6 medium plum or heirloom tomatoes, sliced
1/2 cup sliced red onion
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1/2 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
4 fresh basil leaves, snipped

Steps:

  • In a large bowl, gently combine tomatoes and onion. In a small bowl, whisk the vinegar, oil, sugar, salt, garlic powder and pepper. Pour over tomato mixture; toss gently to coat. Sprinkle with basil. Serve at room temperature with a slotted spoon.

1/2 cup olive oil
1 tablespoon sugar
2 teaspoons chopped fresh parsley
2 teaspoons slivered fresh basil (chiffonade)
2 teaspoons red wine vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground thyme
2 green onions, sliced
1 cloves garlic, minced finely
2 pounds mixed tomatoes, different shapes and colors
1 head butter lettuce, leaves separated
Lots of fresh basil leaves, for garnish

Steps:

  • For the dressing: Mix the olive oil, sugar, parsley, basil, vinegar, salt, pepper, thyme, green onions and garlic in a large bowl.
  • For the tomatoes: Cut the tomatoes into slices, chunks, quarters or halves, depending on the size. Add the tomatoes to the dressing and marinate for 3 to 4 hours.
  • To serve: Lay out the butter lettuce leaves on a platter. Remove the tomatoes with a slotted spoon and spoon generously onto the lettuce. Drizzle over some of the dressing. Sprinkle over lots of whole basil leaves and basil stems with a few leaves on then.

3 large or 5 medium fresh tomatoes, thickly sliced
1/3 cup olive oil
1/4 cup red wine vinegar
1 teaspoon salt, optional

1/2 garlic clove, minced

1 tablespoon minced fresh parsley
1 tablespoon minced fresh basil or 1 teaspoon dried basil

Steps:

  • Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours.

Nonstick vegetable oil spray
12 large plum tomatoes (about 2 1/2 pounds), halved lengthwise
1/4 cup extra-virgin olive oil
Assorted fillings (such as whole-milk ricotta cheese, pesto, chopped olives, small fresh mozzarella balls, soft fresh goat cheese, and anchovies)

Steps:

  • Preheat oven to 400°F. Spray large rimmed baking sheet with nonstick spray. Remove seeds and juices from tomato halves. Arrange tomato halves, cut side up, on prepared sheet; sprinkle lightly with salt and pepper, then drizzle with oil. Roast tomatoes until slightly charred and tender, about 50 minutes. 2 1/2 pounds large plum tomatoes, quartered lengthwise, seeds and membranes removed
4 large fresh thyme sprigs
3 garlic cloves, unpeeled
1/2 cup olive oil
1 teaspoon coarse sea salt
1 pound large plum tomatoes
2 large fresh thyme sprigs
2 garlic cloves, unpeeled
1/2 teaspoon coarse sea salt
1 1/2 cups (or more) olive oil
1 3/4 cups plus 2 tablespoons all purpose flour
3/4 teaspoon fine sea salt
10 tablespoons (1 1/4 sticks) chilled unsalted butter (preferably European style), cut into 1/2-inch cubes
2 large egg yolks
2 tablespoons (about) water, room temperature
1 egg yolk, beaten with 1 teaspoon water to blend (for glaze)
8 cups loosely packed assorted mixed greens, including arugula and frisée
2 tablespoons extra-virgin olive oil
1/2 teaspoon fine sea salt
2 ounces Parmesan cheese, shaved with vegetable peeler (about 1/2 cup)
6 large fresh basil leaves

Steps:

  • Preheat oven to 300°F. Oil large rimmed baking sheet. Arrange tomatoes on baking sheet. Scatter thyme sprigs and garlic cloves over. Drizzle with 1/2 cup olive oil, then sprinkle with coarse sea salt. Bake tomatoes 45 minutes. Turn tomatoes over; continue to bake until tomatoes shrink slightly but are still plump and moist, about 1 hour longer. Cool completely. Peel off skins. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.)
  • Bring large pot of water to boil. Add tomatoes; blanch 30 seconds. Drain. Cool tomatoes. Peel, quarter, and seed tomatoes. Cut away membranes. Transfer tomatoes to glass jar or bowl. Add thyme, garlic cloves, and salt. Pour enough oil over tomatoes to cover. Let stand at room temperature 2 hours. (Can be made 1 day ahead. Chill. Bring to room temperature before using.)
  • Blend flour and salt in processor. Using on/off turns, cut in butter until coarse meal forms. Add 2 egg yolks and 1 tablespoon water; process just until moist clumps form, adding more water if dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill 2 hours. (Can be made 1 day ahead. Keep chilled. Soften slightly at room temperature before rolling out.)
  • Preheat oven to 375°F. Roll out dough on lightly floured parchment paper to 12-inch round. Transfer parchment with crust to baking sheet. Pierce crust all over with fork; brush with egg glaze. Bake until crust is golden brown, about 27 minutes. Cool crust completely on parchment on baking sheet.
  • Toss greens with oil and sea salt in large bowl. Place crust on platter. Arrange greens atop crust, leaving 1-inch plain border.
  • Starting at outside edge and working toward center, alternate tomato confit and marinated tomatoes in slightly overlapping concentric circles atop greens. Top with Parmesan shavings. Garnish with basil leaves. Cut into wedges and serve.

MARINATED TOMATOES

Plum or Roma tomatoes are best to use in this recipe. Plan head the tomatoes need to chill for a minimum of 4 hours and then left at room temperature for 30 minutes before serving. Try to use only seasoned salt for this, it really improves the flavor of the marinade! Prep time includes chilling time.

1 cup vegetable oil (you can reduce the oil slightly if desired)
1/2 cup red wine vinegar
1 tablespoon sugar
1 teaspoon garlic powder
2 teaspoons seasoning salt
1 teaspoon dried oregano
1/2 teaspoon black pepper (use about 1/2 teaspoon or to taste)
8 -10 plum tomatoes (choose firm and ripe red tomatoes for this)

Steps:

  • In a bowl combine the oil and remaining ingredients except the tomatoes; whisk to blend well then place in a large heavy zip-top freezer bag.
  • Slice the tomatoes into 4 wedges; add to the plastic bag, and seal bag; turn to coat the tomato wedges with marinade.
  • Refrigerate for about 4 hours.
  • Let sit out at room temperature for 30 minutes before serving.
