BAKED PORK CHOPS WITH APPLES & SPICED MAPLE SAUCE

When I saw the ingredients I knew right away I had to try an apple and pork combination. So I tested out my recipe and got the approval of my family and so I decided to enter. This is a very simple recipe that cooks quickly. It is great with stuffing and a green veggie of your choice.

Number Of Ingredients 16

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1/4 teaspoon paprika
4 boneless pork loin chops (1-inch thick)
5 cups apples (cored and sliced, peel on if preferred)
1 cup red onion (sliced)
1/2 cup chicken broth
1/2 cup maple syrup
2 tablespoons lemon juice (fresh squeezed)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/8 teaspoon clove
1 tablespoon brown sugar

Steps:

  • Mix all ingredients in spice rub together and sprinkle over chops top and bottom.
  • Preheat oven to 350 degrees Fahrenheit.
  • Spray an oven proof, non-stick skillet with lid with cooking spray.
  • Brown chops 3 minutes per side on medium high heat, uncovered. Remove from skillet and set aside.
  • Add apples and onions to skillet and cook for 2 to 3 minutes or until they start to brown.
  • Place chops over apple/onion mixture.
  • Pour in chicken broth, cover and cook about 20 minutes. The pork chops should reach 150 degrees Fahrenheit.
  • Take the chops out of the oven and let stand for 10 minutes to completely cook the chops and not dry them out.
  • After taking chops out of oven combine spiced maple sauce ingredients in a small sauce pan.
  • Bring to a boil, stirring constantly, until mixture reduces to desired consistency. We like ours thin, so we only cooked about two minutes.
  • Pour sauce over chops and apples. Enjoy.

1/3 cup pure maple syrup
1/3 cup Dijon mustard
2 tablespoons molasses
2 tablespoons cider vinegar
1 teaspoon ground cumin
salt and pepper, to taste
4 (8 ounce) center-cut pork chops, 1 inch thick

Steps:

  • Combine all the marinade ingredients in a bowl; add the chops and set aside for 30 minutes to marinate, turning twice.
  • (Or refrigerate for 1-2 hours, turning 3 times.) Preheat oven to 350*F.
  • Place the chops in a shallow roasting pan to fit; bake for 30 minutes, brushing occasionally with remaining marinade, turning once (or until the juices run clear).
  • Do not overbake or the chops will be tough.
  • Serve hot.

4 1" thick smoked pork chops (about 2 lbs total)
1 large Rome apple, cut into 8 pieces and cored
1/4 cup raisins
1 tbsp butter or margarine
2 onions, sliced
1 tsp chopped fresh thyme
1/4 tsp pepper
1/2 cup chicken broth
2 tbsp maple syrup
1 tbsp all-purpose flour

Steps:

  • Heat oven to 400. Brown chops in large nonstick skillet over medium-high heat (8-10 minutes). Remove and place in 13 x 9 baking dish. Add apple pieces and raisins. Add butter, onions, thyme, and pepper to skillet and cook until onions are browned and tender (15 minutes). Transfer to baking dish. Combine chicken broth, syrup, and flour. Add to baking dish. Bake 30 minutes, until sauce is bubbling.
