APPLE WALNUT BLONDIES WITH MAPLE BUTTER GLAZE
Full of flavor, these are the perfect blondies for fall. They have just the right gooey texture and are jam-packed full of apples and almost have a caramel flavor. Drizzled on top, the maple glaze complements all the flavors. Yum!

Steps:
- Preheat oven to 350*.
- In a large bowl mix and cream together the sugars and the shortening. If you don't have butter-flavored shortening, you can add butter-flavored extract. I recommend Crisco.
- Add eggs one at a time; mixing well after each egg.
- Add baking powder, salt, vanilla, and cinnamon.
- Add flour a little at a time mixing well. Batter will be really thick, kinda like dough.
- Fold in apples and walnuts.
- Spread into greased 9x13 baking dish.
- Bake for approx. 25-30 mins until golden on top and it no longer looks wet.
- While blondies are baking, mix up the glaze. It should have the consistency of pancake batter.
- After blondies are done baking remove them from the oven, wait about 5 minutes then drizzle glaze over the blondies. Let cool for about 15 mins, then cut and serve. :)
RESTAURANT-QUALITY MAPLE-APPLE BUTTER
This one is even better than the famous apple butter served at a popular French Canadian restaurant chain in Quebec. I make a huge batch using the tart apples from the tree in our yard. The sourness balances out perfectly with the maple syrup. Very freezer-friendly and great as a gift. No one will know how easy it was to make! Serve with toast or baguette.

- Place apple slices in a big pot with maple syrup. Bring to a boil and simmer until apples are very tender, about 45 minutes. Mixture will be thick which is what is required to achieve a rich texture as the final result. Remove from heat.
- While apples are still hot, add them to a blender with cubes of cold butter, working in small batches so blender is only 1/3 full at a time (for safety reasons so hot mixture won't splatter everywhere). Blend until smooth. Transfer to a bowl and mix until smooth.

- Place a rack in middle of oven and preheat to 375°. Place butter in a small saucepan and scrape in vanilla seeds; add pod. Cook over medium heat, stirring often, until butter foams, then browns (be careful not to burn), 5-8 minutes. Remove pan from heat and remove pod.
- Roll out dough on a lightly floured surface into a rough 14x10" rectangle about 1/8" thick (alternatively, roll out into a 12" round). Transfer to a parchment-lined baking sheet. Arrange apples on top, overlapping and leaving a 1 1/2" border. Brush apples with brown butter and sprinkle with muscovado sugar. Lift edges of dough over apples, tucking and overlapping as needed to keep rectangular shape.
