4 cups hot milk
½ cup yellow cornmeal
½ cup maple syrup
⅓ cup packed brown sugar
¼ cup molasses
2 eggs, lightly beaten
2 tablespoons butter, melted
1 teaspoon salt
¾ teaspoon ground ginger
¼ teaspoon ground cinnamon
½ cup cold milk

Steps:

  • Pour 4 cups hot milk into the top of a double boiler and place over simmering water. Slowly stir cornmeal into milk and cook until thickened, about 20 minutes. Stir occasionally.
  • Preheat oven to 300 degrees F (150 degrees C). Grease a 2-quart round baking dish.
  • Whisk maple syrup, brown sugar, molasses, eggs, melted butter, salt, ginger, and cinnamon together in a bowl. Stir maple syrup mixture into cornmeal-milk mixture until thoroughly combined; pour into prepared baking dish. Pour 1/2 cup cold milk over top of pudding.
  • Bake until set but still slightly quivery on top, about 2 hours. Let stand 30 minutes before serving.

French Toast Bread Pudding with Pumpkin Maple Syrup image

Soaking bread in custard makes the best French toast, so it made perfect sense to transform everyone's favorite breakfast into a communal confection. There are zillions of bread pudding recipes, but this one has a perfect proportion of bread to custard, and the pumpkin maple syrup makes this a damn near perfect autumn brunch dish.

1/2 cup creme fraiche or sour cream
2 tablespoons confectioners' sugar
1/4 teaspoon pumpkin pie spice (see Cook's Note)
Soft butter, for the baking dish
5 large eggs
1 1/4 cups granulated sugar
2 cups heavy cream
2 cups whole milk
1 teaspoon ground cinnamon
8 cups (1-inch) cubes rich bread, such as challah or brioche loaf, preferably slightly stale, about 10 ounces
1 cup pure maple syrup
2/3 cup solid-pack pumpkin puree
1/4 cup heavy cream
1/4 teaspoon pumpkin pie spice (see Cook's Note)

Steps:

  • 1. To make the creme fraiche: Whisk all of the ingredients together in a small bowl. Cover and let stand at room temperature for at least 1 hour. (If you have the time, refrigerate the creme fraiche mixture overnight. Let stand at room temperature for 1 hour before serving.)
  • 2. To make the bread pudding: Position a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish. Have ready a large roasting pan to hold the baking dish.
  • 3. Whisk the eggs and sugar well in a large bowl. Whisk in the cream, milk, and cinnamon. Add the bread cubes and mix well. Let stand 5 minutes for the bread to soak up some of the liquid. Pour into the baking dish. Cover tightly with aluminum foil.
  • 4. Place the baking dish in the roasting pan. Put the pan on the oven rack, and carefully pour enough boiling water into the roasting pan to come about 1/2 inch up the sides of the dish. Bake for 30 minutes. Uncover and bake until the pudding is barely browned and feels set when pressed gently in the center, about 30 minutes more. Remove from the roasting pan and let stand for 5 minutes.
  • 5. Meanwhile, make the syrup: Whisk all of the ingredients together in a medium saucepan. Bring to a simmer over medium heat. Remove from the heat and keep warm.
  • 6. Spoon the pudding into individual bowls and top with dollops of the spiced creme fraiche. Serve immediately, with the warm pumpkin syrup passed on the side.

1 cup sugar
2 eggs
1 teaspoon vanilla

  • CAKE.
  • In a large bowl, with an electric mixer, mix the butter and sugar till the mix is light.

I'm always looking for ways to make desserts healthier. You could certainly use soy milk if you wanted to, and 1/2 cup of raisins can be added if you want. This recipe was originally found in Leanne Ely's "Healthy Foods." Prep time does not include cooking the rice as I usually have some leftover.

1 cup cooked brown rice
1/2 cup maple syrup
1 3/4 cups milk (I use skim though 1% is probably better)
1 egg
3 egg whites
1/2 teaspoon cinnamon

  • Add the cooked rice and cook for 10 minutes over low to medium heat.

