4 mangos - peeled, seeded, and cubed
1 cup simple syrup
3 tablespoons fresh lime juice

Steps:

  • Place cubed mango in a food processor, and puree. Pour in simple syrup and lime juice, and puree until smooth.
  • Place in an ice cream maker. Freeze thoroughly.

ALL-FRUIT MANGO SORBET



All-Fruit Mango Sorbet image

Mango, mango, mango! This super easy, low-fat frozen treat is 100 percent ripe mango (with just a little bit of water to help with blending). Use really ripe fruit, which is naturally sweeter. Add a drizzle of honey if your sweet tooth needs a little something extra (though it will also add a few extra calories).

2 very ripe mangoes (2 to 2 1/2 pounds total)
2 tablespoons unsweetened coconut flakes
1 small lime, quartered
Honey for drizzling, optional

Steps:

  • Peel the mangoes, cut the flesh from around the pit and cut into approximately 1/2-inch chunks (you should have about 4 cups). Arrange the chunks in a single layer on a baking sheet, and loosely cover with plastic wrap. Freeze the mango until hard, at least 4 hours up to overnight.
  • Meanwhile, preheat the oven to 350 degrees F. Spread the coconut out on a rimmed baking sheet, and bake until lightly golden and toasted, about 4 minutes, tossing about halfway through.
  • Once the mango is completely frozen, transfer it to a food processor. Add 1/4 to 1/2 cup hot water, and process the mango until completely smooth; turn the food processor off and stir with a wooden spoon or spatula as needed. The finished texture should be like creamy sorbet (a few small chunks of mango are fine). Scoop the sorbet into 4 serving glasses or bowls, squeeze a quarter of a lime over each, drizzle with honey if using and sprinkle with toasted coconut.

1 pound ripe mangoes (about 3 medium)
2 cups half-and-half
1/2 cup sugar
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt

Steps:

  • Peel the mangoes, cut up the flesh in large chunks and set aside. Heat the half-and-half with the sugar in a small saucepan over medium heat and cook, stirring once in a while, until the sugar is dissolved. Add the vanilla, set aside and cool.
  • Once the half-and-half has cooled, put in a blender with the mango and salt and blend until smooth. Strain and process in your ice cream machine following the manufacturer's instructions.

9 ounces navel oranges
1 1/2 lbs mangoes, peeled
1/3 cup sugar
1/2 cup plain nonfat yogurt
1 teaspoon orange-flavored liqueur

Steps:

  • Fruit can be frozen and wrapped in plastic weeks in advance.
  • Using a zester, remove outer orange colored peel of orange. Wrap zest in plastic and set aside. Remove remaining skin, pull into sections and set aside.
  • Peel and slice your mango if needed.
  • Line baking sheet with wax paper.
  • Place mango and orange on baking sheet. Freeze until firm.
  • Remove 15 minutes before using. Place in food processor along with peel and sugar. Process until minced.
  • Add yogurt and liqueur to minced fruit, process until light and fluffy, about 3 minutes.
  • Serve sherbet immediately or transfer it to bowl and place in freezer. Remover from freezer 20 to 30 minutes before serving time and let soften in refrigerator.

I got this idea from a recipe for "Mango Soft Serve". I made many adjustments to the original recipe to create this smooth, creamy sherbet with great mango flavor and just the right amount of sweetness. This recipe calls for coconut milk, but heavy cream could be substituted if you prefer dairy. (Note: Cook Time includes time needed for the sherbet to freeze solid.)

5 cups mangoes, peeled and sliced or 3 large mangoes
1 cup full-fat coconut milk or 1 cup heavy cream
1/2 cup mild-flavored honey

Steps:

  • Make sure your ice cream maker's freezer bowl is frozen solid (you don't want to hear even the slightest sloshing noise when shaken). Keep in the freezer until absolutely ready to pour mixture into the machine.
  • Into a 5-quart capacity food processor, using the chopping blade (or blender), place all ingredients. Puree until smooth.
  • Place mixture into the freezer tub of your ice cream maker and follow the manufacturer's instructions for freezing. It took only 15 minutes for my machine to churn and freeze.
  • With a spatula, turn sorbet into a freezer container. Freeze for 2-4 hours or until desired texture.
