8 slices day-old crusty white bread , crusts removed
50g very soft butter
4 tbsp Seville orange marmalade , plus 4 tsp
300ml full-fat milk
248ml pot double cream
3 large eggs
seeds 1 vanilla pod
4 tbsp golden caster sugar
1 tbsp whisky
icing sugar , for dusting

Steps:

  • Butter each piece of bread on both sides, then spread 4 with the 1 tbsp marmalade each. Pop the remaining bread on top to make 4 marmalade sandwiches. Cut into triangles and nestle in rows in a large baking dish. Heat oven to 160C/140C fan/gas 3.
  • Beat the milk, cream, eggs, vanilla, sugar and whisky together, then pour over the bread. Leave to soak for 30 mins.
  • Dot the remaining marmalade all over the top of the pud and dust with the icing sugar. Bake for 45 mins-1 hr or until puffy and starting to caramelise where the bread breaks out of the custard. Serve hot or warm.

1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup orange marmalade
1/2 teaspoon finely grated orange zest
Pinch fine sea salt
Butter or nonstick cooking spray, for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 1/2 cups granulated sugar
1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin puree
1 teaspoon vanilla extract
3 ounces semisweet chocolate, melted and cooled

Steps:

  • For the marmalade butter: Mix the butter, marmalade, orange zest and sea salt together in a bowl until smooth. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Remove from the refrigerator 15 minutes before serving.
  • For the swirl bread: Preheat the oven to 350 degrees F. Brush a 9-by-5-inch loaf pan with butter, or spray with nonstick spray; set aside.
  • Combine the flour, baking soda, pumpkin pie spice, baking powder and fine salt in a medium bowl.
  • Place the sugar and oil in the bowl of a stand mixer fitted with the paddle attachment and beat on medium-high speed until well combined (it'll look like wet sand), about 1 minute.
  • Turn the mixer to medium speed and add the eggs, one at a time, beating well after each addition. Reduce the speed to low, add the pumpkin puree and vanilla extract, and mix until just combined, about 30 seconds. Stop the mixer and scrape down the sides of the bowl and the paddle. Add the flour mixture, and mix until just combined.
  • Remove the bowl from the mixer and drizzle the melted chocolate evenly over the batter.
  • Using a rubber spatula, fold the chocolate into the batter until it's just swirled in. (Be careful not to fully incorporate the chocolate into the batter--you want a marbled effect.)
  • Pour the batter into the prepared loaf pan and spread it into an even layer. Bake until the bread is browned on top and a toothpick inserted into the center comes out with a few moist crumbs attached, 50 to 60 minutes. Let cool in the pan on a wire rack for 10 minutes. Remove from pan and let cool another 10 minutes before slicing. Serve with the marmalade butter.

Brioche or challah (about 8 ounces bread)
2 cups half-and-half
2 cups heavy cream
1 pinch salt
1 vanilla bean, split lengthwise
6 eggs
1 cup sugar
1 (8-ounce) jar orange marmalade
Confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees. Cut the crusts off the bread and cut into 1/2-inch slices. In a saucepan, heat the half-and-half, cream, salt, and vanilla bean over medium heat, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat. Set aside to infuse 10 to 15 minutes. In a large mixing bowl, whisk the eggs and sugar together. Whisking constantly, gradually add the hot cream mixture. Strain into a large bowl to smooth the mixture and remove the vanilla bean.
  • In the bottom of a baking dish, place a layer of bread slices. Pour half the custard over the slices and let soak 15 minutes. Meanwhile lay the other half of the slices in another pan. Pour the remaining custard over the bread to soak it. Spread the marmalade over the soaked bread in the baking dish then cover it with the other soaked bread slices.
  • Arrange the pudding in a hot water bath. Bake until just set and very light golden brown on top, about 30 to 35 minutes. Dust with confectioners' sugar and broil until sugar is slightly caramelized. Serve warm or chilled.

Just found this recipe on the internet and have not made it yet, but it sure looks different and interesting. Bread is glazed with additional orange marmalade after baking.

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups orange marmalade, divided
1 egg
3/4 cup orange juice
1/4 cup oil
1 cup pecans, chopped

Steps:

  • Preheat oven to 350°.
  • In a large bowl, combine flour, baking powder, salt and baking soda.
  • In a separate bowl, mix together 1 1/4 cups of marmalade, egg, oil and orange juice.
  • Add wet ingredients to flour mixture and mix well.
  • Stir in the nuts.
  • Pour into a greased loaf pan and bake at 350° for 50 to 60 minutes.
  • When done, cool briefly, then remove bread from the pan and place on a baking dish.
  • Glaze with the 1/4 cup of reserved marmalade and return to the oven for 1 minute.
  • Place on a rack and cool completely.
  • Bread will slice easier if chilled first.

This jam is a hit! Great to can and if you have a few oranges that need to be used, this is a great way to do it.

