'Grands-peres au sirop d'erable', or 'Grandfathers in maple syrup' are dessert dumplings that are cooked in maple syrup and are a French Canadian classic. Here is my grandmother's recipe. Dumplings can be served warm or cold.

1 ½ cups all-purpose flour
½ cup white sugar
2 tablespoons baking powder
½ teaspoon salt
¼ cup margarine
1 cup milk
1 cup maple syrup
1 cup water

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Rub in margarine until mixture is crumbly. Add milk and mix until a smooth dough forms.
  • Combine maple syrup and water in a large saucepan over medium-high heat and bring to a boil. Scoop dough into dumplings using an ice cream scoop and drop gently into the boiling syrup. Reduce heat to low and simmer, keeping saucepan covered, until dumplings are cooked but not gooey and syrup has thickened, 10 to 15 minutes.

1 3/4 cups maple syrup (do not use imitation syrup)
1 1/4 cups water
1 1/2 cups flour
4 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
4 tablespoons unsalted butter, frozen
3/4 cup milk

Steps:

  • Bring syrup and water to a boil in a 6 qt Dutch oven over medium-high heat.
  • While the syrup/water is rising to a boil, whisk flour, baking powder, and salt in a bowl. Set aside.
  • Grate butter on large holes of a box grater into flour and toss to coat. Add milk and stir with a fork until dough forms.
  • When syrup mixture reaches a boil, use a spoon to drop large clumps of dough into syrup.
  • Cover pot and simmer until dumplings are cooked through (10-15 minutes). Spoon dumplings and sauce into 6 bowls and serve.

1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg
2 tablespoons cold unsalted butter, cut into bits
1 cup well-shaken buttermilk
2 cups pure maple syrup (preferably Grade B or dark amber)
2 cups water
Garnish: freshly grated nutmeg
Accompaniment: plain whole-milk yogurt or sour cream

Steps:

  • Sift together flour, baking powder and soda, salt, and nutmeg into a bowl. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk and stir with a fork just until dough is evenly moistened (do not overmix).
  • Bring syrup and water to a boil in a 4-quart pot at least 10 inches wide. Drop 8 1/2-cup measures of dough into syrup, leaving spaces to allow dumplings to expand. Gently simmer over moderately low heat, covered, until tops of dumplings are dry to the touch, 15 to 20 minutes. Serve warm.

One of my favorite dessert made with maple syrup. Each time we go to my cousin's sugar shack, his wife makes us maple syrup dumplings. So yummy. This recipe is from Ricardo & Friends.

2 cups unbleached all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, softened
1 cup milk
1/2 teaspoon vanilla extract
1 cup water
1 (540 ml) can maple syrup

Steps:

  • In a bowl, combine the flour, sugar, baking powder and salt. Work the butter into the dry ingredients with your fingers or a fork until the mixture resembles coarse sand. Add the milk and vanilla, stirring with a wooden spoon until the dough is smooth.
  • Place the syrup and water in a large saucepan and bring to a boil. Using two spoons or a moistened ice cream scoop, shape the dough into about 12 balls; use about 30 ml (2 tablespoons) for each ball. Drop the balls one by one into the boiling syrup mixture.
  • Cover, reduce the heat and simmer for about 15 minutes. Serve with the hot syrup and a scoop of vanilla ice cream.
  • Note: The butter coats the flour, inhibiting gluten formation and giving the dumplings a crumbly texture. A similar effect happens with scones.

Steps:

  • Mix water and maple syrup in a saucepan. Bring to boil and let simmer at a very low heat. Meanwhile, prepare the dough:.
  • Dough: In a bowl, put flour, baking powder and salt. Add butter and rub with your hands.
  • Add the milk and stir.
  • With a spoon, let drop dough by spoonful directly in the boiling syrup.
  • Cover and let simmer at very low heat for 15 minutes (Do not remove the cover in the 15 minutes).

1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons shortening, cut into small pieces
1/2 cup milk
2 1/4 cups light maple syrup

Steps:

  • In a bowl, sift flour, measure and re-sift with baking powder and salt. Add shortening and mix well until shortening is fine. Add milk, blend. Dough will be quite firm.
  • Heat 2 cups of maple syrup in a frying pan; bring to a boil over medium to high heat. Lower heat so that the syrup is not boiling and drop spoonfuls of dough into the syrup. Cover and poach for 12 to 15 minutes, making sure syrup is not boiling.
  • Serve hot with remaining maple syrup.

4 teaspoon(s) baking powder
1/2 teaspoon(s) kosher salt
3 tablespoon(s) unsalted butter

1/2 teaspoon(s) pure vanilla extract
MAPLE SYRUP
1/2 cup(s) (1 stick) butter
2 1/2 cup(s) water
2 cup(s) brown sugar
1/2 cup(s) good quality maple syrup
1/2 teaspoon(s) pure vanilla extract

Steps:

  • DOUGH: In a large bowl, combine flour, sugar, baking powder and salt.
  • Add butter to dry ingredients and work until the mixture resembles coarse sand using fingers, pastry cutter or a couple of knives.
  • Add milk a little at a time until the dough comes together. Add vanilla extract, stir and set aside.
  • MAPLE SAUCE: In a Dutch oven over medium-high heat, add butter, water, brown sugar, maple syrup and vanilla extract. Bring the sauce to a simmer.
  • By the tablespoon, drop the dough balls one by one into the simmering sauce. Cover, reduce heat to medium and cook for 14 minutes. Halfway, spoon the sauce over the dumplings.
  • Scoop up a hot dumpling into a serving bowl, spoon sauce over and serve with a scoop of vanilla ice cream.

As someone who loves dumplings, I'm always brainstorming crazy dumpling ideas. After eating a sausage and egg sandwich one morning for breakfast, the idea of breakfast dumplings was born! Enjoy the dumplings by themselves or dip them in maple syrup!

1 pound bulk regular pork sausage (such as Jimmy Dean®)
6 eggs
1 teaspoon salt
½ teaspoon ground black pepper
cooking spray
½ cup bacon bits
½ cup maple syrup
50 potsticker wrappers

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl lined with paper towels to drain some of the grease.
  • Beat eggs, salt, and pepper together in a small bowl.
  • Spray another large skillet with cooking spray; warm over medium-high heat. Pour eggs into the skillet; cook and stir until eggs are set, about 5 minutes.
  • Mix sausage, scrambled eggs, and bacon bits together in a large bowl, crumbling any large chunks. Mix in maple syrup.
  • Pour water into a small bowl. Wet edges of the dumpling wrappers using your fingers dipped in the water. Place about 1 teaspoon filling into the middle of each wrapper; fold in 1/2 to make dumpling shapes. Press edges to seal and pinch so they won't open while cooking.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add dumplings, cover, and steam until tender, 5 to 7 minutes.
