Chicken Marsala and Mushrooms image

Served over a tangle of linguine or with side of roast potatoes, this classic Italian-American dish made with chicken breasts, mushrooms and Marsala wine is comfort home cooking at its absolute best. Good news: It's also weeknight easy. First, pound boneless chicken breasts (you can use boneless thighs, too, but they might need a little more cooking time) with a mallet or a rolling pin until they're about 1/4-inch thick. Season them generously with salt and pepper, dredge in flour and fry in a little olive oil until they're golden brown. Make a quick sauce of mushrooms, shallots and Marsala and pour it over the chicken. Garnish with a little chopped parsley or chervil for color. That's good eating.

3 tablespoons olive oil
4 boneless, skinless chicken breast halves (about 1 1/2 pounds), pounded to 1/4-inch thickness
Kosher salt and freshly ground pepper to taste
2/3 cup flour
1/2 pound cleaned and thinly sliced button, crimini or shiitake mushrooms (or a combination)
1 shallot, minced
4 tablespoons Marsala wine, more as needed
3 tablespoons veal glaze (see recipe) or chicken stock, more as needed
1 tablespoon butter
1 tablespoon chopped chervil or parsley (optional, for garnish)

Steps:

  • Heat 1 tablespoon of the oil in a medium-size skillet set over high heat. Sprinkle the chicken pieces with salt and pepper to taste and dredge in flour. Place 2 of the chicken pieces in the pan and cook until nicely browned, about 2 minutes per side. Add another tablespoon of oil and the remaining chicken pieces. As chicken is cooked, set aside on a plate and loosely tent with foil to keep it warm.
  • Heat the remaining tablespoon of oil in the skillet, add the mushrooms and shallot and cook until the mushrooms are tender and beginning to brown. Add the Marsala wine and cook until reduced by half. Stir in the veal glaze or stock and heat for 1 minute.
  • Remove from heat and swirl in the butter until melted. Transfer the chicken to a serving platter and pour the sauce from the skillet over the chicken. Garnish with chervil or parsley and serve.

One 4- to 5-pound chicken (organic and free range, if possible), cut into 10 pieces
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3 tablespoons canola or vegetable oil
4 cups sliced white button mushrooms
2 cloves garlic, minced
1/2 medium onion, finely diced
1 tablespoon tomato paste
3 sprigs fresh thyme
1 cup dry marsala
1 1/2 cups low-sodium chicken broth
4 tablespoons unsalted butter, chilled, cut into cubes
Juice of 1/2 lemon
2 to 3 tablespoons chopped fresh Italian parsley
Chardonnay, for serving

Steps:

  • Preheat the oven to 375 degrees F. Pat the chicken pieces dry with a paper towel and sprinkle all over with salt and pepper. Set a turkey roaster pan over 2 burners on medium heat and add the canola oil. Brown the chicken, skin-side down first, 3 to 4 minutes, then turn and brown on the other side, 2 to 3 minutes longer. Remove from the pan and set aside.
  • Add a little more of the oil to the pan on high heat and add the mushrooms, garlic and onions. Season with salt and cook just long enough to get some color on the mushrooms, 2 to 3 minutes. Stir in the tomato paste and thyme and cook about 1 minute longer. Place the chicken pieces back into the pan skin-side up and spread them out evenly, pushing them down into the mushrooms and onions. Add the marsala, scraping up the brown bits from the bottom of the pan, and add the chicken broth. Place the whole pan in the oven and cook until the tops of the chicken are golden brown, 30 to 35 minutes.
  • Use tongs to remove the chicken from the pan and transfer onto a serving platter and keep warm. Set the roasting pan back over the burner on high heat. Bring the contents to a boil and cook the liquid until it is reduced and the flavors become concentrated, 3 to 4 minutes. Shut off the heat, add the butter cubes and stir gently to melt the butter evenly. This will thicken the marsala sauce and give it a rich flavor. Taste and season with salt and pepper. Add a squeeze of the lemon juice and fold in the parsley. Pour over the chicken and serve with Chardonnay.

3 tablespoons all-purpose flour
½ teaspoon paprika
2 skinless, boneless chicken breast halves
2 tablespoons butter
½ pound sliced chanterelle mushrooms
4 tablespoons butter

½ cup dry Marsala wine
1 teaspoon dried tarragon, crushed

Steps:

  • Stir flour and paprika together in a shallow dish. Remove and set aside 1 tablespoon of the flour mixture for later use. Dredge the chicken in the flour mixture to coat evenly.
  • Melt 2 tablespoons butter in a skillet over medium heat; cook and stir chanterelle mushrooms in melted butter until they release their liquid and begin to brown, about 5 minutes. Transfer mushrooms to a bowl and set aside.
  • Melt 4 tablespoons butter in the skillet. Cook the chicken breasts in the melted butter until browned, about 3 minutes per side; season with salt and pepper.
  • Return the cooked mushrooms to the skillet and stir in chicken broth, reserved 1 tablespoon of flour-paprika mixture, Marsala wine, and dried tarragon. Place a cover on the skillet, reduce heat to low, and cook until the sauce is thick, the chicken is no longer pink in the center, and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

4 portobello mushroom caps, sliced
1 clove garlic, chopped

½ cup dry Marsala wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 4 tablespoons butter and heat 1 tablespoon olive oil in a skillet over medium heat. Cook and stir the mushroom slices in the skillet until tender. Remove pan from heat and set aside.

