3 medium ripe avocados
Salt and freshly cracked black pepper
2 to 3 limes, juiced
1/4 cup fresh cilantro leaves, minced
2 tablespoons minced red onion
1 clove garlic, grated
1 ripe mango, peeled and diced
1/2 to 1 small habanero (ribs and seeds removed unless you want it hot!), minced
1/2 to 1 small habanero (ribs and seeds removed unless you want it hot!), minced
1/4 red bell pepper, diced

Steps:

  • Scoop the avocado flesh into a bowl. Mash the avocados and season with salt, pepper and lime juice. Stir in the cilantro, onions, garlic, mango, habanero and red bell pepper. Taste and adjust the seasoning if necessary.

1/2 medium mango, cut in half lengthwise, seed removed, peeled and diced
6 (8-inch) Old El Paso™ flour tortillas for burritos (from 11.5-oz package)
1 round (6 to 7 oz) Brie cheese, cut into 1/8-inch strips (not wedges)
1/4 lb thinly sliced cooked ham (from deli)
1 tablespoon vegetable oil

Steps:

  • In food processor, place all guacamole ingredients except mango. Cover; process with 3 or 4 on/off turns until coarsely chopped. Place in small bowl; stir in mango. Set aside.
  • Top half of each tortilla with cheese and ham. Fold tortilla over and press down. Brush tops with oil.
  • Heat 12-inch skillet over medium-high heat. Place 3 quesadillas, oil sides down, in skillet. Brush tops with half of remaining oil. Cook 2 to 3 minutes, turning once, until both sides are golden brown and cheese is melted. Repeat with remaining quesadillas and oil. Cut each into 4 wedges. Serve with guacamole.

1 1/4 lbs pork tenderloin
salt and pepper, to taste
1/2 cup mango chutney
1 habanero pepper, seeded and minced
1 ripe avocado, cut into a 1 inch dice
1/2 cup fresh pineapple, diced
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon ground cumin

Steps:

  • Preheat oven to 400°F Coat a shallow roasting pan with cooking spray.
  • Season pork with salt and pepper and place in pan. In a small bowl, mix the chutney with the habanero. Spoon mixture over pork.
  • Roast for 25 minutes, or until pork is just cooked through. Let stand for 5 minutes before slicing into 1/2 inch thick slices.
  • Meanwhile prepare the guacamole. In a medium bowl, combine the avocado, pineapple, cilantro, lime juice, and cumin. Season to taste with salt and pepper.
  • Tranfer the guacamole to a serving platter and nestle the pork slices into the guacamole for serving.

2 garlic cloves, minced
1/4 cup packed fresh cilantro leaves, chopped
1/4 cup freshly squeezed lime juice, (about 2 limes)
1 serrano chile, minced (ribs and seeds removed for less heat, if desired)
2 ripe avocados, pitted, peeled, and cut into 1/2-inch pieces
1 mango, peeled, pitted, and cut into 1/4-inch pieces (below)
Coarse salt

Steps:

  • To prepare mango: Hold mango with a paper towel (to avoid slippage). Using a vegetable peeler, remove skin and discard.
  • With a knife, slice off wide, flat part of fruit on both sides of pit. Trim flesh from pit (discard pit).
  • Place parts cut side down; slice in half horizontally. Cut crosswise into thin strips; cut strips lengthwise into pieces.
  • To make guacamole: In a medium bowl, combine avocados, mango, garlic, cilantro, lime juice, and serrano chile; season with 1/2 teaspoon salt. Fold gently, leaving texture chunky.

1 ½ tablespoons fresh lemon juice

1/3 cup peeled and diced jicama

Tortilla chips, for serving
2 tablespoons vegetable oil
2 whole jalapeno chiles
2 tablespoons chopped fresh cilantro
2 mangoes, peeled, pitted and diced
1 lime, juiced
1/4 large red onion, minced

Steps:

  • Mash the avocado in a medium bowl. Mix in the Jalapeno-Mango Salsa and jicama. Season with salt and pepper. Serve with homemade or purchased tortilla chips.
  • Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.

1/2 c medium sweet onion, minced
4 ripe avocados, coarsely mashed
1 - 2 chipotle pepper in adobo sauce, finely minced (more or less to taste)
1/2 tsp salt
2 Tbsp cilantro, fresh chopped
1 medium mango, ripe, seeded, peeled and diced

Steps:

  • 1. Drain crushed pineapple, reservice juice. In a small bowl, combine onion, avocados, chipotle peppers, salt, cilantro and 2 tablespoons of the reserved pineapple juice.
  • 2. Gently mix in mango and crushed pineapple. Serve immediately. Great with chips, fish, pork, or topping for tacos, etc.

2 limes, juiced
2 serrano chile peppers, or to taste
2 limes, juiced
sea salt to taste
4 ripe avocados, peeled and pitted
¼ cup chopped fresh cilantro
1 large mango - peeled, seeded, and chopped

Steps:

  • Combine the onion and the juice of 2 limes in a small bowl; allow the onion to soak in the lime juice for at least 1 hour. Strain and discard the excess juice. Set the onion aside.
  • Grind the serrano chile peppers, the juice of 2 limes, and salt together in a food processor until no large chunks of pepper remain.
