Baked oatmeal is a great way to prep a delicious breakfast for the week, or a warm breakfast for the family to enjoy. This recipe is a great twist on my overnight oats recipe, especially if you prefer eating your oatmeal warm. Old fashioned oats are mixed with mashed banana, maple syrup, unsweetened applesauce, milk, and spices and baked to perfection. Split into four generous servings, this baked oatmeal keeps great in the fridge and is easy to reheat.

2 bananas (overripe)
1/4 cup unsweetened applesauce
2 tbsp maple syrup
1 1/4 tsp cinnamon (divided)
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp kosher salt
1 cup cashew milk (unsweetened, or almond milk or skim)
1.5 cups old fashioned oats
1 tsp sugar

Steps:

  • Preheat the oven to 375F.
  • Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
  • Add the overripe bananas to the bottom of a mixing bowl, and mash them with a fork.
  • Add the applesauce, maple syrup, 1 tsp cinnamon, baking powder, salt, and vanilla extract, and stir to combine.
  • Add the milk. Whisk together.
  • Add the oats. Fold in.
  • Pour the mixture evenly into the baking dish.
  • In a small bowl, combine the remaining 1/4 tsp cinnamon with the 1 tsp sugar. Sprinkle this mixture evenly on top of the oats.
  • Bake at 375 for 35 minutes.

5 tablespoons melted butter cooled
1/2 cup maple syrup
1 1/2 cups whole milk
2 large eggs
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1 1/4 teaspoons cinnamon
1/4 teaspoon salt
3 cups quick-cooking oats

Steps:

  • Heat oven to 350 degrees. Butter a 9X9 inch baking pan and set aside.
  • To a large mixing bowl, add cool melted butter and maple syrup. Whisk together until smooth. Pour in milk and add eggs. Whisk together. Add in baking powder, cinnamon, and vanilla. Mix until well blended.
  • Add in oats and mix well. Let the mixture sit for 5 minutes to allow oats to absorb liquid. Pour into prepared dish and bake for 30-35 minutes until center is set and oatmeal is slightly golden on top.
  • Remove from oven and let cool for 3-5 minutes. Scoop baked oatmeal into a bowl or plate, top with milk or maple syrup and fresh fruit.

CINNAMON, MAPLE AND PECAN OVERNIGHT OATS

All ingredients that were made for each other! This is a simple, fall oatmeal which has grated apple folded in for a boost of sweetness and texture.

2/3 cup old fashioned oats
2/3 cup milk, of choice (cow's, almond, soy, rice...)
1 teaspoon ground cinnamon
2 tablespoons maple syrup
1/4 teaspoon maple extract (optional)
1 apple, grated
1/2 cup pecans

Steps:

  • In a medium bowl, mix the oats, milk, cinnamon, maple syrup, maple extract and grated apple.
  • Divide between two bowls or mason jars and store in the fridge overnight.
  • In the morning top with the pecans and serve.
