8 ounces baby spinach, about 5 to 6 cups
1 cup mandarin oranges, drained
1/2 cup chopped red onions
1 tablespoon orange marmalade
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil, eyeball the amount
Salt and pepper

Steps:

  • Arrange spinach leaves on a large platter or individual salad plates. Top with mandarin sections and chopped red onion. Whisk together marmalade and vinegar. Stream oil into dressing while continuing to whisk.
  • When you are ready to serve, pour the dressing over salad and season with salt and pepper.

1/2 cup vegetable oil
1/3 cup sugar
1/3 cup white vinegar
2 tablespoons minced fresh parsley
3/4 teaspoon salt
SALAD:
3/4 cup slivered almonds
4-1/2 teaspoons sugar
7 cups torn romaine
7 cups chopped fresh spinach
1-1/2 cups sliced celery
1-1/2 cups sliced green onion
3 cans (11 ounces each) mandarin oranges, drained

Steps:

  • In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat.

½ cup red wine vinegar
½ cup white sugar
1 ½ tablespoons water
1 ½ tablespoons butter
½ teaspoon salt
1 egg, beaten
1 (10 ounce) package baby spinach
1 (6 ounce) package sliced fresh mushrooms
1 (15 ounce) can mandarin oranges, drained
⅓ cup toasted slivered almonds
4 slices cooked bacon, crumbled
¼ red onion, sliced and separated into rings
¼ cup croutons, or as desired

Steps:

  • Mix vinegar, sugar, water, butter, and salt together in a saucepan; bring to a boil. Cook and stir until sugar dissolves and mixture is bubbling, about 1 minute. Remove from heat and cool to room temperature, about 1 hour.
  • Whisk egg into dressing; return saucepan to low heat and simmer until dressing thickens, 5 to 10 minutes.
  • Combine spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl; pour dressing over salad. Toss to coat.

1/3 cup salad oil
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 dash pepper
1/2 cup slivered almonds
3 tablespoons sugar
4 cups torn spinach (or any combination you'd like of romaine, iceburg, spinach etc.)
1 cup diced celery
1/2 cup sliced green onion (or sometimes I use red onion)
1 (11 ounce) can mandarin orange segments, drained

Steps:

  • In a jar, combine all ingredients for the dressing.
  • Shake well and refrigerate for at least one hour to blend flavours.
  • (I make it the night before) In a heavy skillet, cook almonds and sugar over medium heat until sugar melts and coats almonds, stirring frequently.
  • Cool.
  • Break apart if necessary.
  • In large bowl, combine spinach, celery and green onions.
  • Just before serving, add almonds and orange segments.
  • Toss gently.
  • Pour dressing over salad and toss.
  • P.S.I always double the amount of almonds because they really add a wonderful flavour to the salad-- and because some mysteriously disappear before they make it to the salad!

1 c chopped celery
1 Tbsp minced fresh parsley
2 sprig(s) spring onions, chopped including tops
1 bag(s) fresh spinach (10 oz ready to eat in a bag)
11 oz mandarin oranges, drained
1 c fresh sliced strawberries
DRESSING
1/4 c salad oil
2 Tbsp raspberry vinegar
2 Tbsp sugar
1 pinch black pepper
1/2 tsp salt
GARNISH
2 Tbsp sugar
1/4 c sliced almonds

Steps:

  • 1. Mix celery, parsley, and onions. Refrigerate.
  • 2. Drain mandarin oranges and put them in the refrigerator. (You can keep some of the juice to add to the dressing also if you wish.)
  • 3. Wash and dry strawberries. Slice and refrigerate.
  • 4. DRESSING: Mix ingredients thoroughly and refrigerate. (The dressing will keep for several days.) Shake well before adding to the salad.
  • 5. GARNISH: To caramelize almonds, put sugar and almonds in a frying pan on medium heat and stir constantly until almonds are lightly browned. Place them on a piece of wax paper to cool.
  • 6. SERVE: Place spinach in a bowl. Add the celery mixture, mandarin oranges, strawberries, and almonds. and dressing. Toss and Serve!
  • 7. Place salad on a plate and drizzle with dressing.

When using the fresh beet recipe, I make the beets ahead of time to allow for cooling in the fridge and then just cut them up when assembling the salad.

3 fresh beets (used in place of the canned beets)

Steps:

  • CANNED BEET RECIPE:.
  • Place spinach in a salad bowl.
  • Add remaining ingredients; toss and serve.
  • 5 minutes prep time; no cooking time.
  • FRESH BEET RECIPE:.

2 (11 ounce) cans mandarin orange sections, in light syrup or in own juice,drained
1/4 cup crumbled blue cheese or 1/4 cup crumbled feta cheese
2 tablespoons roughly chopped pecans or 2 tablespoons roughly chopped walnuts
1/2 cup fat-free raspberry vinaigrette (such as Girard's Or your favourite fat free dressing)

Steps:

  • Place 2 cups of spinach on each of 4 plates.
  • Arrange 1/2 cup mushrooms and 1/3 cup oranges over spinach.
  • Sprinkle each serving with 1 tablespoon cheese and 1 1/2 teaspoons nuts.

fresh baby spinach enough for 8 servings
3 small cans mandarin oranges, drained well
1 c slivered almonds
1/2 c sugar
1/2 tsp dry mustard
3 Tbsp white vinegar
3 Tbsp *onion juice
1/2 c vegetable oil
3 Tbsp seseme seeds
arrange spinach, oranges and almonds on 8 plates

Steps:

  • 1. 1.Mix mustard, sugar, salt and vinegar 2.Add onion juice and stir 3.Add oil, slowly whisking constantly until blended 4.Add seseme seeds 5.Beat with mixer 2 minutes
  • 2. NOTE: A little drizzle over the spinach salad is all you need. This is NOT a dressing that you pour over all the salad. This makes a 1 cup amount and should drizzle 8 servings of salad.
  • 3. *Onion juice is found in a tall bottle packaged in a box. It's found in the spice section. It's expensive but will make several cups of this dressing.
  • 4. Many people sprinkle bacon over spinach salad but this would not do with this salad. It's unusual flavor would not be enhanced with bacon.

1 pkg strawberries, fresh
2 can(s) canned mandarin oranges
1 red onion
1 bottle light raspberry vinagarette dressing

  • 1. Wash and drain spinach and take off large stems. Put in large bowl.
  • 2. Wash and drain strawberries and cut into quarters. Put into bowl.
  • 3. Slice red onion thinly and put into bowl. I use whole onion but if you want, you can use half.
  • 4. Drain mandarin oranges and put into bowl.
  • 5. Just before serving, pour bottle of dressing and mix ingredients. I use whole bottle, but you can use it to taste. Its best to finish off the salad because the spinach gets soggy if leftover.

  • Make your dressing first:.
  • Add equal parts yogurt, mayonnaise and mix well.
  • Add the honey and mix inches Adjust this to your tastes. It is generally lightly sweet and rounds out the flavors of the mayo and yogurt.
  • Add the poppy seeds, mix in (if you don't have seeds, don't sweat it, they give a bit of texture but I have wanted this salad and run out and it is fine without it -- )
