BAKED ACORN SQUASH WITH WALNUT OIL AND MAPLE SYRUP

Baked Acorn Squash With Walnut Oil and Maple Syrup image

Acorn squash has a mild flavor and goes well with sweet and nutty seasonings. This makes a nice Thanksgiving side dish, though you might want to cut the baked halves in half again for smaller portions.

Time 1h

Yield Makes four large servings or eight medium servings

Number Of Ingredients 5

2 acorn squash
2 tablespoons maple syrup
2 tablespoons walnut oil
Freshly ground nutmeg
Ground walnuts

Steps:

  • Preheat the oven to 350 degrees. Place the squash on a baking sheet and bake for 20 minutes, until soft enough to easily cut in half. Cut in half, and scoop out the seeds and membranes.
  • Cover a baking sheet with foil. Stir the maple syrup and walnut oil together in a bowl, then brush over the cut surfaces of the squash. Sprinkle with a very small amount of ground nutmeg. Place in the oven and bake 1 hour, brushing every 10 minutes with more oil and maple syrup. Remove from the heat. Serve hot or warm.

ACORN SQUASH BAKED IN BUTTER AND MAPLE SYRUP

Acorn Squash Baked in Butter and Maple Syrup image

We love acorn squash and this is a fantastic way to prepare it. Once baked, the acorn squash is tender and tastes similar to a sweet potato casserole. Dip bites of squash into the sweet and buttery sauce. Yum!

MAPLE BAKED ACORN SQUASH

Number Of Ingredients 4

1 medium acorn squash
2 teaspoons sesame oil
2 tablespoons maple syrup
pinch cinnamon

Steps:

  • 1. Preheat the oven to 350°F. 2. Cut the squash in half, then remove and discard the seeds. 3. Brush the inside of each half with oil and place cut-side up on a baking sheet. Spoon 1 tablespoon of the maple syrup into each half and then sprinkle with cinnamon. 4. Bake for 45 to 60 minutes, or until the squash is easily pierced with a fork. Serve hot. HELPFUL TIP The easiest, most basic way to cook any type of winter squash, such as acorn, Hubbard, butternut, turban, and spaghetti, is to bake it whole or halved and unpeeled. Simply poke a few holes in the squash with a sharp knife (to allow steam to escape as it bakes), place it on an unoiled baking sheet, and bake about an hour or until tender. The squash is cooked when you can easily pierce it with a fork. Some larger varieties like Hubbards can take over two hours to cook.
