Number Of Ingredients 15

1/2 c. tomato juice
2 eggs, beaten
3/4 c. dry bread crumbs
2 T. plus 1 t. dried parsley, divided
1 clove garlic, minced
1/2 t. dried oregano
1/2 t. salt
1/2 t. pepper
1 lb. lean ground beef
15-oz. container ricotta cheese
1 c. mozzarella cheese, diced
1/2 c. cooked ham, diced
2 tomatoes, diced
4 green onions, chopped
1/4 c. sliced black olives

Steps:

  • In a large bowl, combine tomato juice, eggs, bread crumbs, 2 tablespoons parsley, garlic, oregano, salt and pepper. Add beef; blend well. Pat into an ungreased 9"x5" loaf pan. In a separate bowl, combine cheeses, ham and remaining parsley. Spread over loaf. Bake, uncovered, at 350 degrees for one hour. Sprinkle with remaining ingredients; return to oven for an additional 15 minutes. Makes 4 to 6 servings.

I've never been a big meatloaf fan but I like this recipe. My family raves about it! I think the onion, mushroom, cheese and bacon combination really makes it stand out from your ordinary meatloaf!

1 pound ground beef
1 (12 ounce) package bulk pork breakfast sausage
6 fresh mushrooms, chopped
1 red onion, chopped
2 tablespoons barbecue sauce
2 teaspoons Worcestershire sauce
1 egg
½ cup instant oatmeal
1 teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
4 strips bacon

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix the ground beef, sausage, mushrooms, onion, barbecue sauce, Worcestershire sauce, egg, oatmeal, garlic powder, pepper, and Cheddar cheese together in a large bowl until evenly mixed. Form into a loaf and place in a 9x13-inch baking dish. Lie the bacon strips across the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Fantastic hot or cold. It doesn't last long. Next time I will double the recipe and freeze one loaf. I topped the meatloaf with 1/4 cup pasta sauce before cooking and added another 1/4 cup during the last 15 minutes. I used leftover ham but Coppacola would be even better.

1 tablespoon olive oil
1 lb lean ground beef
1/2 lb ground pork
4 ounces frozen chopped spinach, defrosted and squeezed dry
2 cloves garlic, minced
2 ounces provolone cheese, diced (about 1/4 cup)
1/2 cup cooked ham, diced
2 tablespoons grated parmesan cheese
1 cup fresh breadcrumb
1 tablespoon dried oregano
1/2 tablespoon dried basil
1 egg, beaten
1/4 cup red wine
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Brown mushrooms in oil.
  • Combine with remaining ingredients.
  • Place in a 9x5 inch loaf pan and bake 1 hour.
  • Let rest 10 minutes before serving.
