1 cup old-fashioned oats
1/2 cup chopped walnuts
1/4 cup sweetened shredded coconut
1/4 cup maple syrup
1 tablespoon light corn syrup
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • In a greased 13-in. x 9-in. baking pan, combine the oats, walnuts and coconut; set aside. , In a small saucepan over medium heat, combine syrups and cinnamon; bring to a boil. Cook and stir for 1 minute. Remove from the heat; stir in vanilla. Pour over oat mixture and toss to coat., Bake at 275° for 30-40 minutes or until golden brown, stirring every 10 minutes. Cool, stirring occasionally. Store in an airtight container.

¼ cup flaked coconut
¼ cup pure maple syrup
1 tablespoon honey
1 tablespoon maple sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Grease a 13x9-inch baking dish.
  • Mix oats and coconut in the prepared baking dish.
  • Stir maple syrup, honey, maple sugar, and cinnamon together in a small saucepan over medium heat; bring to a boil. Cook at a boil, stirring constantly, for 1 minute. Remove saucepan from heat and stir vanilla into maple syrup mixture; pour over oats and coconut and stir to coat.
  • Bake in preheated oven, stirring every 10 minutes, until golden brown, 30 to 40 minutes.
  • Cool completely, stirring regularly, before storing in an airtight container.

4 cups rolled oats
1 to 1 1/2 cups nuts, coarsely chopped if necessary
1 cup seeds (sesame, flax, millet, chia, hemp, pumpkin, sunflower, or any combination)
1/2-2/3 cup brown sugar
1/2 cup extra virgin olive oil
1/2 cup real maple syrup or honey
1 T vanilla
1 t cinnamon (optional)
1 t salt (optional)

Steps:

  • Preheat oven to 325. Put parchment paper or foil on large rimmed baking sheet (15x17). Mix together oats, nuts, and seeds. Whisk together remaining ingredients and pour over oat mixture. Pour into prepared pan and pat down evenly and very firmly. Bake 35 minutes or so, until golden. Remove from oven and press down again while warm. Let cool then break into chunks. Millet - gives crunch and contains protein and iron. Chia - great source of Omega 3 and calcium. Hemp - great source of Omega 3 and complete protein.

10 cups rolled oats, not instant
1 cup raw hulled sunflower seeds
1/2 cup unsweetened flaked coconut
1 1/2 teaspoons ground cinnamon
3 tablespoons water
1/2 teaspoon salt
1 cup maple syrup
1/3 cup vegetable oil
1 teaspoon vanilla extract
2 cups raisins
2 cups roasted nuts

Steps:

  • Pre-heat the oven to 300* and lightly oil two jelly-roll pans.
  • Combine first 4 ingredients and set aside.
  • Boil water and dissolve the salt.
  • Add the syrup and the oil and simmer.
  • Remove from heat and whisk in the vanilla.
  • Pour over the oats, sunflower seeds, coconut and cinnamon and toss.
  • Bake 45 minutes, stirring at least three times.
  • Cool and add raisins and toasted nuts.