3 whole boneless chicken breasts, with skin cut in half or 2 1/2 lbs boneless chicken thighs
1 1/2 tablespoons olive oil

1 onion, sliced thin
3/4 lb mushroom, sliced thin
1/2 cup marsala
1 cup chicken broth
2 tablespoons minced fresh parsley leaves

Steps:

  • Pat chicken dry and season with salt and pepper.
  • In a large heavy skillet heat oil and 1 1/2 tablespoons butter over moderately high heat until hot and brown chicken in 2 batches, transferring to a plate as browned.

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup flour
2 tablespoons vegetable oil

12 ounces mushrooms, sliced button variety
2 tablespoons shallots, finely chopped
1 tablespoon dried porcini mushrooms, ground (can use other varieties depending on your taste or availability)
1/2 cup marsala wine
1/2 cup fat free chicken broth

Steps:

  • Season chicken with 1/4 tsp each of salt and pepper.
  • Dredge chicken in flour, shake off excess.
  • Heat vegetable oil in large skillet over medium heat.
  • Add chicken and cook, turning once after 6-8 minutes. Should be lightly browned on both sides and barely firm when you press the centers of the chicken.
  • Remove chicken from chicken and set aside.
  • In same skillet, heat butter over medium heat. Add button mushrooms, stirring occasionally, cook about 6 minutes or until liquid evaporates.

  • NOTE: You can find dried mushrooms in the ethnic foods aisle in your grocery store. I have also found them in the produce department. Once I couldn't find the dried porcini mushrooms so I bought a mix of dried mushrooms. Then I put the dried mushrooms in my spice grinder to grind. I'm sure if you didn't have a spice grinder, you could use a clean coffee grinder or food processor.

1 lb boneless skinless chicken breast
kosher salt

3 tablespoons olive oil
6 ounces cremini mushrooms (2 1/4 cups) or 6 ounces white mushrooms, sliced 1/8 inch thick (2 1/4 cups)
2 garlic cloves, minced
1/2 cup dry marsala
1/3 cup heavy cream
2 ounces crumbled gorgonzola
2 tablespoons chopped Italian parsley

Steps:

  • slice chicken on an angle into 3/4 inch pieces; season generously with salt and pepper.
  • In a 10 inch straight sided saute pan, heat 2 TBL of oil over medium high heat; saute half of the chicken turning once until lightly browned and barely cooked through- about 1-2 minutes per side; Transfer cooked chicken to a plate and cover with foil to keep warm; repeat with remaining chicken.
  • Return pan to medium high heat and add remaining 1 TBL oil.
  • Add mushrooms, season and saute stirring with a wooden spoon until softened and well browned- 3-4 minutes.
  • Reduce heat to medium, add garlic and cook stirring for 30 seconds.
  • Add Marsala and scrape pan to loosen brown bits; simmer until slightly reduced- about 2 minutes.
  • Stir in cream and simmer until thickened slightly- 2-3 minutes.
  • Add 2/3 of the gorgonzola and stir until melted- 1-2 minutes.
  • Taste sauce and adjust seasoning.
  • Add chicken along with any accumulated juices and turn to coat with sauce.
  • Serve immediately, sprinkled with remaining cheese and parsley.

1/3 cup flour
4 ounces sweet butter
4 shallots, finely chopped
1 cup marsala wine
1 cup chicken broth
14 1/2 ounces Italian-style diced tomatoes
2 tablespoons lemon juice
1/2 cup light cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder

Steps:

  • Cut chicken breasts in to small strips. Put chicken strips in a large bowl to coat with the flour, salt, pepper and garlic. I tend to add extra salt, pepper and garlic to give it a little more flavor.
  • Melt butter in skillet. (Sometimes I add less butter just to make it a little healthier.) Add chicken until cooked and then add the shallots and saute until brown. Add wine, chicken broth, diced tomatoes, lemon juice and let simmer for approx 15 minutes. Add the cream and cook till heated through do not boil. Serve with Penne Pasta.

1 lb boneless skinless chicken breast
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon course black pepper
3 tablespoons olive oil, divided
1/2 cup mushroom, sliced
1/2 cup marsala wine
1/2 cup chicken broth
1/2 teaspoon ground basil leaves
1/2 teaspoon onion powder

Steps:

  • Place chicken between two sheet of wax paper and pound to approximately 1/4-inch thickness. Combine flour with next 3 ingredients in a large bowl or plastic bag. Add chicken to flour mixture, toss to coat.
  • Heat 2 tablespoons oil in a large skillet over medium=high heat. Saute chicken 3 to 5 minutes per side or until done. Remove from skillet.
  • Add mushrooms and remaining oil, if needed. Saute 2 to 3 minutes. Stir in wine and remaining 3 ingredients. Stir to loosen any browned particles, bring to boil. Return chicken to skillet. Simmer, uncovered, for 2 minutes.

