- In a shallow dish, combine the first six ingredients. Add steak and turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally., Drain and discard marinade. Grill steaks, covered, over medium-hot heat for 3-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

- Blend soy sauce, vinegar, syrup, garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Toss steaks with mixture. Marinate at room temperature about 15 minutes.
- Prepare a grill for direct-heat cooking over hot charcoal (high heat for gas); see grilling procedure.
- Discard marinade and pat steaks dry.
- Oil grill rack, then grill steaks, covered only if using a gas grill, turning occasionally, 6 to 8 minutes total for medium-rare. Let rest on a plate, uncovered, 10 minutes.

THAI MARINATED GRILLED SIRLOIN
Steps:
- FOR MARINADE: With processor running, drop garlic and chilies through feed tube and process until finely minced. Scrape down sides of work bowl. Add green onions and cilantro and process until minced. Add lime juice, fish sauce, sugar and 1/4 teaspoon salt and blend. Transfer marinade to large plastic bag. Add steak. Seal bag tightly. Turn over several times to coat steak. Refrigerate overnight, turning occasionally. Prepare barbecue (high heat). Drain steak, reserving marinade. Season both sides of steak with salt. Grill to desired degree of doneness, about 4 minutes a side for medium-rare. Meanwhile, gently warm marinade in saucepan over medium heat or in microwave. Remove steak from grill. Cut it into 1/4-inch-thick slices. Place on warm platter. Brush with marinade and serve. *Serranos are very hot, small fresh green chilies available at Latin America markets and some supermarkets. **Available at oriental markets and in oriental section of many supermarkets.
MARINATED GRILLED SIRLOIN STEAK
Steps:
- Combine the marinade ingredients in a freezer bag. Shake well and add the steaks. It is good to double bag and place in refrigerator for 1 hour before grilling. Grill the steaks 5 minutes per side on medium high heat. Enjoy.
MARINATED GRILLED SIRLOIN
I got a George Foreman grill for Christmas and had to try out these. They turned out great without heating up the grill. Serve with a baked potato and side salad and your meal is planned.

Steps:
- Cut 1 inch intervals around fat sides of steak and set aside.
- In a small fry pan, saute garlic in olive oil until tender.
- Place garlic into a medium mixing bowl and add other marinade ingredients.
- Mix well.
- Pour marinade into a large ziplock bag with steaks.
- Marinade at least six hours but I prefer to do them overnight.
- Remove steaks from marinade and pat dry, reserving liquid.
- Grill steaks for 10-15 minutes on each side or until desired doneness.
- Don't forget to occasionally brush with marinade.
- While steaks are cooking, heat reserved marinade, mushrooms, green onions and ripe olives.
- Place cooked steaks on a meat platter and pour cooked marinade over top.
