SHRIMP AND MANGO BRUSCHETTA

Perfect for a summer afternoon BBQ. Sliced jarred mango in the produce section works fine in this recipe as fresh mango can sometimes be hard to find and are hard to handle. All measurements are to taste and can be adjusted per individual preference.

½ pound chopped shrimp
2 cups mango, cut into small dice
¼ cup chopped green onion
½ cup lime juice
2 tablespoons honey, or more to taste
1 teaspoon cayenne pepper
1 (8 ounce) round Brie cheese, sliced
1 (8 ounce) loaf French bread, sliced

Steps:

  • Stir the shrimp, mango, and green onion together in a bowl; set aside.
  • Whisk the lime juice, honey, and cayenne pepper together in a separate bowl until blended, making sure to scrape along bottom of bowl as needed to incorporate honey; pour over the shrimp mixture. Cover with plastic wrap and refrigerate 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Arrange the bread slices on a baking sheet. Top each bread slice with a slice of Brie cheese.
  • Bake in the preheated oven until slightly browned and the Brie cheese is soft and melted, about 5 minutes. Top each slice with 1 tablespoon of the shrimp mixture to serve.

This reminds me of something I had while visiting my Aunt in Hawaii. I will be making this soon! Recipe is from Raley's Something Extra.

18 ciabatta rolls or 18 slices baguette
2 tablespoons extra virgin olive oil, divided
1 avocado, ripe but firm (peeled pitted, and diced)
1 cup diced fresh mango
1/4 cup chopped red bell pepper
2 tablespoons snipped fresh basil
1 tablespoon lime juice
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400F; place bread slices on a baking sheet and brush with 1 tablespoon olive oil.
  • Bake for 5 to 10 minutes to lightly toast.
  • In a large bowl, lightly stir together remaining oil with all remaining ingredients, being careful to not mash avocado.
  • Serve with toasted bread slices.

This bruschetta is made with mango, basil, and Romano cheese, which yields an interesting combination of sweet, sour, and peppery flavors.

1 (1 pound) loaf French bread, cut into 1/2 inch pieces
1 mango - peeled, seeded and diced
1 tablespoon fresh basil, minced
1 cup grated Romano cheese

Steps:

  • Preheat the broiler.
  • Arrange French bread slices in a single layer on a large baking sheet. Broil in the preheated oven 1 to 2 minutes per side, until lightly toasted. Remove from heat.
  • In a medium bowl, mix mango and fresh basil.
  • Top each bread slice with equal amounts of the mango and basil mixture. Sprinkle with Romano cheese, adjusting the amount to taste.
  • Return topped bread to broiler. Broil 2 to 3 minutes, or until the cheese is melted and lightly browned. Serve hot.

1 lb mango, diced
1 lb strawberry, diced
1/4 cup sugar
1/4 cup water
1 pinch salt
1 (10 ounce) sara lee all purpose butter pound cake, sliced thin and toasted in oven
2 mint sprigs

Steps:

  • In a large mixing bowl, toss strawberries and mangos together.
  • In a small sauce pan, bring water and sugar to boil and allow to cool.
  • Pour small amount of sugar water over mango mixture and add pinch of salt.
  • Serve with mint sprig and toasted pound cake.