1 1/4 c sugar
2 Tbsp low sugar pectin
3 large oranges or about 3-4 small to medium
1 large lemon
1/2 lemon zest
1 orange zest

Steps:

  • 1. With a peeler, shave off the bright layer of peel from one orange and about half of the lemon. Chop into tiny julienne style pieces. Segment and cut into 1/2in pieces remaining orange and lemon pieces, discarding the white peel membrane. Combine the zest, cut fruit, sugar and pectin in bread machine pan.
  • 2. Select Basic setting. Press Start/Stop and allow to combine for 5-6 minutes, scrape down sides with a spatula. Press Start/Stop setting to cancel cycle.
  • 3. Select Bake setting and Start/Stop and allow to cycle until time reads 0:00. Using oven mits remove bread pan pour with a funnel or 1/4c measuring cup into clean jars. Refrigerate to set and this will last 2-4 weeks. You could also can in a hot water bath and store after completely cool.

  • In large bowl, beat eggs, pumpkin, butter, 1/3 cup marmalade and 3 tablespoons orange juice with electric mixer on medium speed until blended. On low speed, gradually beat in flour mixture. Spread in pan.
  • Bake 9-inch pan 1 hour 10 minutes to 1 hour 15 minutes, 8-inch pans 45 to 48 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack.

3 Tbsp cold butter
1 c sugar, divided use
5 eggs plus 2 egg yolks
1/2 c frozen orange juice concentrate, thawed to room temperature
1 1/2 c half and half
1 1/2 c heavy cream, divided use
5 Tbsp orange flavored liqueur, divided use
zest of 1 medium orange
zest of 1 lemon
1 tsp vanilla extract
1 tsp salt
8 thick slices of day-old challah or artisan bread
1/4 c plus 4 tablespoons butter, room temperature, divided use
10 oz jar of good quality orange marmalade
1 c powdered sugar

Steps:

  • 1. Preheat the oven to 350 degrees. With the 3 Tablespoons cold butter, butter a 9 x 13-inch or baking dish and sprinkle bottom with 2 Tablespoons of the sugar. Set aside.
  • 2. In a large bowl, whisk by hand the eggs and yolks. Add 3/4 cup of the sugar and continue to whisk until thoroughly combined. Add the orange juice concentrate, half and half, 1 cup of the heavy cream, 3 Tablespoons of the orange liqueur, orange and lemon zest, vanilla and salt. Whisk 1 minute.
  • 3. Lay the bread slices on a flat surface and butter one side of 4 of them with ¼ cup of the butter. Spread half the jar of the marmalade on the other 4 slices of bread. Place the buttered bread slices on top of the marmalade slices, with the butter and marmalade on facing the inside, just like making Paddington himself 4 of his favorite marmalade sandwiches!
  • 4. Cut each sandwich into large 2-inch cubes and place half the cubes into the prepared pan. Pour half of the egg mixture over the bread cubes in the baking dish, allowing it to soak in for 15 minutes.
  • 5. With half of the remaining marmalade, drop 4 spoonfuls on top of the soaked bread cubes and top with the remaining bread cubes. Pour the other half of the egg mixture over the top, allowing it to soak in 15 more minutes. Drop the remaining marmalade over the top and swirl in with a knife gently. Sprinkle the remaining granulated sugar over the top.
  • 6. Bake for 45 minutes, or until a knife inserted in the middle comes out clean. Let the bread pudding cool for 10-15 minutes before glazing.
  • 7. To make the glaze, in a small saucepan melt the remaining 4 Tablespoons butter on medium high heat. Remove from heat and add powdered sugar, the remaining 2 Tablespoons orange liqueur and remaining ½ cup heavy cream. Whisk until smooth. Drizzle glaze over the top of the bread pudding and serve. Cover any leftovers with plastic wrap and store in the refrigerator.

3 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/3 cup orange juice
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. Grease and flour a 9x5-in. loaf pan. In a large bowl, beat butter and brown sugar until blended. Add eggs, 1 at a time, beating well after each addition. Gradually beat in marmalade. In another bowl, whisk flour, baking powder, cinnamon and salt; add to butter mixture alternately with orange juice, beating well after each addition. Easy and delicious orange bread pudding, flavoured with orange marmalade. Enjoy warm or at room temperature for dessert or brunch

1/2 loaf bread (about 5 cups, cubed into 3/4-1" pieces, stale bread recommended)
1/4 cup butter (melted)
1 cup milk
1 cup half and half cream (10% b.f, or 18% table cream or 35% whipping cream for a richer pudding)
3 large eggs
1 tsp vanilla
1/4 cup light brown sugar
1/3 cup orange marmalade
1 Tbsp whiskey or bourbon (optional)
Icing/confectioners' sugar (for garnish/serving)

Steps:

  • Cube bread and place into a large bowl. Drizzle with melted butter and toss to coat. Drop the marmalade in by spoonfuls and toss to coat/combine. Set aside while you make the custard.
  • For the custard, combine all the custard ingredients in a medium bowl and whisk well to combine.
  • Pour custard over bread cubes and toss well. Allow mixture to soak for 30 minutes.
  • Preheat oven to 350F (not fan-assisted).
  • Once bread has soaked, spoon mixture into individual ramekins or one large baking dish. Pour any custard liquid left in the bowl into the ramekins, if it will fit. *If ramekins are super-full, you may wish to bake on top of a baking sheet.
  • Bake in preheated oven for 45-60 minutes, or until they they test set. Test by inserting a knife into the centre of the pudding. It should come out clean.
  • Serve warm or at room temperature, dusted with icing/confectioners/ sugar. Refrigerate any leftovers for up to 2 days.

