Purchasing marinated mushrooms at a deli can be quite expensive. These will rival any that you can buy and will save you a ton of money! These make a wonderful addition to an antipasto platter.

4 cups whole mushrooms, cleaned & stems removed
1/4 cup olive oil
1/4 cup vegetable oil
2 tablespoons red wine vinegar
2 tablespoons fresh parsley, minced
2 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon ground pepper
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Combine all ingredients to make marinade.
  • Pour over mushrooms and stir gently to coat.
  • Cover container and refrigerate overnight.
  • Stir or shake mushrooms occasionally, to ensure contact with marinade.
  • Optional: If you prefer, use 1/2 cup of your favorite olive oil, instead of 1/4 cup olive oil & 1/4 cup vegetable oil.

We love mushrooms and this is a recipe that I use to have with steaks, chicken or pork chops. Its simple and easy to prepare and ready in no time. I looked to see if something alike this was already posted but didn't see anything.

1 (8 ounce) package fresh mushrooms
2 tablespoons butter
2 tablespoons Worcestershire sauce

Steps:

  • Slice mushrooms in half.
  • Heat a large frying pan on medium heat.
  • Add butter and let melt.
  • Add mushrooms and sauté well.
  • Add Worcestershire sauce and stir well.
  • Sauté 5-10 minutes.
  • Be sure not to over cook.

½ cup cooking wine
1 tablespoon olive oil
2 tablespoons dark soy sauce
2 tablespoons balsamic vinegar
2 cloves garlic, minced
2 large portobello mushroom caps

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a baking dish, mix the wine, olive oil, soy sauce, balsamic vinegar, and garlic. Place mushroom caps upside down in the marinade, and marinate 15 minutes.
  • Cover dish, and transfer to the preheated oven. Bake 25 minutes. Turn mushrooms and continue baking 8 minutes.

3 pounds small mushrooms
1 cup grape seed oil
1/2 cup red wine vinegar
Salt and pepper to taste
1 tablespoon sugar
1 teaspoon Worcestershire sauce
2 medium onions, thinly sliced

Steps:

  • Wash and stem mushrooms. Set aside stems for other use.
  • Combine other ingredients thoroughly and pour over mushrooms. Refrigerate and marinate for two days.
