1 box yellow cake mix ((plus ingredients the box mix calls for))
11 ounces mandarin oranges ((drained))
20 ounces crushed pineapple ((drained))
3.4 ounces instant vanilla pudding mix ((dry))
12 ounces Cool Whip or stabilized whipped cream

Steps:

  • Prepare cake batter according to the directions on the box.
  • Beat in the drained oranges until blended.
  • Pour into a greased 9x13" baking pan.
  • Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Allow the cakes to cool.
  • In a bowl, combine the drained pineapple and dry vanilla pudding mix.
  • Fold in the Cool Whip.
  • Spread the frosting over the top of the cake.
  • Store this cake in the refrigerator.

1 yellow cake mix
1/2 cup butter (softened)
14 oz Mandarin Oranges
4 eggs
1 tsp vanilla
3.4 oz instant vanilla pudding mix
20 oz crushed pineapple
1/2 cup powdered sugar
3/4 tub Cool Whip
mandarin oranges (garnish)

Steps:

  • Preheat oven to 350 degrees
  • Combine yellow cake mix, butter, 1/2 cup mandarin orange juice, eggs, and vanilla extract with a hand mixer.
  • Add drained mandarin oranges and stir to combine
  • Pour into a greased 9x13 baking dish and bake for 20-25 minutes. Remove from oven and cool
  • Once the cake is completely cooled! Drain pineapples keeping the juice so they are in seperate containers
  • Combine pineapple juice with vanilla pudding mix. Stir in powdered sugar and then fold in Cool Whip. Stir in crushed pineapple.
  • Spread over the cake and then top with mandarin oranges for garnish.

1 yellow cake mix
3/4 cup oil
4 eggs
1 (11 ounce) can mandarin oranges, with juices
1 (20 ounce) can crushed pineapple
1 (3 1/2 ounce) box instant vanilla pudding

Steps:

  • Cake: Grease and flour 3 8 inch round cake pans.
  • Mix cake mix, oil, eggs,& Mandarin oranges including juices.
  • Pour in to prepared pans.
  • Bake at 350 for 30 minutes (check with tooth pick) or until tooth pick is clean.
  • Do not over cook layers.
  • Icing: Drain Pinapple and save juice.

3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
11 ounces mandarin oranges in juice
20 ounces crushed pineapple in juice
9 ounces frozen whipped topping, thawed
3 1/2 ounces vanilla instant pudding mix

Steps:

  • Prepare the yellow cake mix according to the directions on the box, EXCEPT substitute the can of mandarin oranges (with juice) for the water. Beat the mandarin oranges in with the other ingredients with an electric hand mixer. Bake according to directions.
  • To make the topping, stir together canned crushed pineapple (with juice), thawed whipped topping, and vanilla pudding mix. Spread over cake evenly once the cake has cooled.

I chop up the oranges just because I don't like big hunks of oranges, but you can leave them whole if you wish. A must try!! Baking time is approximate.

3 egg whites
1/2 cup oil
1 can mandarin oranges in juice
1 (12 ounce) container Cool Whip

11 ounces mandarin oranges (1 can, undrained)
4 egg whites
½ cup unsweetened applesauce
20 ounces crushed pineapple (1 can, undrained)
3.5 ounces instant vanilla pudding mix (1 package, (you could use sugar free if you want))
8 ounces reduced fat whipped topping (1 carton, (cool whip))
sliced oranges or mandarin orange segments (for garnish)

Steps:

  • In a large bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13-in. x 9-in. baking dish coated with cooking spray.
  • Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
