This is easy to make and can be used as a side dish or a dessert. It's great reheated, too.

1 (8 ounce) package egg noodles
2 tablespoons butter, melted
3 Macintosh apples, sliced
3 eggs, separated
1 cup white sugar
¼ cup golden raisins
2 teaspoons ground cinnamon
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
  • Stir melted butter and noodles in a large bowl.
  • Mix apples, egg yolks, sugar, raisins, cinnamon, and vanilla extract into noodle mixture until well blended.
  • Beat egg whites in a large bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
  • Fold egg whites into noodle mixture; pour into prepared baking dish.
  • Bake in the preheated oven until browned, about 40 minutes.

4 cups egg noodles
1 (8 ounce) package cream cheese, softened
¼ cup brown sugar, or more to taste
1 (16 ounce) package cottage cheese
1 egg
2 egg whites
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 firm, tart apples - cored, quartered, and thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Beat cream cheese and brown sugar together in a bowl using an electric mixer until smooth and creamy; beat in cottage cheese, egg, egg whites, vanilla extract, cinnamon, and nutmeg until well combined. Fold noodles and apples into cheese mixture by hand; spread into the prepared pan.

1 (21 ounce) can sliced apples, drained (I use Comstock brand)
1 cup sugar
3/4 cup flour
2 eggs
1 dash cinnamon
1 pinch salt
corn flake crumbs

Steps:

  • Melt margarine in the pan in which you will bake the kugel. (Do this in the oven).
  • Add everything else, except the cornflake crumbs, and mix well.
  • Top with cornflake crumbs.
  • Bake at 375F for 50 minutes.

3 large eggs
1/2 stick unsalted butter, melted and cooled
1/2 cup sugar, divided
1 teaspoon grated lemon zest
1/4 teaspoon grated nutmeg
1 1/2 pound Gala apples (about 3), peeled and coarsely grated on large holes of a box grater
5 ounces fine egg noodles (4 cups)
Accompaniment: sour cream

Steps:

  • Preheat oven to 425°F with rack in upper third. Butter a 1 1/2-quart gratin or other shallow baking dish.
  • Whisk together eggs, butter, 7 tablespoons sugar, zest, and nutmeg in a large bowl until well combined, then stir in apples.
  • Cook noodles in a large pot of salted boiling water until al dente, about 5 minutes. Drain noodles, then toss well with apple mixture. Spread in baking dish and sprinkle with remaining tablespoon sugar.
  • Bake kugel until top is golden, about 30 minutes. Cool 5 minutes.

butter (for the baking dish)
salt, to taste
1 lb medium-width egg noodles
6 eggs, lightly beaten
2/3 cup honey
2/3 cup golden raisin
1/2 cup chopped walnuts
2 apples, peeled, cored, and grated (or very finely chopped)
1 teaspoon ground cinnamon
1/2 cup orange juice
2 tablespoons brown sugar
1 cup crushed corn flakes
2 tablespoons butter, cut up

Steps:

  • Preheat oven to 350 degrees. Butter a 9x13x2-inch baking dish.
  • Bring a large saucepan of salted water to a boil. Add the noodles and cook them for 8 to 10 minutes. or until they are just tender ( do NOT overcook, you still want some bite.) Drain into a colander and put noodles into a large bowl.
  • In another bowl, lightly beat eggs. Stir in honey, raisins, walnuts, apples,cinnamon, and orange juice. Pour the honey-apple mixture over the noodles and toss gently, but thoroughly. Transfer the mixture to the buttered baking dish.
  • Sprinkle with the brown sugar and corn flakes, and dot with the butter. Bake for 1 hour or until the pudding is set and golden on top.
