This is a nice twist on an apple pie. The meringue is very easy to make. It is very sweet. This would be the pie for people who don't like pie crust.

6 cups apples, peeled and sliced thin
1 tablespoon lemon juice
1/2 cup sugar
1 tablespoon flour
2 teaspoons cinnamon
1 teaspoon nutmeg
3 egg whites
1 (7 ounce) jar marshmallow cream
1 crust pie crust

Steps:

  • Roll out pie crust and place into pie plate.
  • Fold under edge and crimp.
  • Drizzle apples with lemon juice.
  • Toss with combined sugar, flour, cinnamon and nutmeg.
  • Spoon into shell.
  • Bake @ 450 degrees for 30-35 minutes or until apples are tender.
  • Reduce oven temperature to 350 degrees.
  • Meanwhile, beat egg whites until soft peaks form.
  • Gradually, add marshmallow cream, beating until stiff peaks form.
  • Spread over apples, sealing to edge.
  • Bake 10 minutes or until meringue is slightly browned.
  • Cool and serve.

1 stick cold salted butter
1 cup all-purpose flour, plus more for dusting
1 tablespoon sugar
1/4 cup ice water
1 pound McIntosh apples, peeled and chopped
1 pound Fuji apples, peeled and chopped
1 pound Granny Smith apples, peeled and chopped
1/2 cup sugar
Grated zest and juice of 1/2 lemon
1 teaspoon apple pie spice
1/4 cup all-purpose flour, plus more for dusting
2 tablespoons salted butter, cut into small pieces
4 large egg whites, at room temperature
1/4 teaspoon cream of tartar
1/3 cup sugar

Steps:

  • Make the crust: Grate the butter on the large holes of a box grater onto a sheet of wax paper and freeze until very hard, at least 20 minutes. Stir the flour and sugar in a medium bowl, then stir in the frozen butter with a fork. Stir in the ice water, then knead the dough into a shaggy ball. Turn out onto a floured surface and flatten into a disk with a rolling pin. Fold in half left to right and then top to bottom. Roll out into a 12-inch round, dusting with flour as needed. Transfer to a 9-inch pie plate and gently press into the pan. Crimp the edges, creating a tall rim to keep in all the apple juices. Refrigerate until firm, at least 2 hours and up to 1 day.
  • Make the filling: Position racks in the middle and lower third of the oven and place a foil-lined baking sheet on the lower rack to catch any drips; preheat to 375 degrees F. Toss the apples, sugar, lemon zest and juice and pie spice in a large bowl. Sprinkle the flour on top and toss to combine. Spoon the filling into the pie shell and gently pack evenly with your hands; dot with the butter. Cover the top with a round of parchment paper and press to adhere.
  • Bake the pie on the middle oven rack until the apples are tender and bubbling and the crust is browned, about 1 1/2 hours. Let stand while you make the meringue. (You want the pie to still be hot when you add the meringue.) Leave the oven on.
  • Make the meringue: Whip the egg whites and cream of tartar with a mixer on medium speed until soft peaks are just forming, 1 to 2 minutes. Increase the speed to medium high; gradually beat in the sugar until the meringue is glossy and stiff peaks form, 4 to 5 minutes.
  • Spread the meringue over the hot pie filling all the way to the crust; make swoops with the back of a spoon. Bake until the meringue is lightly browned in spots, 5 to 7 minutes (do not overbake). Transfer to a rack to cool completely.

40 regular-size marshmallows
3 cups heavy cream
18 whole graham crackers
1/3 cup granulated sugar
1 stick (8 tablespoons) salted butter, melted
2 teaspoons vanilla
9 maraschino cherries, for decorating

Steps:

  • Heat the marshmallows and 1 1/2 cups of the heavy cream in a pot over medium heat, stirring gently, until the marshmallows are completely melted, about 4 minutes. Set aside and allow the mixture to cool to the touch, about 20 minutes.
  • Meanwhile, make the crust. Pulse the graham crackers in a food processor or crush using a rolling pin in a resealable plastic bag with the air taken out until they are evenly sized crumbs. Transfer the graham cracker crumbs to a bowl, add the sugar and mix until evenly combined. Next, pour in the melted butter and fold the mixture until the butter is distributed. It should be the texture of wet sand.
  • Transfer the crumb mixture to a 9-inch pie pan, reserving a few pinches for garnishing the finished pie later. Press the crumbs into the bottom and sides of the pan to form a crust. Some will come up and over the top of the pan.
  • When the marshmallow mixture has cooled, add the vanilla to the remaining heavy cream. Whip the cream by hand with a whisk or in a stand mixer with a whisk attachment to soft peaks. Gently fold the whipped cream into the cooled marshmallow mixture.
  • Transfer the filling to the prepared crust and smooth out with a spatula. Sprinkle with the reserved graham crumb mixture and dot with the maraschino cherries, putting one directly in the center. Chill until set, about 3 hours.
