This is easy to make and can be used as a side dish or a dessert. It's great reheated, too.

1 (8 ounce) package egg noodles
2 tablespoons butter, melted
3 Macintosh apples, sliced
3 eggs, separated
1 cup white sugar
¼ cup golden raisins
2 teaspoons ground cinnamon
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
  • Stir melted butter and noodles in a large bowl.
  • Mix apples, egg yolks, sugar, raisins, cinnamon, and vanilla extract into noodle mixture until well blended.
  • Beat egg whites in a large bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
  • Fold egg whites into noodle mixture; pour into prepared baking dish.
  • Bake in the preheated oven until browned, about 40 minutes.

1/2 lb. wide egg noodles
1 lb. creamed or whipped cottage cheese
1 cup sour cream
1/4 lb. unsalted butter, melted
1/2 cup sugar
2 eggs, beaten
3/4 cup golden raisins
2 medium Granny Smith apples, peeled and sliced thin
pinch of salt
pinch of cinnamon
1 tsp. vanilla extract
butter for greasing baking pan
sour cream and fresh berries as an accompaniment, if desired

Steps:

  • Preheat the oven to 350°F. Boil the noodles until al dente, and drain. In a large mixing bowl, combine drained noodles and remaining ingredients (through and including vanilla extract) and toss well. Transfer the mixture to a buttered 13 x 9 x 2-inch baking dish, and bake 40 minutes, uncovered. Cover with foil and bake an additional 20 minutes, or until cooked through. Remove from oven and let cool before cutting into squares. Serve warm or at room temperature with sour cream and/or fresh berries on the side, if desired.

ONE PAN APPLE KUGEL

1/2 cup margarine, minus 1 tbspn
1 can sliced apple, drained
3/4 cup flour
1 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
2 eggs, slightly beaten
corn flake crumbs, for topping
brown sugar, for topping

Steps:

  • Melt margarine in an 8x8 pan.
  • Add all ingredients except topping and mix well.
  • Sprinkle on topping.
  • Bake at 350 for 30-45 minutes.
  • Sliced apples are usually found in the pie filling section.
  • If you want to use fresh apples, just peel, core and slice (not too thin) and place in boiling water for about 5 minutes.
  • (You do not want them to lose shape.) Drain and use in place of canned apples.

1/2 teaspoon salt

6 apples, grated on large holes
1/2 cup sugar
1 dash cinnamon, to taste
2 tablespoons lemon juice

  • Preheat oven to 325.
  • Pour hot water over the broken matzos. Let soak. Press out water and add salt. Add the eggs.
  • Mix the apples, sugar, cinnamon, and lemon.

CREAMY MATZO-APPLE KUGEL



Creamy Matzo-Apple Kugel image

This sweet and creamy kugel makes an impressive centerpiece for a Passover brunch. You can also serve it for dessert.

2 tablespoons plus 2 teaspoons unsalted butter
4 McIntosh apples, peeled, cored, and cut into 3/4-inch slices, 1/4-inch thick
1/2 cup raisins
1/2 cup sliced blanched almonds
10 squares plain unsalted matzo
4 eggs, beaten
2 cups sour cream
1/2 cup whipped cream cheese
3/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
Softened butter for greasing pan
Confectioners' sugar

Steps:

  • Melt 2 tablespoons of the butter in a large skillet and saute apple slices on high heat, stirring occasionally, until soft and lightly browned. Remove to a large bowl with a slotted spoon. Add 2 teaspoons butter to the skillet, lower heat to medium, and quickly saute raisins and almonds, stirring constantly. Be careful not to burn them. Add to bowl with apples, and set aside.
  • Preheat oven to 350 degrees. Place matzo squares in another large bowl, and run cool water over them to soften. Crumble the matzo, and drain in a colander. Return drained matzo to bowl.
  • Combine eggs with matzo and stir well. In another bowl, mix sour cream and cream cheese thoroughly. Then add it to the matzo mixture, along with sugar, cinnamon, salt, and fruit-nut mixture. Mix all ingredients thoroughly.
  • Grease a 10-inch square Pyrex baking pan (or similar) with butter (use quite a bit), pour mixture into pan, and bake for 50 minutes or until top is a light golden brown. Let cool on counter. Loosen sides with a knife, place a large platter over the baking pan, and carefully turn the kugel out onto the platter. If any pieces stick in the pan, just put them in place. When cooled, sprinkle top with confectioners' sugar (best done through a sieve or sifter). YOu can serve this kugel warm (not hot) or at room temperature, but we like it best chilled in the refrigerator with the confectioners' sugar added just prior to serving.

This is a really easy, really delicious way of making a great kugel. The recipe calls for wide noodles and I will post it that way, but I prefer medium noodles. The recipe was in a pamphlet from Comstock-Wilderness and we enjoyed it, I hope you do too.

21 ounces apple pie filling
5 eggs, beaten
8 ounces sour cream

1 cup corn flakes, crushed
1 teaspoon ground cinnamon
1/2 cup sugar
3 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook noodles according to package directions.
  • Place cooked noodles in a 9x13 pan sprayed with cooking spray.
  • Combine 1 cup sugar, apple pie filling, eggs, sour cream, vanilla and 1 1/2 teaspoons ground cinnamon.
  • Pour apple mixture over noodles and sprinkle with raisins.(I lightly stir mixture at this time).
  • In a medim bowl, combine cornflakes, 1 teaspoon ground cinnamon and 1/2 cup sugar.
  • Sprinkle over entire top of noodles.
  • Top with butter pieces.
  • Bake 45 minutes or until brown and bubbly.

salt, to taste
1 lb medium-width egg noodles
6 eggs, lightly beaten
2/3 cup honey
2/3 cup golden raisin
1/2 cup chopped walnuts
2 apples, peeled, cored, and grated (or very finely chopped)
1 teaspoon ground cinnamon
1/2 cup orange juice
2 tablespoons brown sugar
1 cup crushed corn flakes
2 tablespoons butter, cut up

Steps:

  • Preheat oven to 350 degrees. Butter a 9x13x2-inch baking dish.
  • Bring a large saucepan of salted water to a boil. Add the noodles and cook them for 8 to 10 minutes. or until they are just tender ( do NOT overcook, you still want some bite.) Drain into a colander and put noodles into a large bowl.
  • In another bowl, lightly beat eggs. Stir in honey, raisins, walnuts, apples,cinnamon, and orange juice. Pour the honey-apple mixture over the noodles and toss gently, but thoroughly. Transfer the mixture to the buttered baking dish.
  • Sprinkle with the brown sugar and corn flakes, and dot with the butter. Bake for 1 hour or until the pudding is set and golden on top.
