MANDARIN ORANGE JELLO W/ BANANAS
My family usually saves this for dessert. It's a recipe my mother-in-law introduced to me years ago.

Steps:
- Mix Jello with 1 cup boiling water. Mix well. Put in refrigerator to set.
- Mix tapioca pudding with 3 cups water.
- Cook over medium until boiling. Set aside.
- When cooled, add to Jello setting in refrigerator.
- Add drained mandarin oranges, crushed pineapple, and sliced bananas.
- Put in refrigerator until set.

ORANGE FLUFF JELLO SALAD RECIPE
Steps:
- Mix together pudding, Jell-o, and water over medium heat until it boils. Remove from heat and pour into a large mixing bowl. Refrigerate until mixture has thickened (about 4-5 hours).
- Beat until creamy.
- Fold in whipped cream, marshmallows, and fruit. Scrape the sides of the bowl to get all the fluff mixture together. Chill about an hour before serving.

- Dissolve Jello in 2 cups boiling water.
- Stir in 12 oz can of frozen OJ, will be soft set in just a bit.
- Then stir in drained mandarin oranges.
- Chill 4 hours or so until firmly set.

15 MINUTE MANDARIN ORANGE SALAD
This is my mom's recipe and is ever present at all holidays in my family. I changed it to make it sugar free and low fat. However, you can add the full fat cream cheese, and full fat Cool Whip if you want. It tastes great both ways. If you want thick servings use a smaller dish, if you want thinner use a bigger dish, you decide.

Steps:
- Dissolve Jello in 1 cup boiling water, and let cool slightly.
- Then, add to cream cheese and beat till well combined.
- Drain pineapple and mandarin oranges and combine with cream cheese mixture.
- Fold in Cool Whip.
- Chill in a Pyrex or other glass casserole dish.
- Chilling overnight works best.
- Serve cold.
MANDARIN ORANGE JELLO SALAD
My cousin shared this recipe with me years ago, and it's always been a favorite. It's as pretty on the plate as it is refreshing. Better made the night before.

- 1. Dissolve gelatin in hot water. Add 1 1/2 cups cold water. When gelatin has thickened, but not set, add bananas and crushed pineapple.
- 2. Fold in marshmallows and oranges. Pour into 9" X 13" pan and return to refrigerator.
- 3. After gelatin is set: Cook 2 tbsp flour, 1 egg slightly beaten, 1/2 cup sugar, and 1 cup pineapple juice. Cook until thickened. Add 2 tbsp butter.
- 4. After this mixture is cold, add 1 cup whipping cream (whipped with juice of one lemon).
- 5. Spread over top of gelatin, and keep chilled.
