Greek Pork Loin Ribs and Potatoes Sheet Pan Dinner - a super simple dinner with pork loin ribs, potatoes, carrots and tomatoes with a very delicious marinade made with lots of garlic and herbs.

1/4 cup olive oil
juice from 1 lemon ((about 3 tbsp))
2 tablespoon fresh thyme (chopped (1 tsp if using dry))
3 tablespoon fresh oregano (chopped (1 tbsp if using dry))
6 cloves garlic (minced)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1 1/2 pound baby potatoes (cleaned)
1 pint cherry tomatoes
1 large carrot (chopped in big pieces)
2 pound pork loin ribs

Steps:

  • Preheat oven to 400 F degrees.
  • In a small bowl whisk together the olive oil, lemon juice, thyme, oregano, garlic, salt and pepper.
  • Pour half of the marinade over the potatoes, tomatoes, and carrots and toss well.
  • Toss the remaining marinade with the pork.
  • Arrange the pork and potatoes on a baking sheet.
  • Bake for 30 to 45 minutes, or until the pork is done to your liking and the potatoes are fork tender.

2 pounds boneless country-style pork ribs
1/2 teaspoon salt
1/4 teaspoon pepper
8 small red potatoes (about 1 pound), halved
4 medium carrots, cut into 1-inch pieces
3 celery ribs, cut into 1/2-inch pieces
1 medium onion, coarsely chopped
3/4 cup water
1 garlic clove, crushed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

Steps:

  • Sprinkle ribs with salt and pepper; transfer to a 4-qt. slow cooker. Add potatoes, carrots, celery, onion, water and garlic. Cook, covered, on low until meat and vegetables are tender, 6-8 hours., Remove meat and vegetables; skim fat from cooking juices. Whisk soup into cooking juices; return meat and vegetables to slow cooker. Cook, covered, until heated through, 15-30 minutes longer.

Mom's recipe. Simple, super tasty and a great family dinner. Prep time includes 4 hour marination in refrigerator.

Number Of Ingredients 8

4 lbs boneless pork ribs (mostly dark meat, if you can find them)
3 lbs red potatoes, quartered
salt & freshly ground black pepper
8 -10 garlic cloves, minced
3 tablespoons fresh thyme, minced
2 tablespoons fresh rosemary, minced
2/3 cup extra-virgin olive oil
1/3 cup red wine (we always use cabernet sauvignon, one good enough to drink)

Steps:

  • Arrange pork in two oven-proof 9x13 dishes. Add red potatoes in between the ribs. Salt and pepper all to taste.
  • Mix the rest of the ingredients and spoon over the meat/potatoes.
  • Cover with foil or plastic wrap and marinate in the refrigerator for 2 hours. Flip meat, salt and pepper lightly, recover and marinate for 2 more hours.
  • Preheat oven to 425 degrees. Remove cover from pans and cook for 40-45 minutes or until 165 degrees internal temperature is reached. Potatoes will be tender.

Marinated and Grilled Boneless Rib Roast of Pork for Burritos image

Number Of Ingredients 7

4 large cloves garlic
1 teaspoon salt
1 teaspoon paprika
Pinch of cayenne pepper
1 teaspoon freshly ground cumin
1 teaspoon dried oregano
1 pound boneless rib roast of pork enough for 8 large burritos

Steps:

  • Peel and mash the garlic. Sprinkle garlic with the salt and chop to a fine paste. Mix well in a small bowl with the paprika, cayenne, cumin and oregano. Nick the rib roast in 8 places or so to allow the marinade to penetrate. Spread the marinade over the roast, cover, and marinate for 48 hours. When ready to prepare burritos, grill the roast until just past pink. Slice thinly.;