Ingredients
1/2 cup all-purpose flour
2 six ounce boneless, skinless chicken breasts, pounded thin
4 tablespoons extra virgin olive oil (EVOO)
2 cups mushrooms, sliced
2 shallots, thinly sliced
1/2 cup Marsala
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
3 tablespoons picked parsley, chopped
1 cup chicken stock, warm
1 tablespoon unsalted butter
1/4 teaspoon freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
Fava Beans & Asparagus
Ingredients
3 tablespoons extra virgin olive oil (EVOO)
1/2 pound fresh red pepper, sliced and seeded
Kosher salt and freshly ground black pepper
1 shallot, minced
1 clove garlic, minced
1 cup chicken stock
2 small leeks, white portion mostly
1/3 pound fresh fava beans, shelled
1/2 pound pencil asparagus

Steps:

  • Season chicken breasts. In a shallow bowl combine the flour, garlic powder, and cayenne, and toss. Quickly dredge the chicken breasts in the seasoned flour mixture, shaking to remove any excess flour. Heat 3 tablespoons EVOO in a large skillet over medium-high heat until shimmering. Cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Remove and set aside. Add 1 tablespoon of the remaining EVOO to the original pan and add the mushrooms and shallots. Season with salt and pepper. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. Add the Marsala wine and the warm stock and bring to a boil. Return the chicken breasts to the pan, add lemon juice, and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes. Swirl in 1 tablespoon butter and parsley. Set aside to serve on bed of fava beans and asparagus. Top with mushroom sauce. Garnish with basil. For Veggies: Heat 2 tablespoons EVOO over medium-high heat in a large sauté pan. Add the red pepper, season and toss to coat. Cut leeks on an angle into 1-inch lengths. Rinse well, add leeks to pan, and toss. Add the asparagus and toss. Season with each step. Add the fava beans and toss. Add chicken stock, garlic, and shallot, and cook 5 minutes over medium heat. Serve on hot plate with whole chicken breast on top.

  • Sprinkle chicken breasts with salt and pepper, then 2 teaspoons marjoram. Melt 1 tablespoon butter with 1 tablespoon oil in large nonstick skillet over medium-high heat. Add chicken to skillet and sauté until just cooked through, about 7 minutes per side. Transfer chicken to plate; tent with foil to keep warm. 2 Tbsp. butter
14 round buttery crackers, crushed (about 1/2 cup)
1/4 cup finely chopped cooked chicken
2 Tbsp. KRAFT Shredded Parmesan Cheese, divided
2 Tbsp. Marsala wine
1/2 tsp. dried Italian seasoning

Steps:

  • Heat oven to 400ºF.
  • Remove mushroom stems and finely chop. Set mushroom tops aside.

1/2 cup low sodium chicken broth

Steps:

  • In a bowl, combine the flour, salt, and pepper; add the diced chicken and toss gently to coat thoroughly.
  • Heat a large skillet over medium heat.
  • Add 1 tablespoon oil and the butter and let the butter melt.
  • Add the chicken and cook for several minutes on each side until it is brown and cooked partially through.
  • Remove the chicken from the pan and set aside.
  • Add the remaining oil to the same pan (no need to clean pan); saute the mushrooms and garlic for 1 minute, then add the wine, broth, and lemon juice.
  • Bring the liquid to a low boil, scraping any bits of chicken form the bottom of the pan.

A great Chicken Marsala with a wonderful sauce. Serve with noodles, rice or spaghetti. Double the sauce. It's so good!

1- 1-1/2 lb thinly sliced boneless, skinless chicken breast
kosher salt
pepper
3 Tbsp olive oil
2-1/4 c mushrooms, sliced 1/8 inch thick
2 garlic cloves, minced
1/2 c dry marsala wine
1/3 c heavy cream
2 oz crumbled gorgonzola
2 Tbsp chopped italian parsley

Steps:

  • 1. Season chicken generously with salt and pepper.
  • 2. In a 10 inch straight sided saute pan, heat 2 tbsps. oil over medium high heat; saute half of the chicken, turning once until lightly browned and barely cooked through-about 2 to 3 minutes per side. Transfer chicken to a plate and cover with foil to keep warm; repeat with remaining chicken.
  • 3. Return pan to medium high heat and add remaining 1 tbsp. oil. Add mushrooms, season and saute stirring with a wooden spoon until softened and well browned-3-4 minutes. Reduce heat to medium, add garlic and cook stirring for 30 seconds.
  • 4. Add Marsala and scrape pan to loosen brown bits; simmer until slightly reduced- about 2-3 minutes/ Stir in cream and simmer until thickened slightly-2-3 minutes. Add 2/3 rds of the Gorgonzola and stir until melted-1-2 minutes.
  • 5. Taste sauce and adjust seasoning. Add chicken along with any accumulated juices and turn to coat with sauce.
  • 6. Serve immediately, sprinkled with remaining cheese and parsley.
