Candied Sweet Potatoes with Maple Syrup image

I created these candied sweet potatoes with maple syrup to entice my young children to eat sweet potatoes. They didn't like them plain and none of us liked recipes using marshmallows, pineapple, etc. This slightly-sweet version fit the bill. The kids are grown-up now, but still request this be served every Thanksgiving.

2 ½ pounds sweet potatoes, peeled and cubed
butter-flavored nonstick cooking spray
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground allspice
¼ cup pure maple syrup
3 tablespoons salted butter, melted

Steps:

  • Bring a pot of water to a boil; add sweet potatoes. Continue to boil until they are easily pierced with a knife, 15 to 20 minutes. Drain.
  • While potatoes boil, preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray.
  • Mash the potatoes thoroughly in a bowl. Mix cinnamon, salt, pepper, nutmeg, and allspice together and stir into the potatoes. Transfer to the prepared baking pan. Mix maple syrup and butter together and drizzle over top.
  • Bake in the preheated oven until heated through, 5 to 10 minutes.

Here's a simple way prepare a favorite Thanksgiving side. Just bake the potatoes, peel and slice, then drench them in a butter-cider-maple syrup mixture that's been seasoned with cinnamon, cloves and orange zest. Bake until bubbly and the edges brown.

5 large sweet potatoes (3 1/2 pounds)
1/3 cup maple syrup
1/3 cup apple cider
3 tablespoons butter
1 cinnamon stick
2 whole cloves
1 teaspoon finely grated orange zest

Steps:

  • To cook the sweet potatoes, wash them and prick all over with a fork. Wrap in foil and bake in a 375-degree oven until very tender. This can take anywhere from 50 minutes to 1 1/2 hours, depending upon the girth of the potato. Thinner ones cook more quickly. Cool. Peel just before using.
  • Heat oven to 400 degrees.
  • In a small pot, combine syrup, cider, butter, cinnamon, cloves and orange zest. Bring to a boil, then reduce heat and simmer until somewhat thickened, about 15 minutes. Pour syrup over sliced sweet potatoes and bake, uncovered, until bubbling and brown, 25 to 40 minutes.

This is my Aunt Ginnys recipe for candied yams. It was always a hit during the holidays

6 large yams, quartered or a lg can of yams
1 stick real butter
1 bottle pure maple syrup (the real deal)

Steps:

  • 1. If using fresh yams, peel quarter and pre cook in pot of water.
  • 2. Melt butter into frying pan.
  • 3. Place yam pieces in butter and allow to simmer for 5 to 10 minutes.
  • 4. Turn heat to low medium, enough to allow bubbling. Pour maple syrup over yams and cook for approximately another 10 minutes or more until you have a good coating on yams.
  • 5. Pour syrup and yams in serving dish and serve with entree of choice. Enjoy!

  • Place the sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cook for 30-45 minutes or until potatoes can be easily pierced with the tip of a sharp knife. , When cool enough to handle, peel potatoes and cut into wedges. Place in an ungreased 15x10x1-in. baking pan. Combine the brown sugar, cinnamon and nutmeg; sprinkle over potatoes. Sweet enough for dessert but savory enough for a side, candied yams are a quintessential Southern staple for Sunday dinner, get-togethers or holidays. Many supermarkets use the terms "sweet potatoes" and "yams" interchangeably. For this recipe, any orange-fleshed varieties like Jewel or Garnet will do. Whatever you use, this dish will definitely round out anything savory on your plate, on Thanksgiving and beyond.

6 medium yams (3 to 5 pounds)
1/2 cup salted butter (1 stick)
1/2 cup granulated sugar
1/2 packed cup dark or light brown sugar
1/4 cup maple syrup
1 large orange, zested
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon kosher salt
1 tablespoon vanilla extract (not imitation)

Steps:

  • Heat oven to 400 degrees. Wash and peel the yams, then cut into 1/2-inch pieces. Transfer the yams to a 9-by-13-inch baking dish.
  • In a medium pot over medium heat, cook the butter until it starts to bubble, about 2 minutes.
  • Once the butter is melted, add both sugars along with the maple syrup, orange zest, cinnamon, nutmeg and salt. Turn off the heat and remove the pot from burner. Stir to combine, then add the vanilla extract. Pour the sugar-butter mixture over the yams, and toss to coat.
  • Cover baking dish with aluminum foil and bake for 30 minutes. Remove from the oven, and using a spoon, baste the yams with the sugar-butter mixture collecting at the bottom of the baking dish. Cover again and bake for another 15 to 20 minutes until tender. If desired, remove the foil and bake uncovered for another 10 minutes to thicken the syrup. Remove the yams from the oven and serve hot.

