DOUBLE BERRY-MANGO ICE CREAM PIE



Double Berry-Mango Ice Cream Pie image

Layers of mango sorbet and strawberry ice cream make a cool combination inside a crunchy cookie crust.

2 pints mango sorbet, softened, divided
1 (9 inch) prepared chocolate cookie crumb crust
½ (16 ounce) package frozen sliced strawberries in syrup
1 pint strawberry ice cream, softened
1 small fresh orange
¼ cup fresh raspberries, or more to taste
¼ cup sliced fresh strawberries, or more to taste
1 tablespoon multicolored candy sprinkles, or to taste
3 sprigs fresh mint, or more to taste

Steps:

  • Scoop 1 pint mango sorbet into cookie crust and let soften a little more while you prepare the berry filling.
  • Cut frozen berries in syrup into thin slices. Place 1/2 in a bowl and mix with a handheld mixer until well broken up. Add remaining frozen berries and mix briefly until combined but still chunky. Mix with strawberry ice cream.
  • Spread softened sorbet over the bottom of the crust. Top with berry-strawberry ice cream mixture. Scoop on remaining pint of mango sorbet; spread to the edges of the pie and swirl the top decoratively. Cover and freeze for 6 hours (or up to 1 week).
  • Cut long strips of orange peel with a citrus peel stripper, pressing firmly against the orange and turning the fruit slowly. Use a straight pin to pin one end of each strip to a drinking straw; wind tightly around the straw, then fasten the other end to the straw with another pin. Put straws in a shallow container, cover with water and ice cubes, and refrigerate for at least 4 hours (or up to 3 days).
  • Remove pie from the freezer 30 minutes before serving. Remove orange peels from the refrigerator; drain and pat dry. Unpin curls and dispose of pins, then slide off the straws.
  • To serve, arrange orange curls on pie, snipping to make them shorter if you wish, with raspberries, strawberries, sprinkles, and mint.

2 cups sifted flour
1/2 cup macadamia nuts, crushed
1 cup cold butter or margarine (2 sticks)
8 ounces heavy cream
1 teaspoon sugar
1/2 teaspoon vanilla extract
One 8-ounce package cream cheese
2 envelopes gelatin
1 cup boiling water
1 cup sugar
1/4 teaspoon salt
4 tablespoons lemon juice
5 cups peeled and chopped firm, ripe mangoes

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Put the flour into a bowl. Add the nuts and mix together. Cut the butter into cubes and add it to the bowl. Using your hands, incorporate the butter into the flour and nuts. Then, press it into a 9- by 13-inch pan. Bake for 20 to 25 minutes. Allow the crust to cool to room temperature before adding the cream cheese filling.
  • For the filling: Add the heavy cream, sugar and vanilla to the bowl of a stand mixer fitted with the whisk attachment. Start mixing on low, and then turn to high speed and mix until it forms stiff peaks. Set aside in a bowl.
  • Switch to the paddle attachment on your stand mixer. Add the cream cheese and beat until smooth, starting on low speed and increasing to high. Then, add the whipped cream to the bowl with the cream cheese and stir to incorporate. Spread it over the cooled crust and refrigerate for 1 hour.
  • For the topping: Sprinkle the gelatin into a bowl with 1 cup cold water. Whisk to dissolve the gelatin. Then add the boiling water, sugar and salt. Stir until the sugar is dissolved. Add the lemon juice and stir to combine. Then add the mangoes and chill for a few minutes until the gelatin begins to set. Pour the mango topping over the cream cheese and refrigerate until firm, about 2 hours.

