Havarti cheese, thinly sliced
1/3 cup mayonnaise
1/2 jalapeño or serrano pepper, chopped (ribs and seeds removed for less heat, if desired)
Green-leaf lettuce, for serving

Steps:

  • Preheat grill to high (see cook's note if using charcoal). Cover onion with cold water and let stand 10 minutes; drain and pat dry. Mix together turkey, ginger, garlic, soy sauce, and sesame oil. Shape into four 4-ounce patties, then flatten each to 1 inch thick and season with salt. (Patties can be made a few hours ahead and refrigerated.)
  • Brush grates with vegetable oil. Grill pineapple until lightly charred on both sides and softened, 4 to 5 minutes. If desired, grill split sides of buns until lightly charred, about 30 seconds.
  • Grill patties until slightly charred and just cooked through, 6 to 8 minutes a side. In last minute of cooking, top each patty with cheese, cover grill, and let melt.
  • Stir together mayonnaise and jalapeño. Spread buns with mayonnaise mixture and use to sandwich patties, pineapple, lettuce, and onion.

6 tablespoons vegetable oil
1 cup mushrooms, diced
8 tablespoons shallots
2 cups cooked turkey, diced
4 tablespoons tomatoes, diced, seeded
4 tablespoons chives
1 cup fresh bread crumbs
4 teaspoons fresh thyme
3 whole eggs
Salt and pepper

Steps:

  • In a pan over high heat add 2 tablespoons vegetable oil. Heat until oil starts to lightly smoke. Add the mushrooms. Cook until lightly brown, stirring frequently. Add 4 tablespoons shallots and season with salt and pepper to taste. Let cool and reserve. In a mixing bowl, add the mushrooms, 2 cups of cooked turkey, tomatoes, chives, bread crumbs, 4 remaining tablespoons shallots, thyme and eggs. Mix well to incorporate. Divide mixture into 4 portions and shape into burgers. Lightly coat burgers with fresh bread crumbs. Heat 2 tablespoons vegetable oil, add burgers and cook until golden brown (approximately 2 minutes on each side.) Serve with a bun and French fries.

1 1/4 pounds ground dark-meat turkey
1 1/4 cups coarsely grated aged provolone cheese (about 5 ounces)
1/4 cup Roasted Garlic for Turkey Burgers
2 1/2 teaspoons finely chopped fresh sage
Coarse salt and freshly ground pepper
Vegetable oil, for brushing
4 small ciabatta rolls, split
1 tablespoon olive oil, plus more for brushing rolls
Juice of 1/2 lemon
1 small bunch watercress, trimmed
3/4 cup Grilled-Tomato Sauce

Steps:

  • Using your hands, gently combine turkey, cheese, roasted garlic, sage, and 1/2 teaspoon each salt and pepper in a medium bowl (do not overwork meat). Shape into 4 patties (about 5 inches in diameter). Refrigerate, covered, until cold, about 1 hour (or overnight).
  • Preheat grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Brush grill and burgers with vegetable oil. Grill, flipping once, until cooked through, 3 to 4 minutes per side. Toast rolls, cut sides down, on grill; brush cut sides with olive oil.
  • Whisk lemon juice and 1 tablespoon olive oil in a medium bowl; season with salt and pepper. Add watercress; toss.
  • Spread grilled-tomato sauce on bottom half of each roll. Top each with a burger, one-quarter of the watercress salad, and top half of roll.

2 ounces chopped fresh rosemary
2 pounds bacon, chopped small
2 pounds white onion, chopped
4 ounces brown sugar
2 ounces honey
2 ounces maple syrup
2 ounces balsamic vinegar
1 ounce jalapeño, chopped
13 brioche rolls
Dijon mustard, for the sandwiches
Lettuce, for the sandwiches
13 slices fresh mozzarella

Steps:

  • For the patties: Place the turkey in a bowl with the garlic and onion powders and rosemary.
  • Form into thirteen 6-ounce patties.
  • For the bacon jam: Sauté the bacon until crispy. Add the onions and cook together.
  • Add the brown sugar, honey, maple syrup, vinegar and jalapeño and simmer 8 to 10 minutes.
  • Chill.
  • Build: Toast the brioche rolls. Spread with the Dijon mustard. Add the lettuce, patties, 1 slice fresh mozzarella and 2 ounces bacon jam to each.

1/2 cup finely grated Gruyere cheese
4 scallions, thinly sliced
1/4 cup dried breadcrumbs
1/4 cup Dijon mustard
1 garlic clove, minced

Steps:

  • Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with Gruyere, scallions, breadcrumbs, mustard, and garlic; season generously with salt and pepper. Gently form mixture into four 1-inch-thick patties.
  • Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.
