1 pound lean ground beef
2 tablespoons taco seasoning
⅓ cup water
⅔ cup black beans (drained and rinsed)
8 ounces tortilla chips
4 cups cheddar (shredded, and/or Monterey Jack cheese)
4 green onions (sliced and divided)
toppings as desired

Steps:

  • Preheat oven to 375°F.
  • Brown ground beef in a skillet until no pink remains. Drain fat. Stir in taco seasoning, water and black beans. Simmer 5 minutes or until sauce thickens and water evaporates.
  • Meanwhile, spread tortilla chips onto a baking sheet. Top with ½ of the cheese, the beef mixture, remaining cheese, and half of the green onions.
  • Bake 8-10 minutes or until cheese is melted and bubbly.
  • Remove from oven and add remaining green onions & desired toppings. Serve hot with salsa and sour cream.

3 medium Red tomatoes (ripe and juicy)
1 medium Onion
5 - 6 Garlic Cloves
2 tbsp Fresh coriander leaves (roughly chopped)
2 Dried red chillies (I am using Kashmiri dried red chillies)
5 - 6 Jalapeño slices
1 tsp Roasted cumin seeds (You can use roasted cumin powder as well)
2 tbsp Lemon juice
1 - 2 tbsp extra virgin Olive oil
Salt per taste

Steps:

  • Firstly, heat a tawa or griddle on medium-high flame for roasting. Alternatively, you can roast in an oven as well.
  • Place 3 tomatoes, 6 garlic cloves and 1 small onion on the tawa and roast on medium flame.
  • Flip all the ingredients when roasted from 1 side and let it roast from other sides as well.
  • Remove the onions and cloves of garlic from the tawa and continue to roast tomatoes.
  • Roast tomatoes till it gets charred spots on all sides and turn off the flame. Let it cool down to room temperature.
  • Now, transfer the roasted tomatoes, garlic and onion into the blender.
  • Furthermore, add coriander leaves, jalapeño, roasted cumin seeds and dried red chillies.
  • Add Lemon juice, olive oil and salt into the blender and blend it coarsely without adding any water.

According to Dr. Adalberto Peña de los Santos, the director of the International Nacho Festival, in Piedras Negras, Mexico, there are three timeless nacho essentials: crispy corn tortilla chips, mounds of melted cheese and at least one chile. If you want to go big, here are some unofficial guidelines: Nacho toppings should be good enough to stand on their own, the nachos should be saucy (maybe even messy) and they should be so delicious together that you can't have just one bite. In this recipe, nachos take a vegetarian turn, with buttery pinto beans, tender carrots or sweet potatoes (or both), and a tomato-and-tomatillo salsa. Melty cheese, Mexican crema and chopped onion and cilantro take it over the top.

1 1/2 pounds ripe Roma tomatoes (about 5 or 6)
1/2 pound tomatillos (about 3 or 4), husked and rinsed
1 to 2 jalapeños, destemmed
1 to 2 chiles de árbol, destemmed
2 garlic cloves, peeled
1/2 cup coarsely chopped cilantro, leaves and upper stems, plus 1 cup reserved for garnish
1/8 teaspoon ground cumin
Kosher or sea salt
1 tablespoon vegetable oil
3 cups (1/2-inch) diced peeled carrot or sweet potato (or a combination)
3 tablespoons vegetable oil
1 cup finely chopped white onion, plus 1/2 cup reserved for garnish
1 cup finely chopped celery
1 1/2 cups cooked, drained pinto beans (from about 3/4 cup dried beans or a 15-ounce can)
1 to 1 1/2 pounds store-bought or Homemade Tortilla Chips (see recipe)
1 pound shredded cheese (any combination of Oaxaca, Monterey Jack and Cheddar)
1 cup Mexican crema

Steps:

  • Prepare the salsa: Place the tomatoes, tomatillos, jalapeños, chiles de árbol and garlic in a medium saucepan. Cover with at least 6 cups water and bring to a simmer over medium-high. Reduce heat to medium and simmer until the tomatoes and tomatillos are cooked through and mushy, the jalapeños have softened and the chiles de árbol have plumped up, about 10 minutes.
  • Using a slotted spoon, transfer the cooked vegetables to a blender, setting aside the cooking liquid. Add the cilantro, cumin and 3/4 teaspoon salt to the blender; purée until smooth.
  • Prepare the vegetables: Bring the reserved vegetable cooking liquid back to a simmer over medium-high heat and season generously with salt. Once it comes to a boil, add the carrots or sweet potatoes, or both, and cook until tender, 7 to 8 minutes. Pour the cooked vegetables into a colander, discarding liquid, and set aside.
  • Wipe the saucepan dry, then add 1 tablespoon oil and heat over medium. Once the oil is hot, pour in the salsa, partly cover it with the lid, and cook, stirring occasionally, until thickened and the color has deepened, 8 to 10 minutes. Set salsa aside.
  • Prepare the beans: In a large skillet, heat 3 tablespoons oil over medium. Once hot, add the onion and celery, and cook, stirring occasionally, for 7 to 8 minutes, until completely softened. Raise the heat to high, add the cooked carrots and/or sweet potatoes, sprinkle with 1/2 teaspoon salt and cook, stirring a couple times, until beginning to brown, 5 to 7 minutes. Add the pinto beans and cook, stirring occasionally, until warmed, another 3 to 4 minutes. Season to taste with salt, then remove from the heat.
  • Assemble the nachos: Set a rack in the middle of the oven and heat to 400 degrees. Place all the tortilla chips in a half sheet pan or large baking sheet. Cover the chips with the bean mixture, ladle the salsa all over the top and cover with shredded cheese. Bake until cheese has completely melted, about 10 minutes.
  • Spoon the crema over the top and garnish with reserved cilantro and chopped white onion. Serve hot!