1/2 cup finely chopped macadamia nuts
1 cup white flour
1/3 cup butter
1 beaten egg
4 ounces cream cheese, softened
1/3 cup sifted powdered sugar
1/3 cup whipping cream
2 large mangoes, seeded, peeled, and thinly sliced (about 2 cups)
1/3 cup granulated sugar
4 teaspoons cornstarch
1 teaspoon finely shredded orange peel
3/4 cup peach nectar
1 teaspoon lemon juice
chopped toasted macadamia nuts (to garnish)

Steps:

  • Spread the 1/2 cup nuts in a baking pan and toast in a 350°F oven for 5-10 minutes or until golden, stirring once or twice. Cool. In a medium mixing bowl combine flour and toasted nuts; cut in butter until mixture forms coarse crumbs. Add egg; stir until combine. Form into a ball. On a lightly floured surface, roll out dough to about 1/8" thickness. Line a 9-inch pie plat with pastry. Fold edge under and flute. Prick well. Bake in a 350°F oven about 20 minutes or until golden brown. Cool.
  • In a bowl beat together cream cheese and powdered sugar. Stir in 1 tbs of the cream. Beat remaining cream until soft peaks form; fold into cheese mixture. Spread in pie shell. Overlap mango slices in circles on top, reserving a few mango slices for garnish.
  • In a saucepan combine granulated sugar, cornstarch, and orange peel. Stir in peach nectar and lemon juice. Cook and stir till thick and bubbly. Cook and stir 2 minutes more. Remove from heat. Cool slightly. Spoon mixture evenly over mango slices. Chill 3-6 hours. Garnish with reserved mango slices and chopped nuts.

1 1/2 cups plain granola
3 tablespoons sugar
4 tablespoons unsalted butter, melted
8 ounces Neufchatel cheese, room temperature
3/4 cup 2% Greek yogurt
2 tablespoons honey, plus more for drizzling
1 teaspoon grated fresh ginger
1 mango, sliced

Steps:

  • Heat oven to 375 degrees. Pulse granola and sugar in a food processor until finely chopped. Drizzle butter over granola mixture and pulse to combine. Press mixture into and up sides of a 9-inch pie dish. Bake until golden, about 10 minutes. Transfer to a wire rack and let cool.
  • Beat cheese in a mixer until smooth. Add yogurt, honey, and ginger; beat until combined.
  • Pour filling into prepared crust and chill in refrigerator until set, at least 6 hours and up to 1 day. Just before serving, arrange mango on top of pie and drizzle with honey.

CRUST
1/2 cup dates
1 cup water
1 cup raw or untoasted cashew nuts
1 cup raw or untoasted walnuts
1 teaspoon organic vanilla extract
FILLING
1/2 cup raw or untoasted cashew nuts
2 ripe mangos peeled and cut into chunks
2 ripe bananas peeled and cut into chunks
1/2 cup dried mango slices, soaked in warm water for 5 minutes
1/2 cup dried flaked coconut
1 teaspoon organic vanilla extract

Steps:

  • 1. Place the dates in the water and let soak for 1 hour, or until soft. Reserving the soaking liquid, drain the dates and set them aside. 2. To make the crust, place the cashews and walnuts in a food processor and chop until completely ground. Add the dates and vanilla and pulse until fully combined. If necessary, add the reserved soaking liquid 1 or 2 tablespoons at a time until the crust has a cookie dough-like consistency. 3. Transfer the mixture to an 8-inch springform or pie pan (springform pans work best because the sides are removable) and press it evenly and firmly on the bottom and side. 4. To make the filling, place the cashews in a food processor and finely chop. Add the mangos, bananas, soaked dried mango (be sure to drain before adding), coconut, and vanilla, and pulse until the filling is completely smooth, scraping down the sides if necessary. 5. Pour the filling into the crust. Place the pie in the refrigerator and let it set for at least 1 hour. Serve chilled. For a Change . . . * Add diced bananas and dried coconut to the top of the pie for a decorative and delicious finish.

Macadamia Ice Cream and Mango Sorbet Swirl Pie image

Nonstick vegetable oil spray
12 purchased ice cream sugar cones (about 5 to 6 ounces), coarsely broken
4 tablespoons sugar, divided
6 tablespoons (3/4 stick) unsalted butter, melted
1 pint macadamia brittle ice cream, slightly softened
1 pint mango sorbet, slightly softened
1 cup chilled whipping cream
1/2 teaspoon vanilla extract
Shredded coconut, toasted

Steps:

  • Spray 9-inch-diameter glass pie dish with nonstick spray. Using on/off turns, grind cones with 3 tablespoons sugar in processor until fine crumbs form. Add butter and blend until crumbs stick together. Press crumb mixture onto bottom and up sides of prepared dish. Freeze until firm, at least 30 minutes.
  • Scoop ice cream into large bowl. Scoop sorbet atop ice cream. Using spatula, fold and stir ice cream and sorbet briefly to swirl (do not overmix). Transfer mixture to prepared pie crust. Freeze pie until filling is hard, at least 2 hours.
  • Do ahead: Can be made 1 day ahead. Cover and keep frozen.
  • Using electric mixer, beat chilled whipping cream, vanilla, and remaining 1 tablespoon sugar in medium bowl until peaks form. Spread over ice cream pie. Sprinkle with coconut. Cut pie into wedges and serve.

