I found this recipe on Pinterest and had to try it. This is an easy dish with alot of flavor. Enjoy!

1 1/2 lbs boneless skinless chicken thighs
1/2 cup Dijon mustard
1/4 cup maple syrup
1 tablespoon rice wine vinegar
salt and pepper
rosemary

Steps:

  • Preheat oven to 450 degrees.
  • Mix together dijon mustard, maple syrup and rice wine vinegar.
  • Place chicken in an oven proof baking dish and sprinkle with Salt and Pepper. Pour the mustard mixture over them, turning the thighs in the mixture so they are fully coated.
  • Bake for 40 minutes or until the meat is cooked (155 degrees). Halfway through baste the chicken with the sauce.
  • Let the chicken rest for 5 minutes before serving. Then sprinkle with fresh rosemary. Enjoy!

Grandma would be proud! This was a good dish to make the night before and refrigerate. Let it come to room temp while preheating the oven. I often seen this at Sunday Services Brunch when I was a child. Sitting all purdy next to a glass of orange juice. THAT was breakfast. Mmm, good.

1 lb sausage, ground
2 c stuffing mix, chicken, dry
2 c milk, 2%
1/2 c onion, chopped
1/2 c red bell pepper, chopped
6 eggs
1 c cheddar cheese, shredded
cooking spray

Steps:

  • 1. Preheat your oven to 350 degrees (F) and spray a baking dish (9x13) with cooking spray. Set aside.
  • 2. In a skillet, cook and crumble sausage over med heat. Drain. Set aside.
  • 3. In a large bowl, add stuffing, milk, sausage, onion and bell pepper. Mix well.
  • 4. In a separate bowl, whisk the eggs and pour over the sausage mixture, followed by the cheddar cheese and stir together until well combined.
  • 5. Pour everything into the prepared baking dish and bake, uncovered for 45 minutes, or until set and the color is nice and browned. Cover if the edges are getting too dark before end cook time.

3 (15 ounce) cans cans ranch style beans
2 (16 ounce) cans pork and beans

  • Brown beef and onions in margarine and combine with remaining ingredients.

This breakfast was on the menu and a favorite of many hungry men, at the restaurant I used to manage. It is sure to please. Women love it too, but always asked for 1/2 a serving. I hope you try it sometime. A true comfort meal, that I serve for dinner too, it's not just for breakfast. Enjoy!

4 - eggs - over easy is the best
oil - for browning meat & veggies
1/2 pound(s) bulk sausage
1/4 cup(s) each - red & green bell pepper, diced
1/2 cup(s) diced, onion
1 small - medium pre cooked potato, small diced - didn't add this time
salt - & pepper to taste
2 large biscuits - prepared - i use home made or grands
GRAVY
2 tablespoon(s) each - butter & flour
1 1/4 cup(s) milk - more if to thin if needed
fresh - cracked pepper & kosher salt to taste
fresh - shredded, cheddar cheese

Steps:

  • Have biscuits prepared and keep warm. In a medium skillet over medium heat, add oil. Once hot crumble sausage into skillet and add the onions, peppers, potato if using, salt and pepper to taste. Saute until meat is no longer pink and veggies are browning and tender. Keep warm while making gravy.
  • In a medium saucepan over medium heat, melt butter. Once bubbling, whisk in the flour and continue cooking for 1 - 2 minutes, do not burn. Whisk in the milk and continue whisking as it comes to a boil and thickening. Season with cracked black pepper and salt. Remove from burner. May need to add a little more milk as it tends to thicken as it sits.
  • Prepare 2 eggs for each biscuit. Over easy is really the best for this breakfast.
  • Now, on serving plate - Spread open 1 large biscuit - Spoon half of the sausage mixture evenly over biscuit.
  • Place 1 egg on each biscuit halve.
  • Ladle half the white gravy evenly over eggs.
  • Sprinkle with desired amount of cheese and microwave for 30 seconds to 1 minute or until cheese is melted. Season if desired - I sprinkle with pepper and hot pepper flakes and some fresh parsley. Time to dig in...it's delicious, quite filling and satisfying.