100g self-raising flour
½ tsp ground cinnamon
½ tsp ground nutmeg
50g butter
75g dark muscovado sugar
1 tbsp maple syrup
1 medium egg , beaten
3 tbsp semi-skimmed milk
40g pecan nuts, chopped
50g raisin
25g butter
3 tbsp double cream
2 tbsp maple syrup

Steps:

  • First make the topping. Put the butter, double cream and maple syrup together in a small pan and stir over a low heat until well mixed. Bring to the boil, simmer for 1 min, then pour into the base of a buttered 900ml pudding basin.
  • Sift the flour into a bowl with the cinnamon and nutmeg. In a separate bowl, beat the butter with the sugar and maple syrup until light and fluffy. Beat in the egg a little at a time. Fold the dry ingredients into the creamed butter and egg mixture, adding the milk to give a soft dropping consistency. Stir in nuts and raisins.
  • Spoon the mixture into the basin, then cover with greased greaseproof paper and foil, making a pleat in the centre of both. Tie securely with string.
  • Steam the pudding for 1½ hrs, checking regularly to make sure that the pan doesn't boil dry. Turn out and serve with extra warmed maple syrup and a generous helping of double cream.

3 tbsp (45 mL) maple syrup
¼ tsp (1 mL) freshly grated nutmeg
¼ tsp (1 mL) ground cardamom

8 slices white bread, crusts removed
Rhubarb
1 cup (250 mL) granulated sugar
3 cups (750 mL) water
1 lb (500 g) rhubarb cut in to 1½ -inch (4-cm) lengths
½ tsp (2 mL) grated nutmeg
½ tsp (2 mL) cinnamon
1 tsp (5 mL) grated lemon rind
Pinch salt
Custard
2 tbsp (25 mL) granulated sugar
3 large eggs
1 cup (250 mL) whipping cream
3 tbsp (45 mL) maple syrup
¼ tsp (1 mL) ground cardamom

Steps:

  • 1. Preheat oven to 350ºF. (180ºC). 2. Mix butter, maple syrup, nutmeg, cardamom and cloves together and brush on one side of the bread. Lay in a single layer on a baking sheet. Bake in the oven for 8 to 10 minutes, or until lightly golden on bottom and at edges. Reserve. 3. To prepare rhubarb, add sugar to water and bring to a boil over high heat, stirring until sugar is melted. Boil for 2 minutes. Reduce the heat to a simmer and add rhubarb. Simmer rhubarb for 2 minutes or until limp, and then remove from heat. Use a slotted spoon to remove rhubarb from syrup. 4. Toss the rhubarb with nutmeg, cinnamon, lemon rind and salt. Set aside. 5. For custard, whisk together sugar, eggs, cream, maple syrup and cardamom in a mixing bowl. 6. Grease an 8 x 8-inch (2-L) baking pan. 7. Trim one layer of toasted bread to fit and lay in pan. Sprinkle half the rhubarb over the bread. Repeat the bread layer and finish with rhubarb. 8. Pour the custard over the bread and fruit in the pan. Press down lightly on any bread that is not submerged in egg mixture. Cover and bake for 30 minutes. 9. Uncover and bake 15 minutes longer, or until set and puffed. Note that the fruit makes this a very soft bread pudding. Remove from oven and serve immediately. Garnish with a drizzle of maple syrup.

1 1/2 cups whole-grain farro
3 cups whole milk
1 cup heavy cream
2 tablespoons unsalted butter, melted
1/3 cup maple syrup
1/4 teaspoon fine sea salt
3 large eggs, lightly beaten
1/4 cup dark brown sugar

Steps:

  • Put the farro in a fine sieve and rinse under cool running water. Transfer to a bowl, cover with two inches of water, cover the bowl with plastic wrap and refrigerate overnight.
  • Preheat oven to 275 degrees. Drain farro and set aside.
  • In a bowl, mix together the milk, cream, melted butter, maple syrup, salt and eggs. Add the drained farro, mixing well.
  • Pour mixture into a greased 1 1/2-to-2-quart shallow casserole dish and bake on the middle level for 30 minutes. Stir the mixture and sprinkle the top with the brown sugar. Raise the oven heat to 300 degrees and bake for 30 to 40 minutes more, until set.
