ROASTED WINTER SQUASH AND PARSNIPS WITH MAPLE SYRUP GLAZE AND MARCONA ALMONDS

Steps:
- Butter 11x7x2-inch glass baking dish. Combine kabocha and butternut squash and parsnips in large bowl. Melt butter in small saucepan over medium heat. Whisk in next 5 ingredients. Add to squash mixture and toss to coat. Transfer mixture to prepared baking dish. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.
- Preheat oven to 375°F. Cover squash mixture with foil. Bake covered 40 minutes. Uncover; bake until all vegetables are tender, about 20 minutes longer. Sprinkle with almonds and bake 10 minutes.

These tangy glazed nuts go perfectly with a glass of sherry.

Steps:
- Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet, and bake until lightly toasted and fragrant, 7 to 8 minutes.
- In a medium bowl, combine tamari and maple syrup. Add almonds, and toss until thoroughly coated. Lightly cover the baking sheet with cooking spray, and spread almonds evenly on sheet.
- Roast in oven until deep brown, stirring once, 15 to 17 minutes. Immediately transfer to a clean baking sheet, and spread out almonds, separating so nuts don't touch. Let cool before serving.

MAPLE ROASTED ALMONDS WITH FLEUR DE SEL LES FOUGERES
These are yummy with drinks, or as a snack. Fleur de sel is formed on the top of evaporating sea water. You can find it in spice shops or specialty shops. Otherwise sea salt should work, perhaps crushed a little. The restaurant in Chelsea Quebec sell these and have often sold out. Edited to add the timing of adding the salt..dont wait til the syrup hardens.

Steps:
- Toss almonds with maple syrup. Add oil and toss to coat.
- Spread on parchment lined baking sheet and bake at 325 until fragrant and syrup has thickened and coated the nuts, about 20 minutes. Stir every 5 minutes.
- Remove from oven and sprinkle with salt IMMEDIATELY before the syrup hardens and so they can adhere. Let cool on pan. Break any clumps apart and package in jars. Store airtight at room temperature.

Steps:
- Preheat oven to 350 F.
- Toss almonds with maple syrup and salt.
- Add oil last, and toss to coat.
- Spread coated almonds on baking sheet lined with parchmment paper.
- Bake until roasted and syrup has thickened, stirring occasionally, about 20 minutes.
- Be careful not to let them burn, which can easily happen with maple syrup.
- Let cool on pan.
- Break apart any clumps while still a bit warm or the sugar will crack off.
- When completely cool, store in airtight container at room temp.
- Keeps 1 month.

EASY, MAPLE ROASTED CARROTS WITH OLIVES + ALMONDS + MINT RECIPE BY TASTY
Here's what you need: carrot, olive oil, maple syrup, Castelvetrano olives, lemon zest, almond, fresh mint, salt, pepper, balsamic vinegar

- To make the glaze: Cook the balsamic vinegar in a small saucepan over medium heat for 10 - 15 minutes or until reduced by half and slightly thick.
- For the carrots: Preheat the oven to 400°F.
- Wash, dry and peel carrots(if not using rainbow carrots). Cut carrots in half lengthwise so that the carrots are about ½ inch thick across. If using larger carrots, you may need to cut carrots in half again (to make quarters). Toss them in olive oil, salt and pepper and arrange in a single layer on a baking sheet.
- Drizzle carrots with maple syrup and cook in the oven. After 10 minutes, flip carrots and cook for another 5 minutes or until a deep golden brown.
- For the topping: In a small oven-proof dish, bake almonds in the oven alongside the carrots for 5-10 minutes. Checking every 3 minutes until golden brown. Once light brown, remove from the oven and set aside.
- Pit and chop olives, place in a small bowl. Stir in lemon zest and olive oil. Set aside.
- Chop mint and set aside.
- To assemble: Arrange carrots on a serving dish, top with chopped olives, almonds, mint and finish with a drizzle of balsamic glaze.
- Serve warm and enjoy.

MAPLE AND BACON ROASTED ALMONDS
Steps:
- 1. Cut bacon into large dice, about the size of a whole almond. Cook bacon until it's crispy. Toss bacon, bacon fat, almonds and mustard powder until almonds are well coated. 2. Combine with maple syrup and toss again till well coated. Cook, stirring constantly, until maple syrup is just coating the almonds. Pour onto a paper lined sheet pan. Sprinkle with salt. Let cool. Should resemble brittle when done.
