Easy Vinegar Marinated Cucumbers are a light, refreshing, summertime side dish. Add regular or cherry tomatoes for a more colorful cucumber salad.

5 cucumbers
1 red onion
1 cup apple cider vinegar ((or white vinegar, red wine vinegar, rice vinegar))
1/2 cup sugar ((or more to taste))
1/2 cup water
1 teaspoon salt

Steps:

  • Peel and slice cucumbers into thin slices.
  • Cut onion in half and cut into very thin slices.
  • Combine onions and cucumbers in a large bowl.
  • In a separate, medium-sized bowl, combine remaining ingredients. Stir until sugar dissolves.
  • Pour vinegar mixture over cucumbers and onions. Stir until the cucumbers are evenly coated in the dressing.*
  • Refrigerate at least 20 minutes. Before serving, drain liquid and place in a serving bowl to serve.

fresh tomatoes
cucumbers
any type italian dressing (vinegar & oil type)
fresh or dried basil
fresh minced garlic clove
few red pepper flakes if you don't use zesty italian dressing (optional)

Steps:

  • 1. Cut fresh toamtoes in wedges, removing core as you cut.
  • 2. Peel 3 strips from cucumbers lengthwise. Slice cucumber.
  • 3. Place tomatoes & cucumber in bowl that has a tight fitting lid.
  • 4. Sprinkle on the basil & minced garlic & pepper flakes, if using.
  • 5. Pour on the Italian dressing. Toss to coat. Store in fridge. Allow to set overnight before eating.

2 cups cherry tomatoes
red onion (optional)
1 teaspoon sugar (or splenda)
1/2 teaspoon salt
1/4 cup red wine vinaigrette (Kraft's Seven Seas or use Kraft's Zesty Italian salad dressing)
1 teaspoon fresh basil

Steps:

  • Peel and slice cucumbers. Slice tomatoes in one-half. Add red onion, if using.
  • Place in a medium size bowl and sprinkle with sugar and salt.
  • Add salad dressing and mix.