This is a quick way to get a gooey, yummy pull-apart bread. It came out of Quick Cooking, but I modified it just slightly since I didn't have the pan they called for. If you're not a fan of orange marmalade, try it with any jam you have on hand.

1/4 teaspoon salt
4 eggs
1 1/4 cups canned pumpkin (not pumpkin pie mix)
1/2 cup butter or margarine, melted
1/3 cup orange marmalade
3 tablespoons orange juice
2 tablespoons orange marmalade
1 tablespoon orange juice

Steps:

  • Heat oven to 350°F. Grease bottom only of one 9x5-inch loaf pan or two 8x4-inch loaf pans with shortening. In medium bowl, mix flour, sugars, pumpkin pie spice, baking powder, cinnamon and salt; set aside.
  • In large bowl, beat eggs, pumpkin, butter, 1/3 cup marmalade and 3 tablespoons orange juice with electric mixer on medium speed until blended. On low speed, gradually beat in flour mixture. Spread in pan.
  • Bake 9-inch pan 1 hour 10 minutes to 1 hour 15 minutes, 8-inch pans 45 to 48 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack.
  • In small bowl, mix glaze ingredients. Spread glaze over warm loaf. Cool completely, about 2 hours. Store tightly wrapped in refrigerator up to 1 week.

5 slices applewood bacon
2 tablespoons unsalted butter, room temp
2 slices pumpernickel toast
2 tablespoons bitter orange marmalade
1/4 teaspoon fresh ground black pepper

Steps:

  • 5 slices applewood smoked bacon.
  • 1 Tbs unsalted butter.
  • 2tbs bitter orange marmalade.
  • Freshly ground black pepper.
  • Very important, the bacon should be cooked to the point that it is done, but still floppy. Crisp bacon does not work in this recipe.
  • Toast the sturdiest pumpernickel bread that you can find.
  • Butter both slices.
  • Spread a thin layer of the strongest orange marmalade you can find on one side.
  • Place bacon on top of marmalade.
  • Grind black pepper on top.
  • Close with other buttered pumpernickel slice.
  • Cut on an diangle.
  • Enjoy!

1/2 cup butter or 1/2 cup margarine, softened
1/2 cup brown sugar, packed
2 eggs
10 ounces orange marmalade
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup orange juice
1/2 cup chopped walnuts or 1/2 cup chopped pecans

Steps:

  • Beat butter and sugar together until light and fluffy.
  • Add eggs, one at a time, mixing well after each addition.
  • Blend in marmalade and set mixture aside.
  • Combine flour, baking powder, baking soda and salt.
  • Add dry ingredients to butter mixture alternately with orange juice; stir in nuts.
  • Pour into a greased and floured 9x5" loaf pan.
  • Bake at 350 degrees for one hour or until toothpick tests clean.
  • Cool for 15 minutes before removing from pan.

2/3 c orange marmalade
1/2 c chopped pecans or wanuts
1/4 c honey
2 Tbsp butter,melted
2 tubes(7- 1/2oz each) refrigerated buttermilk biscuits

Steps:

  • 1. In a small bowl,combine the marmalade,nuts,honey, and butter. Cut each biscuit into four pieces. layer 1/2 into a greased 10" tube pan;top with1/2 of the marmalade mixture. Repeat.
  • 2. Bake at 375 27-30 minutes or golden brown. Cool in pan 5 minutes then invert onto a serving plate.

MARMALADE NUT BREAD

This is a very good quick bread. This is the recipe as I got it but I really prefer ginger marmalade in this. When I use the ginger marmalade I do not add the orange rind.

1 tablespoon baking powder
1/2 teaspoon salt
2 eggs, beaten
1 cup milk
1 cup pecans or 1 cup walnuts, chopped
1/2 cup shortening, melted
1/2 cup orange marmalade
1 tablespoon grated orange rind
cream cheese, softened (optional)

Steps:

  • Sift together dry ingredients.
  • Stir in remaining ingredients, except cream cheese, just until dry ingredients are moistened.
  • Spoon mix into a greased 9 x 5-inch loaf pan.
  • Bake at 350 degrees F. for 1 hour.
  • Cool in pan 10 minutes.
  • Remove from pan and cool completely on wire rack.
  • Serve with cream cheese, if desired.
