½ ripe mango, peeled, stoned and cut into chunks (130-150g prepared weight), plus a wedge to garnish (optional)
ice
Thai basil sprig, to garnish (optional)

Steps:

  • Put the rum, liqueur or gin, lemon juice, mango flesh and a generous handful of ice in a high-powered blender that's suitable for crushing ice.
  • Blend until smooth, then pour into a large cocktail or margarita glass and garnish with a mango slice and Thai basil, if you like.

1/2 ounce fresh lime juice
1/4 ounce Demerara Sugar Syrup, recipe follows
2 ounces silver rum
Shaved ice
1/2 cup demerara sugar

Steps:

  • Muddle the mango and strawberries thoroughly with the lime juice and the Demerara Simple Syrup in the bottom of a cocktail shaker. Add the rum and stir. Fill with shaved ice and shake vigorously. Strain into a demerara-rimmed cocktail glass, forming a foamy layer of finely crystallized ice to finish.
  • Bring 1 cup of water to a simmer, add the sugar and stir to dissolve. Remove from the heat, cover and chill.

to taste mango rum

Steps:

  • 1. I use a Ninja Mixer and get amazing results! Add a couple cups of Frozen Strawberries. Add a couple shots of the Peach Schnapps and a couple of shots of the Mango Rum. Mix until strawberries are liquified, adding more of the alcohol as necessary to get desired consistency.
  • 2. If you need more, add more strawberries and alcohol to get volume you desire with the flavor and consistency you need.
  • 3. The liquid should be thick but still move freely. The nice thing about using the Ninja is it can double as the pitcher for your drinks too.

½ jalapeno pepper, coarsely chopped, or more to taste
2 cups orange-peach-mango juice (such as Dole®)

1 ½ limes, juiced
crushed ice
4 thin slices jalapeno pepper
