  • Whisk 3 tablespoons rice vinegar, 1 tablespoon each white miso, honey, toasted sesame oil and vegetable oil and 1 teaspoon soy sauce in a large bowl. Add 4 cups shredded red cabbage, 1 grated carrot, 1/2 grated small peeled celery root and 1 sliced scallion. Toss; season with salt and pepper.

1 PC World of Flavours Canadian pork loin fillet roast (about 2 lb/900 g)
1 clove garlic, finely grated or pressed
2 tbsp (25 mL) white miso paste
2 tbsp (25 mL) cider vinegar
1 tbsp (15 mL) pure maple syrup
1/2 tsp (2 mL) Dijon mustard
1/4 tsp (1 mL) black pepper
1/4 cup (50 mL) canola oil
5 green onions, thinly sliced
3 carrots, grated
2 stalks celery, thinly sliced
1 Granny Smith apple, cored and cut into matchsticks
1 Gala apple, cored and cut into matchsticks
2 cups (500 mL) shredded red cabbage
2 cups (500 mL) shredded Napa cabbage
1 Chopped fresh chives (optional)

Steps:

  • Preheat one barbecue burner to medium heat and leave other burner off. Brush grill with oil. Grill pork 8 minutes, turning once. Transfer pork to cool side. Grill, lid down, and adjust hot burner if necessary to maintain temperature of 375°F (190°C) for 30 to 40 minutes or until cooked through. Transfer to cutting board; cover loosely with foil. Let stand 10 minutes. Cut into ¼-inch (5 mm) thick slices.
  • Meanwhile, whisk together garlic, miso paste, vinegar, maple syrup, mustard and pepper in large bowl. Gradually whisk in oil. Add green onions, carrots, celery, apples and cabbage; toss to coat.
  • Servepork with cabbage mixture. Sprinkle with chives (if using).
  • Chef's tip: No barbecue? Roast the pork on a greased foil-lined baking sheet in 375°F (190°C) oven until cooked through, 50 to 60 minutes.

6 bone-in center-cut pork loin chops (7 ounces each)
1 tablespoon olive oil
3 medium apples, peeled and sliced
1 cup water
1/2 cup maple syrup
1/4 cup apple butter
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic salt with parsley
1/4 teaspoon pepper

Steps:

  • Pat pork chops dry with a paper towel. In a large skillet, heat oil over medium-high heat. Quickly cook chops until browned, 1-2 minutes per side; remove from pan. Place chops and apples in a 5-qt. slow cooker., In a small bowl, combine the remaining ingredients; pour sauce mixture over the chops and apples. Cover and cook on low until meat is tender, 3-4 hours.

STICKY MAPLE PORK WITH APPLES

Pork fillet makes a quick supper and is quite low in fat. Try this dish with crispy onion rice on the side

600g pork fillet
1 tbsp olive oil
2 eating apples , cored and cut into eighths
1 garlic , crushed
2 tbsp maple syrup
1 tbsp white or red wine vinegar
2 tbsp wholegrain mustard

Steps:

  • Cut the pork into 3cm thick slices. Heat the oil in a large, non-stick frying pan, add the pork, then fry on both sides until lightly browned, about 5 mins in total. Lift out of pan and set aside. Add apples to the pan, then cook for 3-4 mins until starting to soften.
  • Stir in the garlic, maple syrup, vinegar and 3 tbsp water, bring to the boil, then return the meat to the pan along with any juices. Simmer for a few more mins, stirring until the pork is cooked through and the sauce is thick and sticky. Stir in the wholegrain mustard, then serve with plain or Crispy onion rice (recipe below).
