This classic recipe will come together in the time it takes to make a frittata or a stack of pancakes for brunch. You could also try frying the patties in a cast-iron pan alongside eggs in a hole. As the maple-and-sage-tinged fat renders out of the sausage, the bread will thirstily absorb it. You might even want to drizzle a tiny bit more syrup over the whole thing as you sit down to eat, so that each bite of sausage, bread and runny yolk has the perfect blend of savory and sweet. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless hockey pucks. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon. 1 teaspoon dried sage
2 teaspoons Diamond Crystal kosher salt or 1 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 large pinch ground nutmeg

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • Finely crumble the sage into a large bowl. Add salt, black pepper, nutmeg, coriander and cayenne to the sage, and stir to combine. Add pork and syrup to the spice mixture.
  • Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
  • Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil to the pan. and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture, and mix to combine.
  • Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
  • To cook, wipe out cast-iron pan, and return it to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
  • Drain sausages on paper towels. Serve hot.

2 large onions, sliced
18 large eggs
1 cup half-and-half

18 fajita-size flour tortillas
Two 16-ounce jars store-bought salsa

  • Preheat the oven to 375 degrees F.
  • Place the frozen tater tots on a sheet pan and bake for 20 minutes. Place the sausages on a sheet pan and bake for 5 minutes.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, about 15 minutes.

Steps:

  • Preheat broiler and preheat a medium skillet over medium-high heat with 1 tablespoon oil and 1 tablespoon butter. Mix chicken with apple, syrup, grill seasoning, poultry seasoning, cinnamon and nutmeg and score the meat into 4 sections. Form 4 large, thin patties and set into hot butter and oil. Cook 5 minutes on each side.
  • Place fork split muffins on broiler pan and toast. Butter toasted muffins and reserve.

200g butter , softened to room temperature
1 lemon , grated zest and some of the juice
4sprigs fresh rosemary
3sprigs fresh thyme
2fistfuls curly parsley sprigs, about 25g, plus 2 tbsp finely chopped parsley
olive oil , for browning
1 chicken crown
500g sweet potato , peeled
1 onion , sliced
3 garlic cloves
3 tbsp maple syrup
3 tbsp balsamic vinegar
8 outside leaves of a large head of Chinese leaf
6-8 large fresh basil leaves
4large Cumberland sausages , about 200g
4tbsp vinaigrette , preferably homemade

Steps:

  • Mix 125g of the softened butter with the lemon zest and a squeeze of juice. Strip the leaves from 3 of the rosemary and all the thyme sprigs and finely chop with the parsley. Mix the herbs into the butter until smooth. Use your hands to carefully peel back the top-breast skin and slowly push your hands between the flesh and skin until you reach the bottom. Press the butter into the pocket of skin, working it over the flesh, then stretch the skin back over the breast. Smooth down the outside with your fingers. Chill the bird for half an hour or more.
  • Heat oven to 220C/fan 200C/gas 7 and heat a large, non-stick, ovenproof frying pan until you can see a heat haze rising. Add about 2 tbsp oil and brown the bird all over. Transfer the bird to the oven either in the same pan, if ovenproof, or in a roasting tray and cook for 5 mins. Turn the heat down to 190C/fan 170C/gas 5, then cook for another 30-35 mins, ladling over pan juices every 10 mins to baste. Remove and allow to stand for 10 mins.
  • Tear off a large sheet of foil and fold in half. Spread the centre with 25g butter and season. Lay 4 Chinese leaves down in a line, pressing on the stems to snap - flatten if necessary. Place the basil leaves over, then lay the sausages tightly down the centre and cover with remaining leaves. Roll in the foil as firmly as possible. Twist the ends of the foil and cut them off or fold them in. Place in a shallow baking tray and add a cup of cold water to help it steam-bake. Cook it on the shelf under the bird for the final 25 mins, then remove and stand for 10 mins before unwrapping and slicing into diagonal chunks.
  • Cut the sweet potatoes into long wedges, blanch in boiling water for 2 mins, drain, cool in iced water and set aside. Heat a large frying pan until hot and add 3 tbsp oil. Stir-fry the onion, garlic cloves and remaining rosemary sprig for 2-3 mins, then add the sweet potato and remaining butter and sauté until lightly browned.
  • Pour in the maple syrup and cook for 2 mins until it caramelises. Trickle in the vinegar and about 1⁄2 cup (120ml) water. Cook for 10 mins, shaking the pan occasionally until the wedges are just tender, then remove the garlic and rosemary. Keep warm.
  • To serve, first mix the chopped parsley into the vinaigrette. Using a sharp knife, feel for the top of the breast bone and carefully slice away each breast in one whole piece, slashing it in short movements from the rib bone and cutting it away to include the exposed wing-tip bone. Lay on a chopping board and cut into 3 or 4 thick slices. Repeat with the other breast. Divide the sweet potato between 4 warmed plates and arrange the chicken on top. Place the sausage-roll chunks around the edge and spoon over the parsley vinaigrette.

