After I picked my first green beans one year, I wanted to make a savory dish that was unique, quick and packed with flavor. I loved this so much I couldn't stop eating it, so the next day I picked more beans and made this delicious side dish again. -Merry Graham, Newhall, California

3 cups cut fresh green beans
1 large onion, chopped
4 bacon strips, cut into 1-inch pieces
1/2 cup dried cranberries
1/4 cup maple syrup
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon bourbon, optional

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place beans in basket. Bring water to a boil. Reduce heat to maintain a low boil; steam, covered, until crisp-tender, 4-5 minutes., Meanwhile, in a large skillet, cook onion and bacon over medium heat until bacon is crisp; drain. Stir cranberries, syrup, salt, pepper and, if desired, bourbon into onion mixture. Add beans; heat through, tossing to combine.

2 pounds potatoes, cut into 1-inch pieces
½ pound fresh green beans, trimmed
1 yellow onion, thickly sliced
¼ cup maple syrup
3 tablespoons soy sauce
3 tablespoons Dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potatoes, beans, and onion into a 9x13-inch casserole dish.
  • Stir maple syrup, soy sauce, mustard, olive oil, and garlic together in a bowl. Pour over veggies and mix until evenly coated. Cover with aluminum foil.
  • Roast in the preheated oven for 25 minutes.
  • Remove veggies from the oven and remove foil. Stir, ensuring sauce is distributed evenly. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Return veggies to the oven and bake, uncovered, for an additional 25 minutes.
  • Remove from the oven; toss again. Return to the oven and bake until tender, about 25 minutes more. Serve piping hot or lukewarm.

2 lbs small yukon gold potatoes, halved
1/2 lb string bean, halved, ends cut off and discarded
1 yellow onion, thickly sliced
2 garlic cloves, minced
3 tablespoons tamari or 3 tablespoons soy sauce
1/4 cup pure maple syrup
3 tablespoons Dijon mustard
2 tablespoons olive oil

Steps:

  • Preheat oven to 450 degrees.
  • Place vegetables in a 9 x 13" casserole dish. In mixing bowl, stir together all the other ingredients until the mustard is dissolved. Pour over the vegetables and mix well until everything is coated. Cover with foil and place in oven. Bake for 25 minutes. Remove from oven and toss everything; use a spoon to drip sauce over the veggies. Turn oven down to 350 degrees and cook for 25 minutes uncovered. Remove from oven, toss again, and cook for 25 more minutes uncovered.

1 ¼kg new potato , halved
3 thyme sprigs
3 tbsp extra-virgin olive oil
1 tbsp wholegrain mustard

Steps:

  • Preheat the oven to 230C/210C fan/ gas 8. Arrange the potatoes on a large baking tray. Add the thyme, drizzle with 2 tbsp of the olive oil, season and toss to coat. Cook in the oven for 50 mins or until crisp.
  • To finish the potatoes, toss with the mustard, drizzle with the remaining olive oil, season and serve.

These sweet-savory beans with 2 kinds of mustard and maple syrup are a dressed up _Sunday dinner_ version of one of my favorite sides, roasted green beans. Recipe adapted from Cook's Illustrated.

1 tablespoon maple syrup
1 tablespoon Dijon mustard
1 tablespoon grainy mustard
1 pinch cayenne pepper
1 lb fresh green beans, stems snapped off
2 carrots, peeled and cut into matchsticks
1 tablespoon vegetable oil
salt
1 tablespoon fresh minced parsley

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with foil.
  • Combine the maple syrup, mustards and cayenne in a small bowl and set aside.
  • Place green beans and carrots on baking sheet. Drizzle with oil and toss with hands to coat evenly. Sprinkle with salt, toss to coat. Distribute in an even layer.
  • Roast for 10 minutes. Remove from oven. Drizzle with syrup/mustard mixture and using tongs, toss to coat evenly.
  • Return to oven and continue roasting until beans and carrots are dark golden brown in spots and beans are beginning to shrivel, 10-12 minutes longer.
  • Remove from oven, season with a little more salt to taste. Transfer to serving dish and garnish with parsley.

3 lbs tiny new potatoes
1/4 cup butter, melted
salt and black pepper
3 tablespoons white balsamic vinegar
2 tablespoons pure maple syrup
3 garlic cloves, thinly sliced
1/4 cup chopped green onion
2 tablespoons chopped fresh thyme
1 tablespoon finely shredded lemon peel

Steps:

  • Preheat the oven to 325 degrees F.
  • Halve or quarter any large potatoes.
  • In shallow dish large enough to hold potatoes in a single layer, toss potatoes with butter; season with salt and pepper.
  • Spread in single layer and roast potatoes, uncovered, for 45 minutes, stirring once or twice during roasting.
  • Meanwhile, in small dish, stir together vinegar, maple syrup, and sliced garlic.
  • Drizzle potatoes with vinegar mixture, gently tossing with a spoon or spatula to coat.
  • Continue to roast about 10 to 20 minutes more, until potatoes are fork-tender and glazed, stirring once or twice.
  • To serve, sprinkle potatoes with green onions, thyme, and lemon peel. Makes 6 servings.
