3 slices bacon, diced
1/2 pound hot italian link sausage, cut into 1-inch pieces
1/2 pound ground chuck
2 medium onions, chopped
1 green pepper, seeded/chopped
2 cloves garlic, minced
1 jalapeno pepper, seeded/chopped
2 tsp worcestershire sauce
2-3 tsp chili powder
1/2 tsp dry mustard
1/4 tsp freshly ground pepper
2 cans (14 oz each) italian-style tomatoes
1 can (16 oz) pinto beans, drained
1 can (16 oz) garbanzos, chickpeas, or kidney beans, drained

Steps:

  • 1. In large skillet, brown bacon pieces until crisp. Remove from skillet; drain well. Place in crockpot
  • 2. In the same skillet brown sausage and ground chuck with onions over medium heat; drain and add to crockpot.
  • 3. Add remaining ingredients; stir well. Cover and cook on Low for 8-14 hours
  • 4. Taste for seasoning. Adjust to taste. Serve in your favorite big chili bowls.

1 lb ground beef
1 lb hot Italian sausage, cut into 1 inch slices
6 slices bacon
1 large onion, cut into bite sized chunks
1 green pepper, cut into chunks
2 -4 garlic cloves, minced
1 -2 jalapeno pepper, diced
1 cup red wine
1/2 cup Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon celery seed
1 -2 tablespoon chili powder
1/2 teaspoon salt
1 1/2 teaspoons black pepper
6 cups roma tomatoes, skin removed
15 ounces kidney beans
16 1/2 ounces garbanzo beans (Chick peas)

Steps:

  • Brown bacon in a large cast iron skillet or Dutch oven. Drain and crumble bacon,set aside. Brown sausage,drain set aside with bacon. Brown ground beef, strain set aside. Pour excess fat from skillet.
  • Cook onion,pepper,garlic and chili pepper over low heat for 2-3 minutes.Stir in wine and Worcestershire sauce, simmer for uncovered for 10 minutes. Add the dry mustard,celery seed,chili power,salt,and pepper: simmer for 10 more minutes.
  • Mash tomatoes: add with liquid to onion mixture along with the meats. Heat to boiling,reduce heat and simmer uncovered for 1/2 hour stirring occasionally.
  • Stir beans with liquid into chili. Heat to boil, reduce heat, cover and simmer for 1 hour,stirring occasionally.

2 lbs beef round steak, cut into 1-inch cubes
1 1/2 cups onions, chopped
2 garlic cloves, minced
1 1/3 cups water, divided
1 cup celery, chopped
2 (15 ounce) cans kidney beans, drained and rinsed
2 (14 1/2 ounce) cans diced tomatoes
1 (16 ounce) jar salsa
1 (15 ounce) can tomato sauce
1 1/2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
2 tablespoons all-purpose flour
2 tablespoons cornmeal
diced tomatoes, sour cream, crushed tortilla chips or shredded cheddar cheese

Steps:

  • Heat oil in a large sauté pan over medium heat; add steak, onion and garlic. Cook over medium heat until steak is browned and onion and garlic are translucent.
  • With a slotted spoon, remove steak, onion and garlic to a slow cooker, leaving juices behind in pan. Add one cup water, celery, beans, tomatoes with juice, salsa, tomato sauce and seasonings to slow cooker; stir. Cover and cook on low setting for 8 hours.
  • Shortly before serving time, whisk together flour, cornmeal and remaining 1/3 cup water until smooth. Add mixture to simmering chili; stir for 2 minutes, until thickened. Garnish as desired.
