1 mango - peeled, seeded and diced
1 avocado - peeled, pitted, and diced
4 medium tomatoes, diced
1 jalapeno pepper, seeded and minced
½ cup chopped fresh cilantro
3 cloves garlic, minced
1 teaspoon salt
2 tablespoons fresh lime juice
¼ cup chopped red onion
3 tablespoons olive oil

Steps:

  • In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. To blend the flavors, refrigerate for about 30 minutes before serving.

1/2 red onion, peeled and cut into 1/4-inch dice
2 ripe mangoes, peeled, pitted, and cut into 1/4-inch dice
2 ripe tomatoes, cut into 1/2-inch dice
1 jalapeno pepper, seeds and ribs removed, minced
2 1/2 tablespoons freshly squeezed lemon juice
2 tablespoons freshly squeezed lime juice
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1/2 cup fresh cilantro leaves, loosely packed, coarsely chopped

Steps:

  • Combine onion, mangoes, tomatoes, jalapeno, lemon juice, lime juice, salt, and pepper in a small bowl; toss to coat evenly, and let stand at least 2 to 3 hours. Stir in cilantro just before serving.

Grilled Fish Tacos with Mango and Tomato Salsa image

1 cup cherry tomatoes, halved
1/4 cup packed fresh cilantro, chopped
2 tablespoons chopped fresh chives
1 ripe mango, peeled, pitted and diced
Juice from 1 lime
Kosher salt
1 1/2 pounds white-meat fish, such as mahi mahi or tilapia, cut into 4 pieces
1 tablespoon honey
2 teaspoons smoked paprika
1 to 2 teaspoons chipotle chile powder or chili powder, depending on your taste
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
Olive oil, for rubbing
6 to 8 corn or flour tortillas, warmed
1 ripe but firm avocado, peeled, pitted and diced
1/2 cup crumbled Cotija cheese
Shredded cabbage, fresh cilantro and lime wedges, for serving

Steps:

  • For the mango and tomato salsa: In a bowl, combine the tomatoes, cilantro, chives, mango, lime juice and salt to taste. Adjust spiciness as desired.
  • For the tacos: Place a large cast-iron skillet or grill pan over high heat, or preheat a grill for cooking over high heat.
  • Place the fish on a plate and drizzle with the honey. Sprinkle with the paprika, chili powder, garlic powder and some salt and pepper. Rub the fish with olive oil to coat.
  • Once the skillet is hot, add the fish and cook to your desired doneness, around 4 minutes per side. Remove from the heat and let cool for 1 to 2 minutes. Using a fork, flake the fish into pieces.
  • To assemble your tacos, add the fish to the warmed tortillas and top with the salsa, avocado and Cotija cheese. Garnish with shredded cabbage and fresh cilantro and serve with the lime wedges. EAT!

For the Sweet Cabbage
3 cups shredded cabbage
3 tbsp seasoned rice vinegar
1 tsp sugar
sea salt
For the Fish Tacos and Salsa
1 1/4 lb cod filet
1/4 tsp chile powder
1/4 tsp smoked paprika
1 large tomato, such as beefsteak, chopped
1/2 green bell pepper, chopped
2 serrano chiles, stemmed, seeded, and finely chopped
1 ripe mango, peeled and chopped
1/4 cup chopped cilantro
1 tbsp fresh lime juice
sea salt
freshly ground black pepper
olive oil, for brushing
8 warm, 6-inch corn or flour tortillas

Steps:

  • For the Sweet Cabbage Place the cabbage in a large bowl. Whisk the vinegar and sugar together in a small bowl. Stir well to dissolve the sugar. Season with salt. Pour the vinegar mixture over the cabbage and toss well to combine. Cover and refrigerate at least 30 minutes. For the Fish Tacos and Salsa Sprinkle the cod on both sides with chile powder and smoked paprika. Set aside while you prepare the salsa. Combine the tomato and next 5 ingredients (through lime juice) in a medium bowl. Season with salt and pepper. Heat a grill pan over medium-high heat and brush with olive oil. Season the fish with salt and pepper and grill until seared on the outside and just cooked through, 2-3 minutes per side, depending on thickness. Use a plastic spatula to gently break up the fish into small pieces while it's still in the pan. Place it in a serving bowl and serve with salsa and cabbage, letting your guests fill their own tortillas

CHARRED TOMATO, CHIPOTLE, AND MANGO SALSA



Charred Tomato, Chipotle, and Mango Salsa image

2/3 pound plum tomatoes (about 3 medium)
1 to 2 canned chipotle chiles in adobo
1/4 cup fresh lime juice
1 tablespoon honey, or to taste
1 ripe mango

Steps:

  • Preheat broiler.
  • Quarter tomatoes and transfer to a shallow baking pan. Broil tomatoes 4 to 5 inches from heat until slightly charred, about 15 minutes. Wearing rubber gloves, seed chipotles. In a blender or food processor puree tomatoes, chipotles, lime juice, and honey until smooth.
  • Peel mango and finely chop. In a bowl stir together tomato mixture and mango and season with salt. Salsa may be made 1 day ahead and chilled, covered.

No chopping, dicing, or mincing here! My family has been making this easy and fresh salsa for years. Both my father and I have won salsa contests with this recipe as the base and have tweaked it with the optional seasonings listed. You can also control the heat by seeding the peppers or omitting the serrano, but we prefer the heat and flavor of both peppers. I usually add a pinch of sugar which intensifies the flavor of the peppers but my father doesn't. A fantastic basic recipe to play with... so easy, you'll never buy jarred salsa again!

1 cup fresh cilantro (handful of leaves)
1/4 large sweet onion
1 jalapeno pepper, fresh, stem removed
1 serrano pepper, fresh, stem removed (optional, will bring the HEAT!)
4 garlic cloves, fresh
1 teaspoon sea salt (or to taste)
1 tablespoon fresh lime juice
1 (28 ounce) can whole canned tomatoes, drained
liquid smoke
cumin
chili powder
black pepper
sugar

  • Add ingredients, in the order listed, to your blender. (You must add the tomatoes last so that the smaller ingredients are chopped properly.).
  • Pulse to desired consistency.
  • Mango Salsa - Substitute fresh ripe mango for the tomato and red onion for the sweet onion. I serve this with Puerco Pibil, Jerk Chicken and Carribean Black Beans. I don't use the optional seasonings for mango salsa and sometimes add orange juice with the lime juice.
