- Prepare the popcorn (I use 1/2 cup popcorn kernels with 2 tablespoons coconut oil). Place the popcorn into a large bowl, and remove any un-popped kernels. Melt the butter in a saucepan over medium heat. Stir in the marshmallows, vanilla and salt. Heat, stirring constantly, until the marshmallows are completely melted and the mixture is smooth. Shortcut: I melted all of the ingredients in a microwave (3 to 4 minutes) stirring a couple of times in between. I like to use disposable gloves, sprayed with non-stick spray to easily form the popcorn balls. Allow to set for at least an hour, so the popcorn balls stay stuck together. That's hard to do, as my family gets into them as fast as I can make them!

- Put the popped popcorn in a large bowl or pan; set aside.
- In large microwave-safe bowl, microwave butter on high until butter is melted, about 30-45 seconds.
- Add marshmallows.
- Microwave on high until marshmallows look puffy, about 1 to 1-1/2 minutes.
- Stir to completely melt marshmallows. Add food coloring if using.
- Now pour melted marshmallows over the popcorn and mix carefully until the popcorn is coated.
- Butter your hands to protect them from the heat and shape into balls.
- Wrap each ball in plastic wrap until ready to eat!

- 1. Lay wax paper over counter tops or table. Place rice krispies into a large bowl, set next to wax paper. Open marshmallows and have handy near wax paper. In a large heavy saucepan over medium heat, melt together caramels, sweetened condensed milk, and butter. Cook and stir until caramels are melted and the mixture is smooth. Place pan near wax paper on a hot pad. Have 2 forks, one to stab the marshmallow and one to help remove it from fork. Dip marshmallow into caramel, roll in rice krispies, then set on wax paper. Continue until all caramel is gone. If caramel starts to harden, you can return to stovetop to melt again. Allow to set up or dry at room temperature. For a quicker set up, place in freezer for 30 minutes. Serve at room temperature. Store in air tight containers in refrigerator or freezer. Can be left out all day on a goodie tray with no problems.
CHRISTMAS RICE KRISPIES MARSHMALLOW BALLS
This is such a great addition to any Christmas tray. They are so cheap and easy to make, and they taste great. My Grandma gave me the recipe, but I'm not to sure where she picked it up from. Hope you enjoy.

- In a double boiler, melt caramels, butter, and milk. Keep water in the bottom of pot to a minimum boil.
- Dip one marshmallow into melted mix using a fork (or something sharp).
- Remove, and roll in Christmas colored Rice Krispies.
- Place on tray covered with wax paper.
- Repeat until bag of marshmallows is finished.
- Freeze marshmallow balls if desired.
- Enjoy.

- 1. Place a Medium to large bag of popcorn (pre-popped) into a large pot. If you do not have a pot you may wash your sink good and dry it good to use it.
- 2. In a dutch oven, put butter and marshmallows and food color into pan. Turn heat to medium and stir constantly till marshmallows are all melter starting to bubble. Pour over popcorn, stir into popcorn mix good.
- 3. Grease your hands with the shortening real well and start making your popcorn balls by pressing in good and hard till firm about the size of a softball.

- Set oven to 375 degrees.
- Grease a 13" x 9" pan.
- Have 9 large marshmallows ready.
- In a bowl, combine 1 cup soft breadcrumbs, sugar and cinnamon.
- Cook carrots in water until soft; drain well, and mash.
- Add the butter, brown sugar, nutmeg, salt, grated orange rind, chopped pecans and 1 cup bread crumbs or cornflake crumbs to warmed mashed carrots; mix thoroughly.