2 pounds garnet yams or sweet potatoes
3 (2-inch) strips orange zest, white, spongy pith removed
2 cinnamon sticks, broken in half
1/2 cup freshly squeezed orange juice
1/3 cup pure maple syrup
2 tablespoons pure olive oil, light sesame oil, or unsalted butter
1 tablespoon freshly squeezed lemon juice
2 teaspoons peeled and finely chopped ginger root
1/2 teaspoon coarse sea salt

Steps:

  • Preheat the oven to 375°F.
  • Peel and halve the yams crosswise. Cut each half lengthwise into 4 wedges.
  • Place the yams in a baking dish that will hold them in a snug single layer.
  • Tuck the orange zest and cinnamon sticks among the yams.
  • In a bowl, whisk together the orange juice, maple syrup, oil, lemon juice, ginger, and salt. (Note: if you're using butter, omit it in this step, but dot the assembled casserole with small pieces of it before it goes into the oven.) Pour the mixture over the yams.
  • Bake for 1 1/4 hours, basting every 15 minutes, until the yams are tender and glazed and the pan juices are syrupy.
  • Remove the orange zest and cinnamon sticks before serving.

Sure, everyone knows orange-fleshed sweet potatoes aren't really yams, but it makes for a shorter name. I'm not a huge sweet side dish person, but I make an exception for these candied yams that use lemon instead of orange juice as a sweetener.

3 tablespoons kosher salt
2 quarts cold water
3 pounds orange-fleshed sweet potatoes, peeled and cut into 2-inch pieces
1 cup brown sugar
4 tablespoons unsalted butter
½ cup freshly squeezed lemon juice
¼ cup maple syrup
½ teaspoon ground ginger
¼ teaspoon ground cinnamon
1 pinch cayenne pepper
Salt to taste
Chopped pistachios, pecans, or walnuts for garnish

Steps:

  • Stir salt into 2 quarts cold water in a large pot. Transfer sweet potato pieces to pot and place over high heat; bring to a simmer. Reduce heat to medium-low and simmer until potatoes are not quite tender but still cooked, 5 to 7 minutes. Use the tip of a knife to test for doneness. Drain.
  • Place brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne, and pinch of salt in a skillet. Place over medium-high heat, stirring until glaze ingredients melt and start bubbling. Continue cooking, stirring occasionally, until mixture begins to thicken up, 4 to 6 minutes.
  • Transfer drained sweet potatoes to skillet. Raise heat to high and cook and stir until potatoes are coated with glaze and very tender, and glaze has thickened, 5 to 8 minutes. Transfer to serving dish; garnish with chopped nuts.

4 pounds yams (red-skinned sweet potatoes), peeled, cut into 1/4-inch-thick rounds
1/2 cup pure maple syrup
8 tablespoons (1 stick) chilled butter, cut into 1/2-inch pieces
1/3 cup all purpose flour
1/3 cup (packed) golden brown sugar
1/2 cup coarsely chopped pecans

Steps:

  • Preheat oven to 400°F. Butter 13 x 9 x 2-inch glass baking dish. Bring large pot of salted water to boil. Add yams. Cook until water returns to simmer, about 4 minutes. Drain. Rinse under cold water.
  • Arrange yams in prepared dish, overlapping slightly. Season with salt. Pour syrup over yams. Dot with 3 tablespoons butter. Cover and bake until yams are almost tender, about 25 minutes.
  • Mix flour and brown sugar in medium bowl. Add remaining 5 tablespoons butter. Rub in with fingers until mixture resembles coarse meal. Mix in pecans.
  • Sprinkle pecan mixture atop yams. Bake yams until tender, about 20 minutes. (Can be made 2 hours ahead. Cool. Cover and let stand at room temperature. Rewarm, uncovered, in 375°F oven 20 minutes.)
