FINNISH TARTS
Those are great tarts. I tasted them in a Christmas party. I was told that its a classic Christmas treat in Finland.

Steps:
- Mix all the ingredients expect from the egg and the marlalade. Make a dough and let it cool about 1 hour.
- Roll the dough into a big circle and cut into small ones, by using a mug.
- Place one teaspoon of marmalade at the middle of the circle and pinch the edges.
- Beat the egg and shine the tarts.
- Place on cookie sheets and bake at 470F for 30 minutes.
LEMON BERRY TART
I have made this tart so many times, that I can make it in 15 minutes from start to finish, and that includes prep! It is so easy to make and the payoff is amazing. The lemon custard base elevates the berries without overwhelming them, the crust is uber easy, and it can be made the day before. Perfect Summer BBQ dessert!

Steps:
- Melt stick of butter in the microwave (20-30 seconds on high).
- Blend together Graham Cracker crumbs, sugar, butter, cinnamon, and cardamon (if using) until it is well incorporated and looks like wet sand.
- Press half the mixture into the sides of a tart pan or pie plate using a measuring cup and your thumb to form the edge. Then press the rest of the mixture into the bottom for the base, and pressing firmly and sealing with the sides.
- Put the crust shell into the refrigerator to set up while you construct the fillings.
- In a medium bowl, beat lemon curd with a whisk until it is broken up and easily spread.
- Fold 1/3 of the Whipped Cream into the lemon curd until well incorporated.
- Fold in the remaining cream mixture until combined, and set aside.
- Spread the Lemon mixture into the prepared crust (doesn't need to be perfect - you're gonna cover it with the berries), and place back in the fridge.
- In a microwave safe bowl, melt Red Currant Jelly (approx 45-60 seconds on high).
- Pour all the berries into the bowl and coat the berries by tossing them with a rubber spatula - taking care not to damage or break up the berries.
- Spread berries over top of the custard mixture, pressing into place.
- Wrap the tart in plastic wrap until ready to serve.
FINNISH PRUNE TARTS
One of my favorite Christmas treats, and very popular with the Finnish community with coffee. I know,you're thinking prunes..ewww...but they are very good. (the bake time does not include the overnight dough chill time).

Steps:
- Blend dough ingredients with pastry blender.
- Add milk to soften as needed.
- Should make into 4 small or 2 large balls.
- Cover and chill dough overnight.
- Cook the prunes in water until soft.
- Drain.
- Press prunes through wire strainer or pureed in blender.
- Add the sugar and mix well.
- Roll out dough into large square in order to cut into 3 inch square Place a mound of filling in the center.
- Split each corner from the top to within 1/2 inch of the center.
- Fold one half of each corner to the center-- to form a star or pinwheel.
- Place on ungreased baking sheet- you may sprinkle croase grain sugar over tart.
- Let stand 10 minutes before baking.
- Bake in hot oven 400*F for 7 to 10 minutes- until light golden brown (they should be realitively pale).
- Remove and cool on rack.

- TO PREPARE CRUST:.
- Whisk whole-wheat flour, all-purpose flour, 2 tablespoons sugar and salt in a medium bowl.
- Cut in butter with a pastry blender or your fingers until the mixture resembles coarse crumbs with a few larger pieces.
- Add oil and stir with a fork to blend.
- Mix 1/4 cup water, egg yolk and 1 teaspoon lemon juice (or vinegar) in a measuring cup.
- Add just enough of the egg yolk mixture to the flour mixture, stirring with a fork, until the dough clumps together. (Add a little water if the dough seems too dry.)
- Turn the dough out onto a lightly floured surface and knead several times.
- Form the dough into a ball, then flatten into a disk.
- Wrap in plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 425°F Line a baking sheet with parchment paper or foil and coat with cooking spray.
- TO PREPARE FILLING AND ASSEMBLE TART:.
- Spread almonds in a small baking pan. Bake until light golden and fragrant, about 5 minutes. Let cool.
- Combine whole-wheat flour, 1/4 cup sugar (or Splenda) and the toasted almonds in a food processor or blender; process until the almonds are ground.
- Roll the dough into a rough 13- to 14-inch circle on a lightly floured surface, about 1/4 inch thick. Roll it back over the rolling pin, brush off excess flour, and transfer to the prepared baking sheet.
- Spread the almond mixture over the pastry, leaving a 2-inch border all around.
- Toss berries with the remaining 3 tablespoons sugar (or Splenda) and 2 teaspoons lemon juice in a large bowl; spoon over the almond mixture.
- Fold the border up and over the filling, pleating as necessary.
- Blend the reserved egg white and 1 tablespoon water with a fork; brush lightly over the tart rim. Sprinkle with the remaining 1 teaspoon sugar.
- Bake the tart for 15 minutes at 425°F.
- Reduce oven temperature to 350°F and bake until the crust is golden and the juices are bubbling, 30 to 40 minutes.
- Leaving the tart on the parchment (or foil), carefully slide it onto a wire rack. Let cool.
- Shortly before serving, melt jam in a small saucepan over low heat; brush over the berries.
- Cut the tart into wedges and serve.
- MAKE AHEAD TIP: Prepare crust through Step 1; wrap in plastic wrap and refrigerate for up to 2 days or freeze for up to 3 months.

RUSTIC NECTARINE-BERRY TART
This recipe is a delicious combination of juicy nectarines, raspberries and blackberries nestled in butter-crisp pastry crust.

- Place flour, salt and cubed butter into a food processor. Pulse until mixture resembles pea-sized crumbles. Add cold water 1 tbs. at a time until mixture forms a smooth ball. Set aside.
- In a medium-sized bowl, gently combine nectarine slices, raspberries, blackberries, sugar, flour and lemon juice.

RUSTIC SUMMER PEACH BERRY TART
This tart is not only pleasing to the eye but the taste buds as well. The crust is meant to be hand-crimped in a rustic fashion, so don't worry about perfection. I used peaches, strawberries and blueberries, but good substitutes for the berries would be raspberries or blackberries. A sprinkling of powdered sugar atop this tart makes for elegant presentation. Preparation time does not include cooling time.

- In a medium bowl, combine flour and sugar.

Mamma's Berry Tart is a popular dessert in Finland. The word "Mamma" comes from the Swedish word "Mum", so it's not quite certain if the recipe is Finnish or Swedish. But it's good all the same! - To make the pastry:
- Using an electric mixer, beat the butter and sugar until light and creamy. Whisk in the egg.
- Mix the flour and the baking powder together and stir into the dough.
- Place the dough in a greased 9 inch tart pan or pie plate and flatten on the bottom and sides using your fingers (add a little bit of flour if the dough is too sticky to handle).
- For the Filling:.
- Mix the berries with the cornstarch, then place berries in the prepared crust.
- Mix together the sour cream, egg, vanilla sugar and sugar and spoon the filling on top of the berries.
- Bake in 350F oven for about 30 minutes or until the pastry has browned and the filling seems set.
