ARROZ CON POLLO (PUERTO RICAN RICE WITH CHICKEN)



Arroz Con Pollo (Puerto Rican rice with chicken) image

A flavorful one pot meal inspired by the Puerto Rican cuisine. This flavorful Spanish rice dish is protein packed with chicken.

Number Of Ingredients 17

2 tablespoons of oil
6 drumsticks (mix and match with thighs, wings if desired)
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of garlic powder
1 tablespoon of dried oregano
1/3 cup of homemade sofrito
2 garlic cloves (minced (optional))
1/4 cup of cilantro (chopped (optional))
4 oz of tomato sauce
1-2 packets of Goya Sazon packet
2 bay leaves
1/2 tablespoon of dried oregano
1 teaspoon of adobo (optional)
salt and pepper to taste
2 cups of long grain rice
2 1/2 cups of chicken broth (or water with 2 teaspoons of chicken bullion)

Steps:

  • In a large bowl, season your chicken with salt, pepper, garlic powder and oregano. Let sit for ten minutes.
  • Into a large heavy bottom caldero or dutch oven pan, heat your oil over medium high heat. Then add in your chicken. Brown both sides of chicken, about 3-4 minutes per side. Next, add in everything except for the rice and broth. Mix it all together, and allow to cook for about three minutes.
  • After three minutes, stir in the rice, allow the rice to absorb all of the sauce for about 1-2 minutes before adding in the broth. Stir rice and broth together, allow it to come to a light boil, for about 5-7 minutes.
  • Once you're able to see the grains of rice just at the surface, you will lower your heat to medium low, COVER your pot, and let it cook for 20-30 minutes.
  • After 20 minutes, check on your rice, if there is still any liquid or your rice isn't as soft as desired, let it cook an additional 5-10 minutes. Once liquid is absorbed and rice is soft, remove from heat, let it sit for 5 minutes before giving it a GENTLE fluff with a fork, then serve immediately.

My daughter's former boyfriend fixed this dish. I modified it and tried (hopefully) to simplify the directions. There's a lot of preparation, but the results are well worth the trouble. It's a garlic lovers dream, but others may want to cut down on the garlic. I've even used more.

1 (3 lb) chicken
1 tablespoon olive oil
1/2 teaspoon fresh ground black pepper
10 cloves garlic, crushed
1 teaspoon dried oregano, crushed
2 teaspoons salt
1 teaspoon vinegar or 1 teaspoon freshly squeezed lime juice
1 tablespoon olive oil
1 ounce salt pork, diced
2 ounces lean cured ham, diced
1 onion, peeled and quartered
1 green bell pepper, seeded
3 sweet green chili peppers, seeded and minced
1 large tomatoes, quartered
6 fresh cilantro leaves
1/2 teaspoon salt
18 pimento stuffed olives, left whole
3 teaspoons capers
1 (8 ounce) can tomato sauce
2 cups rice
3 1/2 cups chicken broth or 3 1/2 cups water (OR 1 12-oz. can of beer and 2 cups of water or broth)
1 (17 ounce) can baby green peas, drained
1 (4 ounce) jar pimientos, chopped

Steps:

  • Wash chicken well and dry with paper towel.
  • Cut into pieces, dividing each breast section and back into two pieces.
  • Coat chicken pieces in olive oil.
  • Mix the seasonings in Group B together and rub into chicken.
  • Set in refrigerator overnight.
  • In a large Dutch oven or cast iron skillet, heat olive oil from Group C on high and rapidly brown salt pork and ham.
  • Reduce heat to medium high and brown chicken for about 5 minutes, stirring occasionally.
  • Reduce heat to medium low.
  • Combine ingredients from Group D in a food processor; pulse on and off 8-10 times--don't liquify; just mince.
  • Add these ingredients to the pot and saute for 10 minutes, stirring occasionally.
  • Add ingredients in Group E to the pot and mix over medium heat for 2 minutes, stirring occasionally.
  • Add the rice from Group F and stir in.
  • Add the liquid to the pot and mix well.
  • Reduce heat; cover; simmer 10 minutes.
  • Stir up rice from below; cover, simmer 10 more minutes.
  • Remove to large platter and garnish with peas and pimientos.

My Grandma comes from Puerto Rico and she got this recipe from her mom, who made it because they were poor and it streched out the food to feed her 8 kids and all of the neighbors too!

1 whole chicken, cut up & skin removed
1 onion, cut into large chunks
2 large potatoes, peeled & cut into large chunks
3 carrots, cut into large chunks
2 garlic cloves, crushed
2 (8 ounce) cans tomato sauce
1/4 cup chopped cilantro
water
garlic salt
salt & pepper
goya sazon goya, 2 packets or 1/2-1 teaspoon cumin
oil
cooked white rice
beans
avocado

Steps:

  • Season Chicken with garlic salt, salt & pepper. Put a small amount of oil in a large pot, brown chicken on medium high heat, but don't cook all the way through.
  • Add the garlic and onion and cook for a few minutes. Add the potatoes, carrots, tomato sauce, cilantro, and sazon or cumin.
  • There should be enough liquid to cover most of the food, if it looks like it needs a little more liquid add either another can of tomato sauce or some water.
  • Reduce heat to low and cook until the chicken and veggies are done, I usually cook it for at least an hour, the longer the better though, because as the potatoes break down they thicken the sauce.
  • Serve with hot white rice, beans and slices of avocado. Yummy.

1 broiler/fryer chicken (about 4 pounds), cut up
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder, divided
1 teaspoon salt, divided
1 teaspoon coarsely ground pepper, divided
1 cup dry bread crumbs
3/4 cup all-purpose flour
2 large eggs, beaten
1/4 cup canola oil
1/4 cup butter

Steps:

  • Preheat oven to 350°. Sprinkle chicken with cumin, oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon salt and 1/2 teaspoon pepper. In a shallow bowl, mix bread crumbs with remaining garlic powder, salt and pepper. Place flour and eggs in separate shallow bowls. Dip chicken pieces in flour to coat all sides; shake off excess. Dip in eggs, then in crumb mixture, patting to help coating adhere., In a large skillet, heat oil over medium heat. Stir in butter. Add chicken in batches; cook until golden brown, 2-3 minutes per side. Place chicken on a rack in a shallow roasting pan. Bake, uncovered, until chicken is no longer pink, 30-35 minutes.
