Don't be turned away by the title, this is the most delicious, decadent salad. It's almost dessert. My Grandmother created this and passed it down to me. My co-workers have come to love it and my kid's friends all beg me to make it when they come over to the house. It's also a fav for holiday dinners!

1 (20 ounce) can pineapple slices in syrup (do not get the pineapple tidbits)
1 1/2 cups mild cheddar cheese, cut into small bite size pieces
1 1/2 cups mini marshmallows
1 cup sugar
2 tablespoons flour
2 eggs, beaten

Steps:

  • Drain the pineapple rings reserving all the syrup. In a small saucepan combine sugar, flour, beaten eggs and reserved syrup from the can of pineapple rings. Cook the mixture over medium high heat stirring constantly until thickened. Remove from heat and allow sauce to cool completely.
  • Cut pineapple rings into bite-size pieces. Stir completely cooled sauce, pineapple pieces, cheese pieces and mini marshmallows together until everything is well coated with sauce. Refrigerate until serving.

My first taste of this was at a covered dish. Ohhh, how I remember that surprisingly delicious taste! I am thankful that the lady shared her recipe with me. It has become a family favorite. Whenever I carry it to a covered dish everyone asks for this recipe. Sometimes I use it as a gelatin salad and other times, as a desert. It is great served with angel food cake. I hope you try this quick easy dish and enjoy it.

Number Of Ingredients 6

1 (3 ounce) package knox unflavored gelatin
1 (14 ounce) can crushed pineapple, undrained
1 (8 ounce) package low-fat cream cheese, softened
1/2 cup sugar
1/4 cup water
cherries, with if desired (to garnish)

Steps:

  • In a small saucepan, over medium heat, warm the pineapple, cream cheese, and Splenda or sugar until smooth. Stir gently. This does not take long.
  • Remove from heat.
  • In a small dish, add the water. Then add the unflavored gelatin to it. Allow a few seconds for it to dissolve.
  • Add Knox and water mixture to the pineapple mixture. Stir well to blend.
  • Pour pineapple mixture in a pretty glass bowl. Gently place a few cherries on top, if desired.
  • Place in refrigerator to set. Chill at least 3 hours before serving.
  • Note: The 3 hours is your cook tiime. Also note that the small package of Knox unflavored gelatin wasn't labeled with number of ounces. Since I had removed them from the box, I guess at the number of ounces.

I have no idea of the origin of this recipe. I know that my sister and I are the fourth generation (at least) to make this recipe. I warn you: it is an acquired taste, but it goes great with anything. To me, when I think of northern central Louisiana cuisine/southern food, this is the "salad" I think of.

1 head iceberg lettuce
1/2 cup cheddar cheese (the sharper, the better...but don't use white...it won't be the same)
4 tablespoons mayonnaise (lite, low-fat, fat free, or full on fat is okay)
15 ounces pineapple rings, drained

Steps:

  • Assemble the salad as follows:.
  • Place 2-3 (or more) lettuce leaves on a small salad plate.
  • Top with pineapple rings (1-2 per person).
  • Fill the "hole" in the pineapple ring with a 1/2 tablespoon to 1 tablespoon mayonnaise.
  • Sprinkle with cheese to "hide" mayo.

1 (1 tablespoon) envelope unflavored gelatin
1/4 cup cold water
3/4 cup sugar
1/2 cup pineapple syrup
1 cup crushed pineapple, drained (use 14-oz can for fruit and juice)
1 cup freshly grated American cheese (or mild cheddar cheese)
1 cup heavy cream, whipped

Steps:

  • Soften gelatin in cold water.
  • Dissolve sugar in pineapple syrup in small saucepan over low heat. Add gelatin and stir until dissolved.
  • Chill till partially set, add pineapple and cheese.
  • Fold in whipped cream. Turn into serving bowl.
  • Chill until firm.

Individual servings of a very colorful starter or attractive salad on the side which can be made ahead of time. Super easy for a beginner cook and good for you too! Before you think, eeks, mayonnaise, give it a try, it works really well. Of course you could omit the mayonnaise if you prefer. When we were kids my mom used to make this for us for lunch or for salad at dinner and we all loved it! :)

4 -8 large lettuce leaves
2 cups cottage cheese, divided in 1/2 cup each
1 (8 ounce) can pineapple, sliced in juice and drained (4 slices)
4 teaspoons mayonnaise
4 maraschino cherries

Steps:

  • Line up 4 small plates on your work area and place a layer of nice green lettuce leaves on each plate.
  • Spoon 1/2 cup cottage cheese in the center of the lettuce on each plate.
  • Put 1 slice pineapple over the cottage cheese on each plate.
  • Dollop 1 teaspoon mayonnaise in the center of each pineapple per plate (I like more).
  • Dab excess juice from the maraschino cherries with a paper towel and place the cherry on top of the dollop of mayonnaise.
  • Can be served immediately or covered with plastic wrap and refrigerated until ready to serve.

1 -1 1/2 cup mild cheddar cheese, cut in sm. chunks
3 cups miniature marshmallows
1 egg, slightly beaten

1/3 cup vinegar
2/3 cup water

Steps:

  • Combine pineapple cheese and marshmallows in bowl. For Sauce: In small pan mix; sugar, flour, pinch of salt. Add egg and mix. Combine vinegar and water and add slowly to egg mixture. Add butter, cook over medium heat until thick. Pour over pineapple, marshmallow and cheese. Chill.
