This was one of my favorite dishes growing up and now it is my children's. Ground beef, cheese and tomato sauce are baked into a simply delicious casserole.

1 pound ground beef
2 cups shredded Cheddar cheese
2 (15 ounce) cans tomato sauce
2 tablespoons butter
1 (16 ounce) package uncooked elbow macaroni
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble the ground beef into a large skillet over medium-high heat. Cook, stirring frequently, until evenly browned. Drain.
  • While the ground beef is cooking, bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and stir in butter. Transfer to a large casserole dish, and mix in the ground beef, tomato sauce, and Cheddar cheese. Sprinkle a little salt and pepper over the top.
  • Bake uncovered for 30 minutes in the preheated oven, or until heated through and bubbly.

Homemade Beef-A-Roni image

Grandma first introduced this to me, as with everything else I improvised on it. Feel free to substitute beef with half beef/half Italian sausage. In addition, you may substitute the Velveeta with mozzarella if desired.

1 (12 ounce) box of large elbow macaroni (Normal size may be used as well)
2 lbs ground beef
1 teaspoon McCormick's Montreal Brand steak seasoning
1 (15 ounce) jar Ragu pizza sauce, chunky garden combination sauce
10 slices Velveeta cheese
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon minced garlic
1 small onion (chopped fine)
1 teaspoon butter or 1 teaspoon olive oil
1 (15 ounce) can tomatoes (seasoned with basic and or or roasted garlic)
1/4 cup parmesan cheese (ground)
1/2 teaspoon basil

Steps:

  • In medium to large skillet, combine beef, onions and steak seasoning. Cook until brown over medium heat.
  • Concurrently, cook noodles according to the box directions in large pot with butter or olive oil to help prevent sticking and to add taste; Drain and return to pot.
  • Place cooked beef mix in large pot with noodles. Add remaining ingredients except for cheese slices to the same pot. Mix well and heat on low to medium-low until sauce is hot.
  • Pour mixture into a 9x13 baking dish and level.
  • Lay cheese slices over top of mixture so that entire dish is covered with a slice of cheese. Cut cheese slices in half to fill in the end and center portions of the baking dish.
  • Bake in oven for 15 to 20 minutes, ensuring cheese is melted.
  • Serve as square portions with salad and/or garlic bread if desired.

My kids were introduced to canned Beef-A-Roni at their grandparents. So I had to find a homemade substitute because they really liked it! When they were small, I did everything from scratch. 1 - because I couldn't afford the canned stuff. 2 - I really wanted to give them a good nutritional start in life. I just remembered this...

Number Of Ingredients 5

1 lb ground beef
2-3 c whole grain macaroni, uncooked
1 jar(s) prepared spaghetti sauce (23.5 oz)
*OR* 3 1/2 cups home-prepared spaghetti sauce
1/2 c grated parmesan cheese

Steps:

  • 1. Brown ground beef in large skillet. Drain off any fat.
  • 2. While beef is cooking, cook macaroni in boiling salted water until al dente - almost soft (about 12 minutes). Drain.
  • 3. Add spaghetti sauce and cooked macaroni to beef in skillet. Stir well, cover, and simmer 10 minutes, stirring often to prevent sticking.
  • 4. Top with Parmesan cheese or stir the cheese into the sauce.
