Pineapple-Orange Pie with Macadamia Crust and Candied Nuts image

A pie with a crunchy macadamia-nut-and-sugar-cookie crust, a supple pineapple-orange filling, and a cloud of whipped cream dotted with candied macadamia nuts beautifully balances textures.

Number Of Ingredients 11

1 1/2 cups macadamia nuts (about 6 ounces)
27 store-bought sugar cookies (6 3/4 ounces), such as Pepperidge Farm Bordeaux
1/4 cup (1/2 stick) unsalted butter, melted
1 cup fresh pineapple juice
1/2 teaspoon finely grated orange zest, plus 1/4 cup fresh orange juice
1 1/2 cups plus 1 tablespoon sugar
3 tablespoons cornstarch
1/2 teaspoon coarse salt
1/2 teaspoon pure vanilla extract
4 cups chopped fresh pineapple
1 1/2 cups cold heavy cream

Steps:

  • Preheat oven to 375 degrees. Pulse 3/4 cup macadamia nuts in a food processor until they resemble coarse crumbs; set aside in a small bowl. Pulse cookies in a food processor until they resemble coarse crumbs. Add cookie crumbs and melted butter to nuts; stir to combine. Press mixture into a 9-inch pie plate. Bake until golden, 8 to 10 minutes. Transfer to a wire rack; let cool completely.
  • Put pineapple juice, orange zest and juice, 1/2 cup sugar, cornstarch, salt, 1/4 teaspoon vanilla, and the chopped pineapple into a medium saucepan. Simmer, stirring occasionally, over medium heat until thick and transparent, 5 to 7 minutes. Let cool 5 minutes. Pour into crust. Refrigerate 1 hour (up to overnight).
  • Heat 1 cup sugar and 1/4 cup water in a small saucepan, stirring to dissolve sugar. Cook over medium heat until thickened and golden brown, about 5 minutes. Remove from heat. Stir in remaining 3/4 cup nuts. Spread nuts onto a baking sheet lined with parchment, and let cool completely. Coarsely chop.
  • Beat cream with remaining tablespoon sugar and 1/4 teaspoon vanilla until soft peaks form. Spread whipped cream over pie, and refrigerate 30 minutes. Serve sprinkled with candied nuts.

5 ounces (approximately 1 1/4 cups) roasted macadamia nuts, ground
1/2 cup panko (Japanese-style bread crumbs)
1/4 cup sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
3 tablespoons butter, melted

Steps:

  • In a medium mixing bowl, combine the nuts, panko, sugar, flour, and salt. Add the melted butter and stir to combine.
  • Press the mixture into the bottom of a 9 or 10-inch cake, pie, or springform pan as a crust for a cheesecake or cream pie. Bake according to instructions for cheesecake or pie. If baking for a precooked pie filling, preheat the oven to 375 degrees F. Place on the center rack of the oven and bake for 20 to 25 minutes.

1/4 cup packed brown sugar
1 egg
3/4 cup coarsely chopped macadamia nuts
3/4 cup coarsely chopped candied pineapple
1/2 cup granulated sugar
1/3 cup butter or margarine, melted
3/4 cup corn syrup
1/4 cup coffee liqueur, if desired
1/4 teaspoon salt
3 eggs
Whipped cream, if desired

Steps:

  • Heat oven to 400°F. In medium bowl, mix all crust ingredients until dough forms. Press firmly and evenly in bottom and up side of ungreased 11-inch tart pan with removable bottom. Bake 10 to 12 minutes or until light brown.
  • Reduce oven temperature to 375°F. Sprinkle nuts and pineapple evenly over crust.
  • In large bowl, beat granulated sugar, butter, corn syrup, liqueur, salt and eggs with electric mixer on medium speed until smooth. Pour over nuts and pineapple. Bake about 30 minutes or until set. Serve warm or cool with whipped cream.

Nonstick vegetable oil spray
2 cups roasted macadamia nuts (about 10 ounces)
1 1/2 cups sweetened shredded coconut
1 1/4 cups shelled pistachios (about 5 ounces)
1/2 cup (packed) golden brown sugar
3 large egg whites
For lime curd
1 cup sugar
3/4 cup fresh lime juice
10 large egg yolks
1/2 cup (1 stick) chilled unsalted butter, cut into pieces
2 mangoes, peeled, pitted, sliced
1/4 cup guava jelly or red currant jelly

Steps:

  • Make crust:
  • Preheat oven to 350°F. Spray eight 4-inch-diameter tartlet pans with removable bottoms with vegetable oil spray. Combine macadamia nuts, coconut, pistachios and brown sugar in processor. Process until nuts are finely chopped. Transfer to large bowl. Beat egg whites in another large bowl until soft peaks form. Fold whites into nut mixture in 3 additions (mixture will be thick and sticky). Let mixture stand 10 minutes.
  • Using plastic wrap as aid, press about 1/3 cup nut mixture onto bottoms and up sides of each prepared pan. Place pans on baking sheet. Bake until crusts are puffed and begin to brown, about 20 minutes. Cool crusts in pans 5 minutes. Using oven mitt, gently remove pan sides; cool crusts completely on rack.
  • Make lime curd:
  • Whisk sugar, lime juice and yolks in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); whisk constantly until mixture thickens and candy thermometer registers 180°F., about 9 minutes. Remove bowl from over water. Gradually add chilled butter, whisking until melted and well blended. Press plastic wrap directly on surface of curd. Refrigerate until cold, about 3 hours. (Crusts and lime curd can be prepared 1 day ahead. Store crusts in airtight container at room temperature. Keep lime curd refrigerated.)
  • Fill each crust with 5 tablespoons lime curd. Arrange mango slices decoratively atop tartlets. Whisk guava jelly in heavy small saucepan over low heat until melted. Brush over mango slices. Chill at least 3 hours and up to 1 day.

1 1/3 cups ground gingersnaps cookies
1 3 1/2-ounce jar toasted macadamia nuts
1/4 cup packed golden brown sugar
1 1/2 tablespoons chopped crystallized ginger
2 tablespoons (1/4 stick) unsalted butter, melted
Filling
4 8-ounce packages cream cheese, room temperature
1 1/2 cups sugar
1 tablespoon minced lime peel
2/3 cup sour cream
6 tablespoons fresh lime juice
4 large eggs
1 mango, peeled, pitted, sliced
3 kiwi fruit, peeled, sliced
1 small pineapple, peeled, quartered, cored, thinly sliced (leaves reserved)

Steps:

  • For crust:
  • Preheat oven to 350 °F. Generously butter 9-inch-diameter spring-form pan with 2 3/4-inch-high sides. Finely grind first 4 ingredients in processor. Add butter; blend until crumbs are moistened. Press mixture on bottom and 1 3/4 inches up sides of pan. Bake until crust is set, about 8 minutes. Transfer to rack, cool. Maintain oven temperature.
  • For filling:
  • Using electric mixer, beat cream cheese, sugar and lime peel in large bowl until light and fluffy. Beat in sour cream and lime juice. Add eggs 1 at a time, beating just until blended.
  • Pour filling into crust. Bake until edges are firm but center 2 inches of cheesecake still moves slightly when pan is shaken, about 1 hour 20 minutes. Transfer to rack and cool 10 minutes. Run small sharp knife around pan sides to loosen cake. Cover, chill overnight.
  • Place mango around top edge of caked. Place kiwi, then pineapple in center. Garnish with pineapple leaves.