1 teaspoon coarse salt
1/2 teaspoon coarse black pepper
1 teaspoon fennel seeds
1 pound ground pork
2 tablespoons maple syrup
1 tablespoon olive oil or vegetable oil

Steps:

  • Combine salt and pepper, fennel in the bottom of a bowl. Add pork and mix to combine spices. Pour 2 tablespoons maple syrup over the pork and work the meat again to combine the maple syrup. Form meat into patties, 2 to 3 inches round. Cook patties in 1 tablespoon oil in a nonstick skillet over medium high heat 4 or 5 minutes on each side. Drain sausage patties on towel lined plate, then serve.

I found this recipe in Cook's Country magazine. They did a taste test on frozen waffles and it turned out that EGGO Homestyle waffles were the best out of eight brands that they tasted. Depending on the size and shape of your waffles, you will need 6 to 8. Don't use Belgian style because they are too thick for this recipe. You can double the recipe and use a 9 X 13-inch baking dish. Time does not include refrigerating one hour or overnight.

6 -8 frozen waffles
12 ounces breakfast maple sausage, crumbled
unsalted butter (for dish)
1 1/2 cups cheddar cheese, shredded
6 large eggs
1 1/4 cups whole milk or 1 1/4 cups low-fat milk
1/4 cup maple syrup
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oven to 350°.
  • Arrange waffles in single layer on baking sheet.
  • Bake until crisp, about 10-minutes per side.
  • Brown sausage in non-stick skillet over medium heat, breaking it apart with spoon, 8-10 minutes.
  • Drain on paper towel-lined plate.
  • Butter 8-inch square baking dish.
  • Add half of waffles in single layer. (It's ok to break some to fit into corners if needed).
  • Add half of sausage and 1/2 cup cheese.
  • Repeat layering of waffles, sausage, and 1/2 cup of cheese.
  • Whisk eggs, milk, maple syrup, salt, and pepper in medium bowl until combined.
  • Pour egg mixture evenly over casserole.
  • Cover with plastic wrap and place weights on top. (you can put another square baking dish on top and then weight with heavy canned goods or place a couple one pound boxes of sugar on the plastic wrap and top with a cast-iron pan.).
  • Refrigerate for at least 1 hour or overnight.
  • Adjust oven rack to middle position and heat oven to 325°.
  • Let casserole stand at room temperature for 20 minutes.
  • Uncover casserole and sprinkle remaining 1/2 cup cheese over top.
  • Bake until edges and center are puffed, 45 to 50 minutes.
  • Cool 5 minutes.
  • Cut into pieces and serve.

1 1/2 tablespoons paprika
1 tablespoon finely chopped garlic
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes
1 1/2 pounds ground pork
1/3 cup pure maple syrup
2 tablespoons canola oil, divided

Steps:

  • Whisk paprika, garlic, salt, black pepper, cayenne, thyme, and red pepper flakes in a large bowl. Add pork and maple syrup. Using your hands, combine well.
  • Form 16 (2"-wide) patties about 1/2" thick with damp hands and arrange on a large parchment-lined rimmed baking sheet.
  • Heat 1 Tbsp. oil in a large cast-iron or nonstick skillet over medium. Cook patties in batches, adding remaining 1 Tbsp. oil to skillet between batches, until golden brown and cooked through, about 2 minutes per side. Drain on paper towels.
  • Do ahead
  • Uncooked patties can be formed 1 day ahead; wrap in plastic and chill. Patties can be cooked 30 minutes ahead; keep warm in a low oven.

This is not my recipe but one from Jimmy Dean and it is too good not to share. Best breakfast casserole by far. I have been asked to make this for many potlucks and many dinners served at my home. It's not just for breakfast anymore. If you love sweet and savory, you'll love this recipe. Recipe from Jimmy Dean.

2 large golden delicious apples, peeled, chopped
2 Tbsp sugar
1 tsp ground cinnamon
8 eggs
3 c milk
1 tsp vanilla
8 c french bread cubes (¾-inch pieces)
1 or 2 pkg jimmy dean maple flavor pork sausage roll, cooked, crumbled and drained
2 c shredded cheddar cheese, divided
warm maple syrup, optional
********about the 1 or 2 packages of sausage. the recipe calls for 1 but i use 2 because i like a lot of meat in the casserole. some breakfast casseroles tend to be custard like because of the bread and using more meat helps with that.********

Steps:

  • 1. Preheat oven to 325°F. Toss apples with sugar and cinnamon; set aside.
  • 2. Beat eggs, milk and vanilla in large bowl with wire whisk until well blended. Add bread cubes, sausage, apple mixture and 1-½ cups cheese; stir gently until evenly coated.
  • 3. Spoon into lightly greased 13x9-inch baking dish; top with remaining ½ cup cheese.
  • 4. Bake 40-45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 12 squares to serve. ***Some serve with warm maple syrup, but I think it's over kill on the sweetness scale.***
  • 5. ***Cook's Tips: Make-Ahead Maple Breakfast Casserole: Assemble casserole as directed. Refrigerate overnight. When ready to serve, uncover and bake 50-55 minutes or until knife inserted in center comes out clean.***