MILE-HIGH NACHOS WITH HOMEMADE SALSA

1 large bag tortilla chips
1 can refried beans
1 pound pulled pork, shredded cooked beef, or shredded cooked chicken
1 1/2 cups grated Pepper Jack cheese
1 1/2 cups grated Cheddar
3 jalapenos, thinly sliced or minced
1 bunch green onions, thinly sliced (both green and white parts)
Guacamole, to taste
8 ounces sour cream
Emeril's Southwest Essence, to taste
1 cup coarsely chopped fresh cilantro leaves
1 quart Homemade Salsa, recipe follows
3 large ripe tomatoes, roughly chopped
1/2 cup diced white onion
1/2 cup diced yellow bell pepper
1 jalepeno, stemmed, seeded, and minced
1 clove garlic, minced
2 limes, zested and juiced
2 tablespoons olive oil
2 tablespoons chopped cilantro leaves
2 teaspoons hot sauce
1/4 teaspoon cayenne pepper
Salt

Steps:

  • Preheat oven to 350 degrees F.
  • On a large, oven-proof platter, spread 1 layer of chips. Top the chips with 1/3 of the refried beans, 1/3 of the pulled pork and 1/3 of the cheeses, 1/3 of the jalapenos and 1/3 of the green onions. Add another layer of chips and repeat the process two more times. Bake in the oven until the cheese melts and the nachos are warmed through, 5 to 8 minutes. Garnish the nachos with dollops of guacamole, sour cream, Essence and cilantro.
  • Serve immediately with the Homemade Salsa.
  • Combine all ingredients, and refrigerate for at least half an hour before serving.

SIMPLE SALSA

There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

2 medium tomatoes, diced
1/2 small onion, diced
2 garlic cloves, minced
1 -2 tablespoon cilantro
salt & pepper (I use garlic pepper salt as well as salt to taste, but you can use salt, pepper, and garlic powder i)

Steps:

  • Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
  • In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
  • Enjoy with chips or add to entrees for flavor/side dip!

This is one of my favorite methods for cooking salmon! Baked on a bed of onions and jalapeno peppers and thickly covered with seasoned salsa, the salmon stays moist and tender without giving your kitchen any fishy smell. Even though these nachos don't contain cheese, they're topped with a rich sour cream drizzle which makes them every bit as decadent as real nachos.

2 tablespoons olive oil
⅔ cup salsa
½ teaspoon ground dried chipotle pepper
1 teaspoon ground cumin
½ cup diced red onion
2 medium jalapeno peppers, seeded and thinly sliced
2 (8 ounce) skinless salmon fillets, bones removed
¼ teaspoon salt, or to taste
1 medium avocado, diced
1 teaspoon lemon juice, or to taste
⅓ cup sour cream
1 tablespoon water
3 cups corn tortilla chips
¼ cup chopped cilantro
2 tablespoons minced green onion
1 small lime, juiced

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Generously grease the bottom of a 9x13-inch baking dish with olive oil.
  • Combine salsa, ground chipotle, and cumin in a bowl.
  • Sprinkle red onion and jalapenos in an even layer in the bottom of the prepared baking dish. Place salmon filets over top and season with salt. Generously spoon salsa over the filets and distribute remaining salsa over onions and jalapenos.
  • Bake in the center of the preheated oven, until salmon is moist and tender and an instant-read thermometer inserted into the center reads at least 130 degrees F (55 degrees C), about 20 minutes.
  • Meanwhile, toss diced avocado with lemon juice in a small bowl. Thin sour cream with water in another bowl.
  • Divide chips between two serving plates. Spoon onion-jalapeno mixture over top, along with any accumulated juices, then top with avocado, cilantro, and green onion. Place a salmon filet on top of each plate and drizzle with sour cream. Sprinkle with more green onions and serve with lime.
