2 1/4 tablespoons balsamic vinegar
2 tablespoons very finely chopped fresh rosemary
2 tablespoons very finely chopped fresh sage

4 garlic cloves, very finely chopped

  • Mix all ingredients together until well combined. Use to marinate steaks at least 2 hours and up to overnight.

We absolutely love bison! Since it is a rare treat, we prefer simple sauces that showcase the flavor of the bison. This is perfect for a romantic dinner :)

4 bison steaks
2 tablespoons vegetable oil
salt and pepper, to taste
16 ounces fresh mushrooms, sliced
2 tablespoons butter
1 garlic clove, minced
1 tablespoon all-purpose flour
1/2 cup water or 1/2 cup beef broth
1/2 cup white wine
1 teaspoon Worcestershire sauce

Steps:

  • Season bison steaks with salt and pepper, to taste.
  • Heat oil in a skillet over high heat.
  • Sear steaks in oil until light brown on each side, about 3-4 minutes per side.
  • *Note: the cooking time for the bison will vary depending on the thickness of your steaks. Bison should never be cooked more than medium because otherwise it will get too tough.
  • When bison is done cooking, remove from skillet and keep warm.
  • Add mushrooms, butter, and garlic to meat drippings in skillet.
  • Cook about 5 minutes at medium high heat.
  • Reduce heat to low. Sprinkle mushroom mixture with flour and stir well to ensure that all flour is absorbed.
  • Add water, white wine, and Worcestershire sauce to the skillet. Stir well to incorporate liquids into mushroom mixture.
  • Top steaks with mushroom sauce and enjoy!

I have never cooked bison before. My husband had buffalo burgers once and loved them. The local supermarket is selling loads of different wild game so I bought some bison steaks to try.

1 1/2 tablespoons Dijon mustard
1 tablespoon Thai fish sauce
6 sprigs fresh thyme
2 garlic cloves, crushed
1 tablespoon olive oil
1/2 cup dry white wine

olive oil
1 1/2 tablespoons shallots, finely chopped
1/2 cup dry white wine
1 1/2 teaspoons balsamic vinegar
1 teaspoon instant chicken bouillon granules, concentrated (powder, cube, past etc.. I use a very dense stock so you may have to adjust amount depending on what)
1 1/2 teaspoons sugar
1 1/2 teaspoons cornflour

Steps:

  • Combine all the marinade ingredients in a storage container or a Ziploc bag and refrigerate overnight.
  • The next day remove steaks from marinade and strain marinade into a bowl and set to one side.
  • Heat a small amount of olive oil in a pan to a medium high heat, add steaks to pan and cook for 1 minute each side to sear. Turn heat down to medium and cook for a further 5-6 minutes a side for medium rare. ( My steaks were about 1 inch thick probably 3-4 minutes a side for 3/4 inch).
  • Cook longer for more well done steaks, just remember bison meat is very lean and will toughen up if over cooked.
  • For the sauce.
  • Heat olive oil in a pan, add shallots and saute until soft. Add wine, vinegar, stock, sugar and reserved marinade. Cook until mixture is quite hot, mix a small amount of water to cornflour. Pour cornflour into pan and stir until mixture boils and thickens serve immediately over steaks.
  • I served mine with mashed sweet potatoes and garlic buttered vegetables.
  • To serve slice steaks into strips and arrange on plate and pour sauce over.

12 whole grain lasagana noodles, cooked
15 ounces light ricotta cheese
1 cup 2% mozzarella cheese
1/2 cup parmesan cheese
3 cups fresh spinach leaves
1 organic egg
1 (32 ounce) jar marinara sauce
1 lb ground buffalo meat
1/4 cup fresh parsley

Steps:

  • Preheat oven to 350.
  • Cook noodles according to instructions, al dente.
  • Prepare your marinara sauce. I prepared a jarred sauce and added cooked ground bison to make a meat sauce. I also add herbs and garlic to my sauce.
  • Mix 15oz ricotta, egg and parsley in bowl.
  • Allow noodles to drain and cool flat, do not allow to dry out completely.
  • Add some sauce to bottom of baking dish.
  • Spoon some of the ricotta mixture onto noodle and spread out length of noodle.
  • Add 3-4 whole fresh spinach leaves on top of ricotta spread.
  • Spoon over some sauce.
  • Sprinkle with Parmesan cheese.
  • Roll and place in baking dish.
  • Repeat until baking dish is full.
  • Pour additional sauce over roll ups.
  • Sprinkle top with Mozzarella Cheese.
  • Bake Bake in a preheated 175?C / 350?F oven for 25-30 minutes.
