6 English muffins (halved)
1 pound ground maple sausage
1 medium sweet onion (diced)
2 medium apples (cored and diced)
8 whole sage leaves (minced)
8 large eggs
2 cups half and half
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded provolone cheese
1/4 cup shredded parmesan cheese

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish. Line the bottom of the dish with English muffin halves, cutting them as needed to fit.
  • In a large skillet over medium high heat, cook the ground sausage with the onion until sausage is brown. Add in diced apple and sage and cook another 3-5 minutes.
  • In a large mixing bowl, whisk together eggs, half and half, salt, and pepper. Stir in shredded cheeses.
  • Stir sausage mixture into egg mixture and pour over English muffins. ***At this point you can cover the dish and refrigerate it overnight.
  • Bake in the preheated oven for 45 minutes to 1 hour, until set.

2 pounds bulk spicy pork sausage
3 medium tart apples, peeled and cut into 1/4-inch slices
12 cups cubed Italian bread
1-1/2 cups shredded sharp cheddar cheese
9 large eggs
3 cups 2% milk
3/4 teaspoon yellow mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon. Add apples to drippings; cook and stir over medium heat until tender, 4-6 minutes., In a bowl, combine sausage, apples, bread and cheese. Transfer to a greased 13x9-in. baking dish. In another bowl, whisk eggs, milk and mustard; pour over bread mixture. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, covered, until a knife inserted in the center comes out clean, about 45 minutes. Uncover; bake until golden brown, 10-15 minutes longer. Let stand 5-10 minutes before serving., Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake as directed, increasing time as needed or until golden brown and a knife inserted in the center comes out clean.

¼ cup maple syrup
1 ½ tablespoons chopped fresh sage
1 tablespoon salt
2 ½ teaspoons fennel seed
2 ½ teaspoons red pepper flakes
2 ½ teaspoons garlic powder
2 ½ teaspoons onion powder
1 teaspoon anise seed
1 tablespoon olive oil

Steps:

  • Mix pork, maple syrup, sage, salt, fennel seed, red pepper flakes, garlic powder, onion powder, and anise seed in a large bowl until evenly blended. Shape pork into small patties.
  • Heat olive oil in a large skillet over medium heat; fry patties in batches until pork is browned and no longer pink in the center, 4 to 5 minutes per side.

4 medium tart apples, peeled and sliced (about 4 cups)
1 package (8-1/2 ounces) cornbread/muffin mix
1/3 cup 2% milk
1 large egg
Maple syrup

Steps:

  • Preheat oven to 400°. In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Transfer to a greased 8-in. square baking dish. Top with apples., In a small bowl, combine muffin mix, milk and egg just until moistened. Pour over apples. Bake, uncovered, until edges are golden brown and a toothpick inserted in center comes out clean, 30-40 minutes. Let stand 10 minutes before serving. This is not my recipe but one from Jimmy Dean and it is too good not to share. Best breakfast casserole by far. I have been asked to make this for many potlucks and many dinners served at my home. It's not just for breakfast anymore. If you love sweet and savory, you'll love this recipe. Recipe from Jimmy Dean.

2 large golden delicious apples, peeled, chopped
2 Tbsp sugar
1 tsp ground cinnamon
8 eggs
3 c milk
1 tsp vanilla
8 c french bread cubes (¾-inch pieces)
1 or 2 pkg jimmy dean maple flavor pork sausage roll, cooked, crumbled and drained
2 c shredded cheddar cheese, divided
warm maple syrup, optional
********about the 1 or 2 packages of sausage. the recipe calls for 1 but i use 2 because i like a lot of meat in the casserole. some breakfast casseroles tend to be custard like because of the bread and using more meat helps with that.********

Steps:

  • 1. Preheat oven to 325°F. Toss apples with sugar and cinnamon; set aside.
  • 2. Beat eggs, milk and vanilla in large bowl with wire whisk until well blended. Add bread cubes, sausage, apple mixture and 1-½ cups cheese; stir gently until evenly coated.
  • 3. Spoon into lightly greased 13x9-inch baking dish; top with remaining ½ cup cheese.
  • 4. Bake 40-45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 12 squares to serve. ***Some serve with warm maple syrup, but I think it's over kill on the sweetness scale.***
  • 5. ***Cook's Tips: Make-Ahead Maple Breakfast Casserole: Assemble casserole as directed. Refrigerate overnight. When ready to serve, uncover and bake 50-55 minutes or until knife inserted in center comes out clean.***
