I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

3 medium sweet potatoes (1 1/2 to 2 pounds), scrubbed well
4 tablespoons (1/2 stick) unsalted butter
3/4 cup pure maple syrup
Coarse salt and freshly ground pepper
Small sprigs fresh thyme, for garnish

Steps:

  • Preheat oven to 400 degrees. Slice each sweet potato in half lengthwise, and slice each half crosswise into 1-inch-thick half-moons.
  • Melt butter in a large cast-iron or other ovenproof skillet over medium heat. Add sweet potatoes; toss to coat evenly. Add maple syrup; toss potatoes to coat, and bring to a boil.
  • Transfer skillet to oven; cook, stirring occasionally, until potatoes are golden, well glazed, and tender when pierced with a paring knife, about 20 minutes. Remove from oven, and season with salt and pepper. Serve hot, garnished with thyme.

1/4 cup grated fresh horseradish
1 tablespoon Dijon mustard
1 tablespoon ancho chile powder
1/2 cup ancho chile powder
1 tablespoons paprika

2 teaspoon dry oregano
1 tablespoon freshly ground black pepper
2 teaspoons chile de arbol
1 teaspoon coriander
1 teaspoon cumin
1 tablespoon kosher salt

4 rib pork chops, 6 ounces each and 1-inch thick
Olive oil
1/4 cup spice rub

Steps:

  • Combine all ingredients in a medium bowl.;
  • Combine all ingredients in a small bowl.;
  • Preheat grill to medium-high. Reserve 1/2 cup of the Maple-Horseradish Glaze and set aside. Brush pork chops on both sides with olive oil and season with salt. Rub 1 tablespoon of the rub onto 1 side of each pork chop. Grill, rub-side down until golden brown, about 4 to 5 minutes. Brush each chop with some of the Maple-Horseradish glaze and turn over. Continue grilling for 3 to 4 minutes for medium doneness, brushing with some of the glaze. Remove the chops to a platter and brush with the reserved glaze.
  • 2 sweet potatoes, cooked 3/4 of the way Spicy Maple Glaze
  • Slice the potatoes, crosswise, into 1-inch thick slices. Brush with maple glaze and grill for 2 to 3 minutes per side.

3 tablespoons butter
¼ cup maple syrup
2 tablespoons brown sugar

  • Place sweet potatoes in a large saucepan with water to cover them. Bring the water to a boil, reduce heat, cover and let simmer 25 to 30 minutes until tender.

1 ½ pounds sweet potatoes, peeled and cut into 1-inch pieces
1 pound chicken tenders
2 teaspoons steak seasoning (such as Montreal Steak Seasoning®)
2 tablespoons vegetable oil
½ cup maple syrup
½ cup sliced green onions

Steps:

  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes, and set aside.

  • Set 2 oven racks in the middle and bottom of the oven, and heat oven to 425 degrees. Line 2 rimmed half-sheet pans with parchment paper or silicone mats.

1 3/4 lbs tart green apples, peeled, halved, cored, cut into 1/4 inch thick slices

1/4 cup unsalted butter, cut into pieces

Since I'm originally from New England, this was a regular side dish in our home. Now that I live in the West, I've introduced it to all my friends, and they love it! It goes especially well with a holiday turkey dinner.

2-1/2 to 3 pounds sweet potatoes, peeled
1-3/4 to 2 pounds apples, peeled
3/4 cup maple syrup
1/4 cup apple cider
1/4 cup butter, cubed
1/2 teaspoon salt

Steps:

  • Cut sweet potatoes and apples into 1/4-in. slices. Layer in a greased 13-in. x 9-in. baking dish. In a saucepan, bring syrup, cider, butter and salt to a boil. Pour over potatoes and apples. Cover and bake at 350° for 1 hour. Uncover and bake 10-15 minutes more or until tender.

3 pounds orange-fleshed sweeet potatoes (about 3 very large) peeled, cut crosswise into 1/4" thick rounds
1 3/4 pounds tart green apples, peeled, halved, cored and cut into 1/4: thick slices
3/4 cup pure maple syrup
1/4 cup apple cider
1/4 cup (1/2 stick) unsalted butter, cut into pieces.
1/2 t. salt

Steps:

  • Preheat oven to 375º F. In 13x9x2" glass making dish, alternate potato and apple slices in rows, packing tightly. Combine remaining ingredients in heavy medium saucepan and bring to boil over high heat. Pour hot syrup over potatoes and apples. Cover dish tightly with foil and bake 1 hour. Uncover casserole. (Can be prepared 3 hours ahead. Let stand at room temperature, basting occasionally with pan juices.) Reduce temperature to 350º F. Bake until potatoes and apples are very tender and syrup is reduced to thick glaze, basting occasionally about 45 minutes. Let stand 10 minutes.

1 1/4 lbs parsnips
1 1/4 lbs sweet potatoes
2 tablespoons olive oil
2 tablespoons maple syrup
1 tablespoon Dijon mustard
salt and pepper

Steps:

  • Preheat oven to 450.
  • Prepare parsnips: Trim tops and bottoms; peel, and slice in half crosswise to separate thick and thin parts. Halve or quarter thick parts lengthwise, until all parsnip pieces are roughly the same size. (In other words, slice 'em into matchsticks.).
  • Prepare sweet potatoes: Trim ends, then quarter lengthwise and cut diagonally into 1/2" pieces.
  • On a large rimmed baking sheet, toss parsnips and sweet potatoes with oil; season generously with salt and pepper. Spread in a single layer.
  • Roast until tender and golden, about 30 minutes. (Toss once or twice while roasting.) When done, transfer to a large bowl.
  • In a small bowl, stir together maple syrup and mustard. Pour over parsnips and sweet potatoes, and stir to coat. Serve immediately.

2 1/2 sweet potatoes
3 tablespoons butter
1/4 cup maple syrup
2 tablespoons brown sugar
2 tablespoons flaked coconut (optional)
1/3 cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan with water to cover them. Bring the water to a boil, reduce heat, cover and let simmer 25 to 30 minutes until tender. Preheat oven to 350 degrees F (175 degrees C). Use non-aerosol non stick spray to grease a 8x8 inch baking pan. When the sweet potatoes are cool, peel and cut them into large chunks. Arrange them in the prepared dish. In a small saucepan, melt butter, syrup, sugar and coconut together over a low heat. Cook for 3 to 5 minutes, stirring constantly. Sprinkle mixture over sweet potatoes. Top mixture with pecans. Bake 5 to 7 minutes, until top is lightly browned.
