Took my roasted carrot recipe to a new level. By combining with my potato and brussel sprouts makes a great starch veggie side dish for your holiday ham or turkey, or for vegeterians a great one dish casserole.

3/4 lb each carrots/potatos/brussel sprouts
3 Tbsp melted butter
1/4 c maple syrup
s&p

Steps:

  • 1. Preheat oven 375 Cut brussel sprouts in half, small potatos cut in half, and carrots about inch or can use small baby carrots. Rinse and place all in mixing bowl. combine melted butter and maple syrup and toss around with salt and pepper.
  • 2. Place on sheet pan and bake til tender, approx 35 min

24 whole chestnuts, peeled
2 cups chicken broth (preferably homemade)
6 slices bacon, cut into small dice
1.5 lbs Brussel sprouts, trimmed and cut with an X on the bottom

Steps:

  • 1. Steam the Brussel sprouts in a vegetable steamer over boiling water just until crisp-tender, 6-8 minutes. Drain and set aside to cool slightly. 2. Place chestnuts and chicken broth in a small saucepan and simmer over medium heat until chestnuts are tender, about 25 minutes. 3. In the meantime, saute the bacon in a medium-sized skillet until crisp. Remove and drain on paper towels. Pour off all but 2 T of the fat remaining in the skillet. 4. Cut the Brussel sprouts lengthwise in half and place in the skillet. Add the chestnuts to the skillet along with 3 T cooking broth, then stir in the maple syrup. Heat over medium high heat, stirring frequently, until the liquid is reduced to a glaze, about 5 minutes. Add the cooked bacon and season with salt and pepper. Serve at once.

1 1/2 lb brussel sprouts
1/4 c finely minced shallots
1/4 c maple syrup
1 T dijon
1 T tamari
1 T arrowroot powder
Finely diced red bell pepper
chopped walnuts or pecans

Steps:

  • Bring sauce pan of water to boil. Cut the stems off the sprouts and discard, then cut the sprouts in half. Cook for 2 minutes;drain. Rinse well with cold water. In heavy nonstick pan state the shallots 2-3 minutes. Add the boiled sprouts and sauté for 4 more minutes. Whisk together the syrup, dijon,tamari, and arrowroot powder in small bowl. Pour the mixture over the sprouts and cook for 2 minutes til sauce thickens. Garnish with pepper or nuts if desired.
