Another recipe from Festival Foods, a grocery store in Green Bay. This is a very good Italian salad. I have made this on several occasions. I've even tripled it for a church function. Super Simple.

16 ounces fusilli, cooked
1 cup diced tomato
1 (14 ounce) can quartered artichoke hearts, drained
1/2 lb provolone cheese, cubed
1/2 lb salami, cubed
1/4 lb sliced pepperoni, cut in half
1 large green bell pepper, cut into 1 inch pieces
1 (10 ounce) can black olives, drained
1 cup roasted red pepper, chopped
1 (8 ounce) bottle Italian salad dressing
1 cup parmesan cheese, shredded

Steps:

  • In a large bowl, combine first 9 ingredients.
  • Pour in salad dressing, and toss to coat.
  • Top with Parmesan cheese.

1 (16 ounce) package fusilli
1 cup frozen baby peas, thawed
2 (2 ounce) cans sliced black olives
1 cup cubed genoa salami
3/4 cup chopped green onion
3/4 cup chopped celery
1/2 cup chopped fresh parsley
1 (2/3 ounce) package Italian salad dressing mix
1 cup mayonnaise
1 cup sour cream
2 tablespoons milk

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • In a medium bowl combine mayonnaise, sour cream, milk and Italian dressing mix. Whisk together until smooth, set aside. In a large salad bowl combine cooked and cooled pasta, peas, olives, salami, green onions, celery and parsley.
  • Mix in dressing last, reserving 1/2 cup.
  • Let sit over night in fridge. Stir before serving.
  • Add extra dressing if pasta appears dry.