1-1/4 cups graham cracker crumbs
1/4 cup butter, melted
1/4 cup sugar, divided
1 fresh mango
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups thawed COOL WHIP Whipped Topping
2/3 cup boiling water
1 pkg. (3 oz.) JELL-O Peach Flavor Gelatin
ice cubes
1/4 cup cold water

Steps:

  • Heat oven to 350ºF.
  • Combine graham crumbs, butter and 2 Tbsp. sugar; press onto bottom and up side of 9-inch pie plate. Bake 8 to 10 min. or until lightly browned.
  • Meanwhile, peel and pit mango; place in blender. Add sour cream; blend until smooth. Transfer to medium bowl. Whisk in COOL WHIP.
  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1/2 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Add mango mixture to gelatin; whisk until blended. Refrigerate 20 to 30 min. or until thick enough to mound.
  • Pour gelatin mixture into crust. Refrigerate 3 hours or until firm.

2 pkg cream cheese, room temperature
10 oz sweetened condensed milk (3/4 cup)
1 1/2 c mango slices in syrup, drained, & mashed
1/4 tsp saffron threads
1/4 tsp cardamon, ground
1 graham cracker pie crust (9-inch)
1 c chantilly cream
FOR CHANTILLY CREAM
2 c heavy whipping cream
2 Tbsp granulated sugar
1 tsp vanilla extract

Steps:

  • 1. In a large bowl, use an electric mixer set on medium to beat cream cheese until fluffy, about 2 minutes. Add other ingredients and continue to beat until mixture is smooth and well blended, about 2 minutes more.
  • 2. Pour filling into the piecrust. Cover and freeze for 6 hours.
  • 3. Defrost for 10 minutes. Top with Chantilly Cream.
  • 4. To make the Chantilly Cream: In a large mixing bowl, beat the heavy cream, sugar, and vanilla extract together on high speed until soft peaks form in the mixture (3 minutes). Chill any unused Chantilly cream. Note: you can use MiracleWhip or RediWhip but stir in a teaspoon of vanilla extract.

COCONUT MANGO CREAM PIE

1 cup CRUST: shredded coconut
1/2 cup CRUST: macadamia nuts (soaked, rinsed and drained)
1/2 cup CRUST: pitted dates (soaked 10 minutes and then chopped)
1/8 teaspoon CRUST: sea salt
1 FILLING: young coconut (drink the water and scrape out the meat) or 1 cup of natural coconut yogurt
1 cup FILLING: chopped fresh mango (reserve remaining mango to slice as garnish)
1/4 cup FILLING: coconut sugar or natural sweetening syrup of choice
1/8 cup FILLING: virgin coconut oil
1/2 teaspoon FILLING: fresh vanilla bean
1 FILLING: A squeeze of lime
2 tablespoons FILLING: soy lecithin powder

Steps:

  • CRUST: Use a food processor to break down macadamia nuts. Add shredded coconut and salt and pulse a few times to begin combining, then add dates. Continue pulsing until a fine meal consistency is reached.
  • CRUST: Scoop out crust mixture in a 9-inch spring-form pan (if you don't have a spring-form pan, use a pie plate lined with saran wrap). Press the nut mixture firmly into the pan, making sure that the edges are well packed and that the base is relatively even throughout. Set in refrigerator to chill.
  • FILLING: Blend all filling ingredients except soy lecithin in a high powered blender until smooth. Once combined, gradually add soy lecithin. Top crust with filling and chill for 1 to 2 hours. Top with shredded coconut and garnish with sliced mango.
