Steps:
- Thoroughly grease a 9- by 13-inch pan with softened butter.
- In a large pot, melt the butter. Stir in the regular marshmallows until they're totally melted. Stir in the salt. Remove from the heat and set aside.
- Pour in the cereal, folding gently the whole time until all combined. Then pour in the mini marshmallows and gently fold in. Turn into the buttered pan and press flat. Immediately top with rainbow sprinkles.
- Let cool completely, and then cut into squares.
EXTRA-MARSHMALLOW CRISPY RICE TREATS

- Line an 8-inch square baking dish with aluminum foil and spray generously with nonstick cooking spray. Combine the cereal with 1 bag marshmallows in a large bowl; set aside.
- Melt the butter in a large heavy-bottomed pot or stockpot over medium-high heat. Add the 3 remaining bags of marshmallows and cook, stirring occasionally, until they are fully melted, about 5 minutes. Remove the pan from the heat and stir in the vanilla extract. Fold half the cereal mixture into the melted marshmallows until well-coated; fold in the remaining cereal mixture.
- Scoop the mixture into the prepared pan. Spray another piece of foil with cooking spray and use it to cover the mixture, pressing gently on the foil to evenly spread the mixture out, getting it evenly into the corners and flattening the top (you can dome the top slightly if you have extra mixture). Place in the refrigerator to set, around 1 hour. Cut into 2-inch squares and serve. Leftovers keep in an airtight container at room temperature, 2 days; or wrap in a freezer bag and freeze.

- Place cereal in a large heatproof bowl.
- Melt butter in a saucepan over medium-high heat. Stir brown sugar, cream, and corn syrup into butter; cook, stirring, until mixture becomes thick and syrupy, 7 minutes. Stir 2 teaspoons salt into butter mixture. Remove from heat and add marshmallows; stir until marshmallows are smooth and melted.

COFFEE MARSHMALLOW CRISPY TREATS
Steps:
- Lightly butter an 8-inch square pan.
- In a large pot, melt the butter over very low heat. Stir in the marshmallows, getting them all coated with the butter. Slowly melt the marshmallows, stirring frequently. When the marshmallows are melted and smooth, remove the pan from the heat. Stir in the instant coffee (2 tablespoons for a rich coffee flavor, 3 tablespoons for a real kick) and mix until it is dissolved into the melted marshmallow. Gently fold in the rice cereal. When it is completely coated, lightly press the mixture into the prepared pan with your buttered hands. When cool, cut the treats into bars and serve.
MOCHA MARSHMALLOW CRISPY TREATS
I got this recipe from George Duran's- "Ham On The Street" t.v. show, on the Food Network. I have also substituted crisp cocoa cereal in place of regular rice crispy cereal, which made for an addictive chocolate mocha treat!

- Measure 6 cups of crisp rice cereal into a medium bowl and set aside.
- In a saucepan, melt butter over low heat.
- Stir in marshmallows. Melt slowly and stir constantly until marshmallows are smooth and well combined with butter.
- Remove pan from heat and stir in coffee until completely dissolved.
- Pour marshmallow mixture over cereal and stir to coat. Press mixture into a buttered 9" x 13" pan. Cut into squares and enjoy.

- Combine 3 tablespoons butter, 1 1/2 teaspoons yellow food coloring and 1/2 teaspoon red food coloring in a medium nonstick saucepan. Add the remaining 3 tablespoons butter and 1/2 teaspoon of yellow food coloring to a second nonstick saucepan. Place both pans over medium heat until the butter melts.
- Stir 1 1/2 cups marshmallows into each pan and cook, stirring frequently, until smooth, about 5 minutes. Turn off the heat and quickly stir 2 cups of cereal into each pan, stirring until the cereal is completely coated.
- Place a silicone cutting board on a work surface. Coat your hands with nonstick spray and drop alternating dollops of the cereal mixtures onto the cutting board to form a rectangle. Press and mold the mixture into a 7 1/2-by-11 1/2-inch rectangle about 1/2 inch thick. (The mixture will cool rapidly, so work quickly!) Alternatively, you can shape the mixture inside a 9-by-13-inch baking dish lined with parchment paper and sprayed with nonstick spray, and then turn it out onto the cutting board.
- Use a 3-inch or 4-inch metal leaf cookie cutter (use various shapes if you like) to cut out leaves. Press the scraps together, keeping the base 1/2-inch thick, and cut out more leaves. Store the treats in an airtight container at room temperature for up to a week.
